Let’s get one thing straight, right here, right now. I am not a chef. I have no culinary background. And I literally have no idea what I’m doing in the kitchen. I just like trying new things and I’m not scared to f*ck up. Well, that’s a lie, but it sounded brave.

So I was brave this weekend. I marinated these spare ribs for almost 3 days (because my propane ran out and I was too lazy to get a refill) and when I finally had the ability to grill these suckers up, I decided to take a chance. You see, I have never grilled spare ribs before. Only crockpotted (that is a word, don’t question me) them. I knew I was going to be lucky if they turned out how I wanted them to. So I did the smart thing and only grilled up one of the racks of spare ribs. And guess what happened. It didn’t work. I mean, it cooked through and it tasted good, but the meat was tough as balls. Not that appetizing and/or satisfying. So, like any smart person would do, I went back to my comfort zone. Crockpot. God bless that thing. I blame it on how the ribs were cut, but what would I know. I have no butcher experience either. Fail.

This recipe is a little bit like this one. But less intense. The pictures on that recipe are definitely more intense. Meaning gross.

I just started listening to Dance Cardio, Electronic Cardio, and Rap Strength Training stations on Pandora. I effing love it. My CrossFit classes don’t. Sorry classes, you have poor taste. That’s just a fact.

Did you know Sergio is doing a celebrity guest post on Friday? I have started to ask some of my friends to post about their lives and what they eat like on a normal day. First up, the one and only Serge. If you don’t know who that is, don’t worry, you will soon. He’s featured consistently on my instagram because we spend a large chunk of time together. The only thing our friends do is give us sh*t about being in a relationship, which we are not. He’ll explain why on Friday. Should be interesting, especially since he won’t show me the post. I feel like doing these celebrity guest posts on Fridays might have been a bad idea. Balls.

Asian Marinated Crockpot Beef Spare Ribs

  • Yield: 2-4 1x

Ingredients

Scale
  • 46lbs Grass Fed Beef Short Ribs
  • 1 lime, juiced
  • 3 tablespoons Coconut Aminos
  • 2 tablespoons white wine vinegar
  • 1 tablespoon raw honey
  • 1 tablespoon sesame oil
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon siracha (or other hot sauce)
  • 2 teaspoons sesame seeds
  • salt and pepper, to taste

Instructions

  1. Place spare ribs in a large baking dish or shallow dish.
  2. Mix all ingredients together in a bowl, other than the ribs.
  3. Pour marinade over the ribs.
  4. Cover and place in fridge to marinate for 8+ hours. I did 2+ days, but that’s because of laziness. You don’t have to be a lazy ass like me. Taste paid off though.
  5. Place ribs in crockpot.
  6. Pour extra marinade on top. You shouldn’t need extra liquid, but if you do, just add a couple tablespoons of water.
  7. Turn crockpot to low and cook for 6-8 hours or until meat is tender and falls off the bone.
  8. OMG eat them.

Just curious, are the pictures of the ribs from the crockpot? They look like they came off the grill (with the caramelization).

    1. juli says:

yes they are! they are carefully taken out so they didn’t shred apart and loose some of the dark color on top

At the last minute, I learned we were having my in-laws over for a b-day dinner. Ribs? Great idea! 8 hours/up to 2 days in the fridge? Not an option. I got 2, 3+lb slabs of pork ribs (no beef ribs at the store?!), cut them in half, stuffed them in strong baggies w/ the marinade, & left them in the fridge for about an hour. I turned on the gas grill (high heat) & seared each side about 5 minutes, drizzling some marinade over them for extra smoke & fire. While the grill worked its magic, I made another batch of marinade. I brought in the ribs, stuffed them in the crock pot, poured all the marinade over them, & cooked them on low for 7 hours. About 1/2 way through, I poured in a little vegetable broth. I wish I could post a photo of them. Yes, indeed… OMG eat them!

Needless to say: these are now in crockpot right now and I am completely excited..everything I’ve tried from this site has been amazing..especially wild mushroom and beef stew..(last weeks adventure) thanks for everything!

Out of all the pale recipes I have ever made…this one is my 100% all time favorite. I just finished throwing it in the crockpot and thought it deserved a review as Ive made it a few times and can’t rave about it enough. I double the sauce {Because…sauce obviously} and after I cook them in the crockpot I throw them in the over or on the grill with some tin foil to crisp up a bit. I also have only ever used pork spare ribs because my market never has beef ribs. I literally chew on the bones of these. My favorite side dish to go with them is roasted carrots because the sweetness from the carrots goes perfectly with these salty sweet ribs. Dear Lord Jesus these ribs give me life.

My ribs were cooked to perfection and fell right off the bone but were SO bland. They say in the marinade for two days. Had to break paleo code and use bbq sauce because they had no flavor. Embarrassing considering I had guests over to try them. Sucks!!

    1. juli says:

      I’m sorry to hear that
