So here’s the thing, before you all go up in arms about this product, it is NOT totally paleo. It’s gluten free. And well, people who don’t eat strict paleo look at my website as well. SOOOOO, I’m going to support a local business/product that I love and think has amazing stuff to share with the world. If you want to b*tch about any of the ingredients in the product, cool, just don’t do it here. I’ve eaten this product, I’ve loved it, and I finally have the opportunity to eat pasta without crapping my pants OR not being able to crap at all. Pretty awesome.
Let me tell you a little about them. Benjamin, I sometimes call him Randy, stopped by my gym one day and asked the trainers and I to try out his new product. Well, I loved it. I made a delicious chicken pasta dish and liked it, a lot. Since then Ben/Randy and Stacey have given me some of their other products to try and they have brought me to tears. Especially once I made this recipe. Like wow, it was yummy. Lasagna or dessert rollatini, no matter how you make it, its’ awesome!
So guess what?? Ben and Stacey are nice enough to do a giveaway for all you wonderful PaleOMG readers. Ok, not really all of you. Only 3 people will win AND you have to live in the lower 48. Sorry, that’s just how it is. But for the lucky 3 people who do win, you will win a mix box of 1 fettuccine, 1 gnocchi, and one 1 lasagna. SAY WHAT?! Yes, you will. So this is what you gotta do:
- First off, check out their website. It’s a cool website. Then you can see all their products and all the ingredients!

- Then leave a comment on my site and tell me what fun concoction you would make from Cappello’s fettucine, lasagna, or gnocchi!
Then once you try out Cappello’s, you can try out this recipe. It’s delish. It tastes like cinnamon rolls. Believe me, I would know.

- 3 Cappello’s lasagna sheets (cut in half, width-wise)
- ½ cup macadamia nuts
- 3 tablespoons almond oil (or other nut oil)
- 1 tablespoon raw honey
- 1 teaspoon cinnamon
- ¼ teaspoon vanilla extract
- pinch of salt
- 1 banana, peeled and diced
- 6 dried dates, pits removed, diced
- Preheat oven to 350 degrees.
- Now make your macadamia nut butter. Place your macadamia nuts in your food processor and once they begin to break down, pour in your almond oil while it is still running.
- When your macadamia nut butter begin to become smooth, add your raw honey, cinnamon, vanilla extract, and a pinch of salt and mix together.
- Lay out your 3 lasagna sheets, cut in half width wise to create 6 sheets and start making your rollatini.
- Spread some of your macadamia nut butter on the sheet, then top with banana and dates, roll it up, then make then rest of your 5 rollatini.
- Place side by side in a greased bread pan or other baking dish and top with any extra macadamia nut butter and a bit of cinnamon.
- Bake for 10-15 minutes until the edges of your rollatini begin to brown.
- Let cool.
- Eat.
- Love.
















I would make my favorite 3 mammal sauce! Ground venison, beef and pork sausage in a homemade tomato gravy with lots of farmer’s market veggies (like zucchini, onions, peppers, mushrooms, etc.) all simmering together in home made tomato sauce all day ( in the crock pot due to my lack of attentiveness). Then I would sit down and have a happy, happy dinner… Might even let my son have some :-D

To be honest, i think i would just make a good ole home made spaghetti sauce to enjoy w/ some yummy pasta…convince myself it’s just like the old days of when i used to eat regular pasta! maybe even get a lil crazy and make a vodka pink sauce! :0)

This product looks amazing! Who would have thunk you can make pasta with almond flour? As for what I would make?!? hmm maybe a pesto, bolognese, or maybe venture out to make some kind of pumpkin sauce (def have a slight pumpkin obsession..) Whatever I make it would prob bring me to tears since I wouldn’t look or feel 7 mo pregnant after eating it. Legit. This happens. It sucks :/

I would make my first gnocchi bolognese with their little dumplings of heaven and have your rollatinis for dessert with a dash of Nutella. Yum!

Omg, pasta?! Well sign me up! First thing I’d make is my Italian Great Grandmother’s lasagna! I’m pretty sure she curses me everytime I try to use zucchini or other misc. veggies!
We do an Italian bar food called bagna cauda, made of anchovy fillets and garlic sautéed in olive oil and butter. It’s traditionally served with veggies and crusty bread, and sadly we have been leaving out the bread of late. However, with this pasta, I could sautee the peppers, carrots, summer squashes, and celery along with the anchovies and then toss the whole darn thing over some pasta! Yumm!

Being Italian means there are days that I miss pasta in a big way. Gnocchi is a personal favorite of mine but I think the first thing I’d make is fettuccine with pesto. Or pesto lasagne like my relatives in the northern Italian lakes make it!!

Checked out Cappello’s, liked them of FB and for my pasta i would use fettuccine mixed with parmasan cheese an assortment of winter squash’s cubed and all sauted in olive oil, tossed is a marinera, with some homemade meatballs!!!!! I can taste it now, delicious!!!!
I will definitely be trying this recipe as well as some sort of mac and cheese for my boys. It is so hard to tell them no all the time when we walk by the mac boxes. I will also be making plain old lasagna and my homemade paleo bread! Love that stuff.

Wow… just. Wow. That dessert rollatini looks outstanding! I’d make that for sure. I would also make lasagna rolls… no cheese for me, but with cheese for the husband. They sell this stuff at the Vitamin Cottage in Ft. Collins and I have definitely become a fan. Yeah, it’s not 100% paleo – but who is!? I love this pasta because it is a GREAT treat that won’t totally mess me up. Sometimes you just want pasta and spaghetti squash just isn’t cutting it. The fettuccini is my favorite. And since I’m local to CO and have already tried this, I won’t even try to win it so someone else can. It’s that good, it’s making me uncharacteristically altruistic.

I’d make fettucini with a fresh-herb-and-garlic olive oil sauce…toss it with some grated Parmesan and caramelized onions and maybe a little Ricotta…YUM.

It is crazy how much I have been craving gnocchi!! I would try to create a vodka sauce for them. Only since that is how they are served at my favorite restaurant. It is weird that I have been craving gnocchi so bad because I don’t crave pasta any more. Although I would love to make this recipe with the lasagna noodles because If it tastes anything like cinnamon rolls I will be stoked!! Cinnamon rolls are my all time favorite food.

Gnocchi…GNOCCHI! Oh how I miss those suckers. I wouldn’t even know where to begin if I got my hands on some gluten-free gnocchi. I’d probably whip up some Napoletana-style sauce and consume the entire thing before I could sing two bars of “O Sole Mio”. Being gluten-free in an Italian family has been next to impossible. Heck even at my job, where I sing and row a gondola, there is always temptation. To be honest, I would most likely be so excited I’d just top everything with some garlic, olive oil and some fresh basil, and pass out in a swirl of childhood memories and deprived genetic/cultural cravings satisfied.

Pasta carbonara! I’ve made it with Cappello’s before and it was so good! The bacon and egg and cheese sauce held up so well.
I am very fortunate to benefit from a family of hunters. I love using elk and deer meat in pasta dishes and I think Cappellos Lasagna would go best with ground elk! I would defintely use those lasagna sheets with love among fabulous layers of marinara elk meat sauce and pesto. The combination of the two sauces with gluten free goodness noodles keeping them all together sounds like italian heaven on a plate (minus that gluten that hurts some people’s insides!)

I LOVE CAPPELLOS! About a month ago my husband (at that time fiancé) were wondering around the South Pearl Street Farmer’s Market one Sunday afternoon and came across the Capellos stand. They had some gnocchi and I about died when I tasted it. But they were all out of stock for the day so it was another couple of weeks before I got my hands on some. My grandfather is an Italian chef and he introduced me to good Italian food early on, but gnocchi is by far my fav. I haven’t yet tried the pastas, but they sound so good and I would make the family spaghetti sauce (include almost a bottle of wine) as a complimentary pairing.
Cinnamon rolls are a weakness of mine so I am just going to make the above recipe if I win. Delicious!!

I would make my spicy habenero chili (no beans) and pour it over the gnocchi. For the lasagne I would layer veggies (carrots, zucchini, yellow squash, tomato, etc) basil leaves, and ground chicken sausage; then maybe a little bit of raw mozzerella cheese sprinkled on top. The linguini would be easy, I would toss it with a basil lemon sauce and diced roma tomatoes then serve it with grilled garlic zucchini strips.
Well, it looks like I’d have to make that fabulous concoction! Or my Maya’s lasagna!

I’ve been wanting to try this pasta! I’ve been missing my husband’s lasagna. We have it every year for Christmas, and last year’s lasagna with zucchini noodles wasn’t quite the same. I was going to try it with butternut squash, but this would be even better!
As I sit here eating your delicious bacon chicken Alfredo, I think making it with cappello’s pasta would be awesome! Well at least I wouldn’t have to eat around the spaghetti squash seeds that I missed. Oops! I’m a little lazy sometimes. I have plans for the lasagna noodles as well. A gluten-free lasagna that I could feel better about eating would make a perfect Thanksgiving first course. What? Lasagna for a first course is totally acceptable in any Italian family!
Btw, even if I do not win, I MUST move to Colorado. First, you have awesome events like that paleo conference you did last week. Second, you have some pretty awesome crossfiters out there. Third, your Whole Foods seems way better than mine because I can never find the products you post. Fourth, I think you mentioned a paleo food truck. Say what?!?! And fifth, when looking at cappello’s website, there are so many farmers’ markets and restaurants that offer gluten-free products. Not so in the pierogie land of Pittsburgh that I live in. I think I will try to forget that I hate snow and move out west!

What dish would I make? More importantly, what type of macaroni and cheese dish WOULDN’T I make with Cappello’s? Does it sound like I care that they don’t have “macaroni”? Nope. Because I don’t discriminate against any sort of noodle when it comes to macaroni and cheese. But since I must chose, I would make my favorite truffled mac n’ cheese with prosciutto….with Cappello gnocchi. Second option: Maximum Mac N’ Cheese from Epic Meal Time with some more gnocchi. My head just exploded.

Enchiladas, Enchiladas, Enchiladas!!! I liked their FB a loooong time ago, and I have seen them put pictures up of these delicious looking enchiladas a few times….yum! And i have been stalking their website for a while hoping they would start putting their products in a store here in N. California.

I would make chicken enchiladas with the lasagna sheets. Cook me up a chicken with some spices in the crockpot, shred, add some homemade enchilada sauce, roll it up and pour some more sauce over top, cover that in cheese. OOOOOOOOOOOOOOOOOOOOOOOOOOOOOyah.
I love gnocchi and would like to try it gluten-free. I also have a recipe for a crockpot lasagna that I would like to modify. I haven’t found many gluten-free noodles that don’t taste like and/or have the texture of wet cardboard!
I use Cappello’s for a lot of pasta and gnocchi recipes, but I love cutting the lasagna sheets into 1 by 1 strips. pressing them in cinnamon and a little raw sugar, deep frying in butter and then drain. Mini churros! So yummy.

I would make fettucine with putanesca sauce. And I’d make my yummy dairy-free lasagna (cashew cheese instead of cow cheese) with the lasagna noodles. And I’d sautee those gnocchi with a bit of olive oil and garlic and fresh hot peppers. Mmmmmm!
I have been curious abouth this product for a while, especially since you have mentioned it before! I am not strict paleo enough to care about whether or not its paleo. I would like to try the product and would probably make fettucinni alfredo first, sounds boring but I haven’s had noodles in a while so it sounds amazing to me! Also this dessert.

If I could! I would love to try to remake this saffron pork cannelloni that Max (my man) and I had in Sienna, Italy. It was one of our most memorable meals of our month in Europe. We miss all the yummy pastas. Max talks about this meal all the time. We even bought expensive saffron when we got home… one year later and thanks to this paleo diet thing. Still haven’t made it!!

I just went to pick apples at an apple orchard about 15 minutes away, so i would take these uber-fresh apples, take the lasagne and butter it on up, put tons of cinnamon on it, and then make myself an authentic gluten free Apple Pie, because who wouldnt love some fresh apple pie on colder fall days like this?

I just recently encountered Cappellos at a gluten-free trade show, and have been a big fan ever since. They were one of two booths doing grain free. Most of the rest of the vendors were using rice flour/corn meal etc as their main ingredient. Living with diabetes, I cannot afford the toll grains take on my blood glucose. I am so happy to be eating pasta again, much thanks to Cappellos!
This pasta looks unreal! The second I saw this post I started thinking of all the pasta dishes I used to love. With the gnocchi I would make a delicious sage brown butter sauce with pancetta and leeks. I would love to make the chicken pesto lasagna roll-ups that I used to make with regular lasagna noodles. The fettucini is destined for a carbonara sauce. Oh the possibilities!

I would make enchiladas with the lasagne, carbonara with the fettuccine, and a butternut squash and sage sauce to go with the gnocchi. YUM!
you should use those capellos gluten free lasagna sheets to make desserts with nikkis coconut butter inside! Like…baked dough with the coconut butter inside. like a filled donut! haha i dont know the name of the dessert but it would be delicious!

I looked, I liked and I would make a fettuccini with shrimp, zucchini , mushrooms, some tomatoes, some kind of Alfredo type sauce (if I can find an acceptable Paleo recipe)….

I would have to make lasagna. I’d try it with some raw milk hard cheeses from Trader Joes and use some fresh tomato sauces from my garden tomatoes. My mouth is watering.
YUM! My BF and I have been trying various gluten free pastas because I eat 98% paleo, which means that every once in a while I need some pasta! He’s Italian, so if I’m taking him on this gluten/grain/yadda yadda free journey with me, I have to give in sometimes! :) I would make my super famous gluten free butternut squash and pumpkin mac and cheese with maybe the gnocchi, or a coconut milk vodka tomato sauce with fresh basil with the gnocchi. YUM!!! <3 (this recipe sounds bad ass too!)
As lame as it sounds I would have to go with the standard meat sauce and pasta. My grandmother taught me how to make killer meat sauce (Yeah, I know everyone says there’s is the best but really, mine is!) and I know some yummy gluten free pasta under it would make my mouth really happy.

I am very excited to try out these new pastas! Hope to win, but I am ordering them even if I don’t :-) First up ~ bolognese sauce dripping all over those fettucine noodles. Then lasagna roll ups. And I haven’t had gnocci in so long. That will get the royal treatment. Drizzled with butter and sprinkled with finely chopped fresh sage,,,YUM!

I would make a pasta dish that wouldn’t make me sad in the bathroom but would make my wifie happy in the kitchen. So pretty much any pasta dish would fill that void.

They have a great website and I like their FB page. I would make the gnocchi with some creamy, three-cheese sauce and for dessert the alfredo with tons of grass-fed butter, cinnamon, cocoa, and honey. Yum!
Oh the possibilities are endless…… For the fettuccini I would make paleo chicken pad thai (almonds instead of peanuts), for the gnocchi I am thinking of doing a lobster cream (coconut milk) sauce/sun dried tomato dish, and I would love to make this recipe that you have make look and sound amazing with the lasagna sheets. This pasta looks great! My husband who has no problem staying lean and “thin” is not really on board with all my paleo ways. Being Italian he def misses pasta. He told me the other day if it wasn’t for me he would eat pasta at least four days a week (and wouldn’t gain a pound). This pasta is something that would make us both happy! He makes an amazing homemade meat gravy (sauce) that is to die for. This pasta already looks great so something simple like a good meat sauce would be perfect!

Pumpkin ravioli…the crackers made from lasagna sheets, add pumpkin….the raw pumpkin wraps made with a dehydrator??? The possibilities are endless. Loving fall and welcoming the tastes of pumpkin and how awesome is paleo pasta?!

Giddy like a school girl! EEEE! How can one choose only one of the endless possibilities. I guess the fastest recipe ever- a big bowl of buttered noodles with Parmesan. Then when I’ve calmed down, a nice wild mushroom cream sauce (with morels). Served with beef tenderloin medallions.

OMGosh – what wouldn’t I make? Of course the basics… lasagna, fettucini alfredo, meatballs w/both beef and sausage and a great tomato basil sauce… then I’d pretty much throw all kinds of dishes together, like shrimp and butter sauce, lots and lots of smooth and awesome raw cheese from a local farmer with the gnocchi, lemon/lime/white wine chicken on the fettucini, tuna pasta with citrus and mint… wow, do I really miss pasta.
I miss mac-n-cheese in the WORST way, especially when I watch tv shows on Food Network with the cheesiest concoctions ever. I’ve been searching for a gluten free pasta that actually tastes good. Sometimes there is nothing better than a big bowl of pasta…it warms the soul!

My five-year-old daughter was diagnosed as celiac at 19 months. While she’s had gluten free pasta, she’s never had gnocchi. I’d make something delicious with the gnocchi-probably a sage/butter sauce. And, the gluten free lasagna noodles we use don’t look anything like this–I would totally make my mom’s lasagna for her too!
I love Cappellos!! And I would (obviously) love to be entered into the giveaway! One of my favorite recipes to make with their fettuccine is smoked turkey tetrazzini. I’ve also used their gnocchi to make gnocchi mac & cheese, which is heavenly.

I would love to make lasagna – haven’t had it since going grain-free…will just have to make some dairy-free substitutions as well. Also would have to try making a dairy-free (cashew-based) fettucine alfredo. The noodles sound great – haven’t seen anything like them before (grain-free, almond-flour based).

Cappellos is awesome! I actually ordered some after you blogged about it once before but it arrived after we’d started a Whole30 so it sat in our freezer for a month. Once we were done, I made the gnocci with homemade tomato sauce and grass feed beef and sausage and it was deliciously decadent! I would LOVE to win more so I could share it with friends and not hoard it all to myself. ;-) Maybe. Liked them on FB today!

Wow, there are a lot of comments on here! I SO want the recipe for pumpkin lasagne, as I was thinking lasagne would be a fantastic thing to make, especially as the weather gets colder. I would make it with Mulay sausage (another Colorado product!) and beef from the Da-Le Ranch I get meat from here in California. I’d make some cashew ricotta, fresh herbs and –I have to stop now. I’m making myself hungry! Whether or not I win, I’ll be ordering from Cappello’s!
This stuff sounds amazing! And, because we’re all thinking it, if Stacey Marcellus is the woman with the nose ring in the “about us” section, she is GORGEOUS! I would have to try the gnocchi. Nothing like a nugget of deliciously dense noodle. Maybe something with cherubs, and zucchini ribbons? I am less of a recipe user (unless it’s baking) and more of a throw things in a pot/oven/skillet/crockpot kinda cook.

Did it! I’ve been planning on making your chicken bacon alfredo this week, so maybe that. PlanB would be lasagna. My son was asking me at the dinner table if we could have lasagna while I am doing my Whole30……well, I’ll be done in less than 2 weeks!
I would LOVE these because im freaking tired of zucchini, squash, eggplant, and shirataki “noodles”. I just want a nice big bowl of normal (but still healthy of course so I want these badly) pasta with pesto and chicken and proscuitto and garlic and little baby tomatoes from the farmers market. And also I tried my absolute best at making paleo gnocchi (i actually tried twice) and it was a disaster to say the least. But I can make mozzarella! *winning* so i want to put that in my big bowl too. Not to mentioni have a biochemistry and evolutionary biology test next week so some comforting food would be appreciated. That is all I have to rant about, i would love these

Website checked, Facebook liked, and I would make this pasta dish I haven’t made since going paleo. It uses just goat cheese and some of the pasta water as the sauce and then you roast some butternut squash, onions, and broccoli and toss that in with it! It’s delicious!

I would make chicken bacon mushroom fettuccini with a homemade pesto sauce. I keep trying to eat spaghetti squash but I just can’t get past the raw hash brown texture, so these gluten-free noodles would be amazing!

I would totally make my familty’s Lasagne Bolognese. My family is from Italy, and with me being new to Paleo, I was a little freaked that our lifelong Christmas tradition of fixing and eating for Christmas dinner would be gone.

Love their site! i actually came across this product a few weeks ago while looking for options and now I liked their FB page. I would love to use a gluten free fettuccine to make my favorite pasta tossed with chicken and spinach with garlic and olive oil. Yum! Honestly, I miss pasta terribly trying to be Paleo.

I would make the lasagna, layered with butternut squash and sweet potatoes. Then I would top it off with the Pumpkin Cream Sauce from PaleOMG!

I’m surprised they have Gnocchi! My gf’s Nonna (grandmother in italian) has a great recipe for it that includes turkey sausage :) I will def have to tweak it Paleo-ish though. I would use the lasagna for Melanzana (eggplant parm) and the fettuccine in a cold pasta dish with chicken and tomatoes :D
I am DREAMING of making the gnocchi- I just ordered some! My mouth is watering for a savory butter sauce, with just the right amount of freshly micro-planed romano cheese, and some juicy bacon pieces bring in some protein-OH!
