This weekend was rough. I literally cooked the whole weekend. But it wasn’t fun. Because I’ve already cooked all these recipes once before. I’m having to remake a ton of my old recipes so I can take slightly better pictures for my cookbook. And then I was forced to consume WAY more than needed. Forced I tell you. I’m kind of in a food coma. I don’t even know who I am at this point. Mostly because I’m probably 34 pounds heavier, so it’s hard to recognize myself.
So while I cooked up old recipes and fell into kitchen depression, I decided the only thing that would create sunshine in my kitchen would be eating chocolate. Makes sense, right? If it doesn’t to you, you’re dumb. Chocolate is so great. And you know what’s better than just chocolate? Chocolate cupcakes. Wait, wait, wait. PALEO chocolate cupcakes. Yep. And that’s what I made and ate. And ate far too many of.
The best part of it all is that I didn’t even have to come up with this recipe!! Which I was very thankful for. I’ve told you about White Lion Baking Company before and how amazing their crackers, cookies and biscuits are, but I was lucky enough to get to try their chocolate cupcake mix as well. What I LOVED is that the cupcake mix is made with coconut flour, completely nut free! I dig it. So I made up 24 cupcakes on a Saturday night. Yep, on a Saturday night. By myself. I could have hung out with a guy on a Saturday night and I chose making cupcakes. Jesus Juli.
So this is what you should know. If you’re looking for paleo snacks or a paleo sandwich on a wicked good paleo biscuit, you HAVE to try White Lion Baking Company. But if you need to give your sweet tooth some love, you HAVE to try the cake mix. I made cupcakes so I could get rid of them fast, but this would be perfect if you needed a whole paleo cake for a birthday party or a bbq or whatever.
I pretty much loved this, obviously. So if you’re ready to have some delicious, completely paleo baked goods in your house, head over to White Lion Baking Company on Facebook, and start figuring out what you want to order. The one thing I definitely don’t recommend doing…making these on a Saturday night, by yourself, while your roommates are out of town for the next 3 days. Just don’t do it. Things get ugly. I kept finding chocolate under my nails. I don’t want to talk about it.

Totes understand about being the loser baking/making treats alone on a Saturday night. I legit need you to come and take my ice cream maker away from me. I made THREE types of ice cream this weekend: mint chocolate chip, chocolate custard, and cookie (not cookie dough, but actual baked cookies in vanilla ice cream). I have a problem.

bad moods always lead to chocolate in my world. When I am on the couch in my underwear with a chocolate bar and jar of almond butter it is best to just leave me alone. And god help the person who asks if “i should really eat that whole jar”
