Cassava Chocolate Chunk Brownies
cup maple sugar
teaspoon vanilla extract
cup cassava flour
cup unsweetened cocoa powder
teaspoons espresso powder
teaspoon baking powder
pinch of salt
cup chocolate chunks
Preheat oven to 350 degrees F. Grease an
8x8 baking dish. Using a handheld mixer, beat together
ghee, maple sugar and vanilla extract in a medium bowl for about 1 minute then add eggs and beat for another minute until mixture becomes light in color. Add in
cassava flour, unsweetened cocoa powder, espresso powder, baking powder and salt and mix until completely combine. Then fold in chocolate chunks. Place batter into the greased baking dish and spread out evenly. Place in oven to bake for 30-35 minutes, until the middle is cooked through and a toothpick comes out clean. Let brownies cool 10 minutes before slicing!
