Tomorrow is 4th of July!! I hope you have the day off of work. If not, quit now and start doing arts and crafts for a living. I’m kidding. Don’t do that. Especially the arts and crafts part. I wish I was good at arts and crafts. Like drawing. Wanna see a picture of my friend Tom that I drew the other day? It’s good. I swear.

Remember last year, when I talked about my Extremely Paleo 4th of July. That was yet another time that I lied to you. I’m sorry for my out of control lying. I’ll get it together. Well, you’ll probably never know. MUHAHAHAHA. Anywho, this 4th of July will probably be no different when it comes to what I’m stuffing in my face. Well, hopefully it will be better. This year, I will be on a lake every day, and camping by night. I will probably be consuming mostly meat. I didn’t even pack vegetables with me. Just burgers, brats, hot dogs, and some dried fruit. Oh, and some delicious ciders. Can’t go camping without a cider, now can you? Answer, no. So once I get back, I’ll update you on everything that I ate while camping. I’m sure it will be a thrilling post, “I ate a burger for breakfast, then a burger for lunch, then I went crazy with a hot dog for dinner. Oh, and I had some vodka for snacks. Hmmmmm, I’m so full.” That full part will most likely be a lie.

4th of July Strawberry Creamsicles
- Yield: 5 1x
Ingredients
- 1 (14 ounce) can of coconut cream (if you can’t find coconut cream in your stuff, full fat coconut milk will work as well), at room temperature
- 1/4 cup raw honey
- 1/3 cup freeze dried strawberries
- 1/2 cup fresh strawberries, diced
- 2 tablespoons raw honey
Instructions
- Whisk together coconut cream and 1/4 cup honey. Then pour ingredients in an ice cream maker.
- While ice cream is churning, place freeze dried strawberries in a food processor and pulse until fruit is completely broken down.
- When ice cream is almost done churning, pour the pulsed fruit into the ice cream maker to let combine with the ice cream.
- (If you don’t have an ice cream maker, you can mix the ice cream with pulsed fruit, pour into a bread pan, place in freezer, then scoop out when solid. A little time in the microwave may be needed to help soften it.)
- Mix together diced strawberries and 2 tablespoons honey in a small bowl.
- When ice cream is done, scoop into small disposable cups, then top with a bit of fresh strawberries and press down into ice cream. Then press a craft stick into the middle.
- Repeat with all ice cream. I made 5 ice cream pops with the ingredients.
- Place in freezer for 30+ minutes to let harden.
- Serve immediately.

This sounds crazy but is it possible to do this or something similar without an icecream maker? Or does the churning in the beginning really change the consistancy before freezing.
Megan, I don’t have an ice cream maker either, but I have been making some GREAT Popsicles! I put cut-up pineapple chunks and coconut milk in a blender, then freeze them in the Popsicle containers that you can buy just about anywhere! These come out like pineapple cremesicles… De-Lish! I have also blended frozen fruits w/honey and they are really good!

The worst part about putting it out there that you eat paleo (or primal, since I really love cheese) is all the “Is that Beer paleo? Butter isn’t paleo!”. I need to learn to just say, “Yup!”, but mostly I get annoyed and ask them if they’re the paleo police. haha. I’ll never understand why people who eat paleo get such crap! Enjoy stuffing your face, I know I will be.
