Anywho, I’m having a fun time lately. I’ve been letting loose a little. Not being so uptight. You could say I’ve been untucking my shirt and unbuttoning the top button, if I had shirts with buttons…or pants that you could actually tuck a shirt into. Why did I even say that last sentence?
Wanna know what I did? I consumed a couple alcoholic beverages over the weekend, for the second weekend in a row! What the? Then danced my ass off. And topped it all off with embarrassing myself wakeboarding. What a solid weekend! It’s weird. I’m actually enjoying being social. I’m a bit more tired than usual though. How do you people drink every weekend? And still get sh*t done. All I do is day dream about sleeping in a cloud. God I wish I could sleep in the clouds.
Wakeboarding was so.much.fun. Seriously, so fun. At one point, I tried to jump and face planted pretty hard. Water hurts surprisingly bad. I kind of thought I ruptured my ear drum, but I didn’t want to look like a p*ssy in front of this guy, so I blew the snot out of my nose and got back up…to only fall many times after that. I can’t wait to go back again. And learn more stuff. And fall more times. I just have to learn to be braver. Is braver a word? Whatever. Braver people go places. That’s just fact.
Yes, I peed in the lake.
- 1 cup Coconut Cream Concentrate or 1 cup homemade coconut butter
- 1 cup blueberries
- 1 cup Gold Label Virgin Coconut Oil
- ⅓ cup raw honey
- ¼ cup unsweetened shredded coconut
- ¼ cup cashews, chopped (or other nut of choice)
- Place a small saucepan over medium heat.
- Add your blueberries and honey. Mix to help break down the blueberries.
- Once your blueberries have esploded (that means exploded, but is just more fun to say that way), add your coconut oil and coconut cream concentrate.
- Mix thoroughly.
- Remove from heat and add your shredded coconut and cashews.
- Line your muffin tin with silicone liners or paper muffin liners, pour mixture into each cup to a height that you prefer, then place in freezer for 20 minutes.
- Consume.
- Store in freezer if you have self control.

These look heavenly, I’m gonna try them with cherries and omit the honey…my cherries are really sweet so I think they’ll still be yummy!

These look delicious! I have a question about coconut oil. I recently purchased some and living in a warm climate, it does not stay solidified. I’m thinking it should be fine, but should I keep it in the fridge?

These looked amazing so I had to make them…mine dont look the same as yours. Maybe its the brand of coconut butter and oil I used or maybe I cooked the blueberries too long? Mine are blue all over with white on top. I do have a question…my coconut oil was liquidity b/c of the temp in my house will that affect the measuring or recipe taste? Thanks!
No the coconut oil shouldn’t have affected that, did you mix it completely before adding to the cups?

Just made these w/ a few modifications due to ingredients/materials on hand, and portion preference.
I halved the recipe.
In place of the Raw Honey, I used 2 Tb of Coconut Nectar.
I also added 1 tsp of Organic Vanilla Extract.
I Used Frozen Wild Blueberries.
Subbed some pistachios for the Cashews.
Used Mini-Muffin Sized Pan w/ paper liners.
They turned out SO AMAZING! These will be great little fat/energy bites for me to pop pre-workout :)

I should NOT be allowed to look at your site when I’m hungry, which seems to be all the time! :) I logged on to find a recipe that I already know I love….the cinnamon sliders…going to make them for a Memorial Day gathering for people who still poo poo Paleo. These are delicious! omG!!! However, mine turned out all purple as well. Is there a trick to it? Mine don’t resemble the color of yours at all. But still yummy!! Seems impossible to mix after ‘esploding’ the blueberries and still have variation in color. Not complaining! Just wondering :)

Do you melt the CC concentrate and stir to incorporate every time you use it? Mine is stratified in all of it’s different components and is a TOTAL pain the ass to melt/mix! I am crossing my fingers that you have some kind of tip that makes the process quick and surgical…. Or maybe I am just being a lazy bum that doesn’t want to work for her deserts : )
All you have to do is melt it down the first time to mix the oil and concentrate together. After that, it’s easier if you just melt it down a bit so you can get it out of the jar, but the oil won’t rise to the top from there on out. Does that answer your question Julie?

Juli, I did as you said and gave it a thorough melting but instead of leaving it in the jar and poking at it with a butter knife like the lady in the TT video, I transferred it to a wider mouth tuperware container. THEN, I mixed the sh#t out of it without slopping it all over the counter and now I have a pleasantly homogenized mixture awaiting your next recipe. BTW, I made the cups this morning and ate one around 930…holy hell those suckers are rich! I wasn’t hungry for lunch until 4 so I just cut them into quarters as to ensure I don’t miss anymore meals : ) As always, you are rad.
Made this last night…but don’t own a muffin pan, so just made them into bars and used walnuts…they are f*cking gooooooooodddd!!! My 3 year old is killing them!!
I live in Phoenix and I love these after I finish in outdoor workout.
I do have an issue, though. Mine are frozen solid if left in the freezer or soft, like pudding, if left in the fridge. The still taste great but they’re just a little sloppy. Any tips on getting them to look like your pics?

I made these this weekend and I don’t think they turned out right. It didn’t seem to mix well, kinda like there was too much oil. Anyways, I still froze them and this morning I melted a cup and poured it on my waffles (of course those were your recipe too) and it was awesome.

I’m not the best baker/cooker at all and thought I ruined the recipe when I noticed it was really watery :/ threw them in the freezer and crossed my fingers. Came out perfect! So yummy!
Is coconut cream Concentrate the same thing as just plain heavy and thick coconut cream??
it’s the same thing as coconut butter or creamed coconut, but not coconut cream which is the same to coconut milk

So I just made these and the tops are frozen but when I went to peel it out it was all liquid. I don’t know what I do wrong, so bummed. I will try leaving them for a couple more hours in the freezer.
They separated for me, but I think it was because I did have the right ingredients. I have to make or buy the coconut cream concentrate. Wish I had read the previous remarks first, there were some good ideas there.
