These waffles saved my life this weekend. Ok, not exactly my life, but they saved me an excessive amount of calories and money. All week I was dreaming about getting gluten free donuts once the weekend came along but then, I made these waffles and thought, “Why get out of your pajamas, in the car, drive somewhere, spend money, and then be hungry again in 20 minutes because of the sugar spike?” So I topped these waffles with lots of dairy-free chocolate chips and my favorite maple syrup and all those donut cravings went away. I will absolutely get those donuts someday, but as long as these waffles are in my house, I don’t need them!

But let’s talk about more than just these waffles…that are absolutely insanely effing good. Seriously, they are addictive! Let’s talk about my friend Lexi from Lexi’s Clean Kitchen. I’ve known Lexi for a couple years now through the blogging world but I just met her in person back in May when we bunked up together in a house during Paleo(fx)! She may be the tiniest friend I have. I think she’s 4’11” but she BEAMS with personality, intelligence and spunk. Lexi’s Clean Kitchen Cookbook Review: Best-Ever Fluffy Waffles

Instructions

  1. Preheat a waffle maker and brush it liberally with melted butter. Whisk together the almond flour, tapioca flour, baking powder, and salt in a mixing bowl, preferably with a spout. Add the eggs, applesauce, and vanilla and mix to combine.
  2. Following the directions for your waffle maker regarding batter quantity and cook time, pour in the batter and cook the waffle until done. Remove and transfer to a low oven to keep warm. Regrets the waffle iron and repeat with the remaining batter.
  3. Serve the waffles hot with butter and maple syrup. Store leftovers in the fridge for up to 1 week or in the freezer for up to 6 months.

    This is an amaaaazing recipe!! Definitely gonna become our Sunday brunch favourite. I added some chocolate chips and served with fresh fruit and honey. Unbelievably tasty!!!
    I doubled the portion on everything and got 5 golden delicious round waffles.

    Waffles are a family favorite now! Warmed up some maple syrup with grated ginger and a little butter. I did add a tablespoon of vanilla. Huge hit!

    I love the pumpkin waffles, but wanted something more summery today. I didn’t have applesauce, and used buttermilk instead. I also added cinnamon and a pinch of nutmeg. These waffles were perfect – crispy outside, soft inside, and had that cake doughnut taste. I served them with homemade berry compote. Mmmm-mmmm!
