Double Chocolate “Peanut Butter” Ice Cream Sandwiches
I need to tell you something. Because I complain so much about being single. And the whole time I’ve written this blog, I’ve been single. And talked about being single. And complained about being single. And laughed about being single. And pouted about being single. Let’s just say, I’ve made it plenty clear that I was single.
But if you haven’t noticed, for a while now I haven’t been complaining. Or even talking about it. And you know why? Because I’m seeing someone now. He’s real cool, quite handsome, and he even likes my food. Major plus.
I’ve actually liked this guy for quite some time. Going on a year now. I even called him my crush at one point, which is embarrassing since he reads my blog regularly. And you’ve probably even seen him in a photo or two if you’ve followed my blog for a while. I’ve even instagrammed him. Yep, he’s cool enough to be instagrammed.
I thought long and hard about talking about this man, mostly because he’ll be reaaaaaal uncomfortable with me blogging about him. Because, well, what if we stop liking each other? That would be awkward. But I’m going to take the chance, and make him feel weird, because he’s definitely worth mentioning. And I like him quite a lot.
Ok, I’m done talking about relationships. They’re boring. Not mine, but most.
Guess what? I just booked my second trip to Lake Powell. NBD. Remember my first trip last summer? It was real wonderful, gorgeous, and relaxing. I can’t wait for this year. Mostly because this year I don’t have to worry about a CrossFit competition the week after I get back from the trip. AND, I plan on having more swimsuits. More swimsuits means happier time in the water. Just a fact.
Want to know another fact? Sergio is back to the States!! If you don’t know Sergio yet, he’s my best guy friend. He’s weirder and even more opinionated than me, so thank god he’s back so people can stop thinking I’m the weird one. Sergio’s been deployed in Afghanistan for the past 6 months, so having him back has been real awesome. I cried as soon as I saw him. I missed him a lot. Mostly because he’s one of the few people who has made me laugh so hard that I peed myself. Who doesn’t love those type of friends? And the other day, we got straight to doing what we do best. Eating. I made him his favorite from my blog, my banana bread. But I added chocolate chips, because…why wouldn’t you? It was delish. Now that he’s here, I’m going to have way more stories to write about.
Double Chocolate “Peanut Butter” Ice Cream Sandwiches
- Yield: 11-12 1x
Ingredients
For the cookies
- 1.5 cups almond flour/meal
- ¼ cup unsweetened cocoa powder
- ½ teaspoon cinnamon
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- pinch of salt
- 2 eggs
- ⅓ cup raw honey (or other sweetener)
- ¼ cup coconut oil, melted
- ⅓ cup Enjoy Life Mini Chocolate Chips (or other dark chocolate chips)
For the ice cream
- 1 (14 ounce) can coconut milk (I used full fat)
- ½ cup raw honey
- ½ cup sunflower seed butter
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- pinch of salt
Instructions
- Place all ingredients for your ice cream in a saucepan over medium heat and whisk until completely mixed together. Then place in the freezer for 30 minutes to an hour or until completely cooled.
- Add mixture to your ice cream maker and turn on.
- Once ice cream has thickened, place in a container and in the freezer to harden up a bit more while you make your cookies.
- Preheat oven to 350 degrees.
- Mix the dry ingredients in a bowl: almond meal, cocoa powder, cinnamon, baking soda and powder and salt, then mix.
- Then in another bowl, mix the wet ingredients: eggs, honey, coconut oil and whisk.
- Pour wet ingredients into your dry ingredients and add the chocolate chips. Mix well.
- Line a baking sheet with parchment paper and use an ice cream scoop or spoon to pour equal size cookies onto your baking sheet. I would fill my ice cream up half way and that gave me 12 cookies, perfect sized.
- Bake cookies for 12-15 minutes.
- Let cookies cool completely.
- Pull ice cream out of the freezer and use an ice cream scoop to place a scoop of ice cream between two cookies. (if ice cream is too hard, just place in the microwave for 30-45 seconds).
- Repeat. And eat.

Well who wouldn’t love your cooking! Happy for you! Love that you’ve just featured a military guy and I’ll have to give this recipe a try for sure!
I dunno Julie, bewteen the way you describe him and the uniform, I think a lot of ladies would forgive the ‘stache. Just sayin’. 😉
Congrats (is that the right word?) on the budding relationship!
And thanks for this recipe, I’m finishing a Whole 30 this week, but am still on a Paleo Challenge via our Box…but thankfully the Challenge at the Box allows hacks, so bring it!!
How does the coconut milk hold up for ice cream? I’ve used my ice cream maker with almond milk and regular heavy cream, but I have yet to try coconut milk.
great!
Oh, I am going to pretend like I didn’t see this recipe. This…delicious…looking…recipe.
Ahem.
Good to hear you’re seeing someone. 🙂
** and for the rest of my life I can never complain again about people on FB mispelling my name, even though it is RIGHT there…for I just did the same to Juli. Gah!
Is it possible to make the ice cream without an ice cream maker?
i’ve seen people place the ice cream mixture in a bread pan, freeze it, then use an ice cream scoop to scoop it out. but haven’t tried that myself.
I made the ice cream in a blender, but I think it takes a lot longer to freeze.
Is it Sergio? Please tell me it is not a coincidence or a diversion that you talk about both subjects in the same post.
If it is not Sergio – then he’s a lucky guy too. And I think it’s nice that you’re treading carefully where privacy is concerned.
Lol not Sergio
You do realize that now I am going to creepily stalk your blog posts up to a year ago trying to decide who this man is?
haha, me too. ;p
Yay for dating! He must be a really special guy, and very lucky if he gets to eat your food all the time!
By the way, you look TINY in that pic! Look at your little bitty waist!
Am I the only one who just stalked Juli’s blog posts and Instagram account?
Oh… okay cool… I’ll just go be creepy somewhere else.
Haha I’m guilty too… so… is it Andrew??
But c’mon Juli, someone as paleo famous as you can’t just post something like that and not have it be taken as a challenge 😉
Okay, back to respecting your privacy.. sorry 🙂
OMG these look AaaaMazing. Congrates on the new Boe.. How exciting:) I am so happy Serg is home safe and sound. Tell him thank you so much for serving our country. Oh just started filling your Instagram and people really need to get a life:) and as Susie said you look tiny and you are gonna rock your swim suits.

Dude. You should totally roll these in mini chocolate chips. (You know where the ice cream part sticks out.) Too bad you’re not my friend or I’d ask you to make these for me. Now. Because i’m very pregnant and too tired to do it myself. 🙂 They look delish!
*Not my friend in “real life”. ha. That sounded too harsh so i had to rephrase.
Sergio is pretty hot!!! you can always date him, too!!
This looks amazing – my children will love this! So glad your friend made it home safe.
How much of a dork am I that I teared up a little bit between reading that you’re seeing someone and that your best friend came home safe!
PS – I’m allergic to nuts/peanuts/peanut butter… its terrible I know, but I love that you used sunflower butter! It is so yummy and I can’t wait to make these! 🙂

I hate you. I just started the Whole 30 yesterday. These look a-freakin-mazing!
Thank you for this yummy post! I’m trying to print it, but I’m only getting the very top portion, with the prep time, etc…was wondering if anyone else is experiencing this or if it’s just my computer/printer?? I even tried another device and the same thing came up…just that top portion! Sorry to bother you about this…but I’d love to make this!! 🙂
Yep! I had trouble printing too. Went to the old copy and paste option and viola!
okay, i’m glad i scanned the comments before commenting because i really thought this was a picture of Sergio and you and that you were pulling a bait and switch after describing your beau!
you two look so cute together, and i am glad you are happy!! you look amazing too, btw!
★★★★
These look awesome! Any substitutions for almond flour? Hard to find where we live. Would unbleached flour work?
i would just buy almond flour on the internet!! honeyville is a great place to buy a lot for very cheap!
MAN! I thought you were going to say it was Sergio too. “After a long six months away, you both realized….”
These look fabulous! Any suggestions on how coconut flour would work with the cookies and how much coconut flour would be used instead of the almond flour? I am extremely allergic to all nuts and I am not a creative baker… just a recipe baker-lol! Thank!
You would probably need about 1/2 cup, but be careful since coconut flour is so dense. you may need one more egg as well
Good for you Juli! Thanks for sharing! Tell Sergio thanks for serving. Is he single btw? If so then hook a fellow Paleo sister up:)
Men love food and good cooks! way to go girl.

WOW! two things: 1. you look stunning the pic (didn’t even notice the mustache and 2. the recipe: mouth watering

I may have just done an embarrassing little dance for you at my desk. And I think my boss watched me do it.
Okay, I have tried making vanilla coconut milk ice cream with at leas 4 different recipes and /something/ makes the texture weird. I don’t know if it is the alcohol evaporating in the extract or maybe some interaction between the vanilla and the coconut milk. Sunday I gave up and made it with dairy. Your ice cream doesn’t look like it has a funny texture so I must be doing something wrong- but what!
Also, I always use egg yolks when I make it- would that make it weird? All the other flavors are fine and the vanilla diary was good too.
So, don’t take offense to this please: but I kind of hate you right now. big statement I know, but THOSE COOKIE SANDWICHES. You can’t smack that shit in my face when I am uselessly flopping around my non-existent dorm-room kitchen wishing i had and ice cream maker…le sigh…maybe one day i can be as cool (get it? ice cream? ice? cool? cold….) as this recipe. Or maybe you could just send me some? hey thanks, yeah that would be great!
So, Sergio’s single…
Happy that you found someone to take away the single status blues!
So this may be strange, but I think I might know Sergio?? Did he go to the Air Force Academy for college?? If so, then I think I know him. If not, then I’m just a crazy person 🙂
yes sir he did!
my bf likes when i talk about him on my blog.. i never mention his name (smart move!) but he says it makes him feel “special.” my guess is that crush has similar sentiments… just a guess! 😉
I thought there was only Mustache March in the Air Force. His looks pretty good though and I’m sure he won’t have trouble finding ladies. 🙂
Congrats on finding someone worth liking! Woohoo!
Thanks for all the great recipes. I made your meat crust quiche last week and it was delicious!
Congrats! I will miss your complaints about being single but hey that means there’s hope for the rest of us.
Also welcome back Sergio and thanks so much for your service.

So I went through all the posts that I could find that feature guys and well you have very nice looking guy friends, but you are too so that seems fair. Glad you’re happy and thanks for being so awesome at what you do.
Ooo ooo ooo is it JB? I totally just stalked your blog trying to figure it out…is there a prize for guessing correctly? SO happy for you!
(I have been a silent blog stalker until today)
Is there an ice cream maker you recommend?
I use cuisinart
I am allergic to almonds (and walnuts). What else is ok to use?
you could use a different kind of nut and make a meal/flour with it!
Stumbled on this blog while searching for Paleo recipes.
Doesn’t this recipe have too much sugar to be a Paleo recipe? Looks good but high in carbs/sugar
Thanks.
I just give options for paleo versions of highly missed foods. If you’re wanting to stay away from sugar, then don’t have this recipe 🙂
If I didn’t know you lived in Denver, I would totally guess that the new beau was George Bryant, but I know his gf lives in Philly…lol.
haha no ma’am, but he is one of my blogging besties.
Reason number one million 58 that I need an ice cream maker!!
Ok, so probably REALLY stupid question…but what size Ice Cream maker are you using? I have one of those big wooden ones that I think makes 4 quarts…didn’t know if it matters how much liquid you put in?
I didn’t make the cookies because I already had brownies made, but this ice cream was really easy and really good. I think next time I will make with a little less cinnamon. I just got an ice cream maker for Christmas so am so excited to see your recent ice cream recipes.
he can’t get rid of that perv stache! geez. everyone knows that when you’re deployed you grow a creeper stache. my boys and i all had them. they’re the cool thing to do when you are away from home.
i’m glad he is safe and sound. if he reads your blog:
thank you, Capt.
if not, thank him for us, Juli?
Glad to hear that one of these younger guys finally opened their eyes to your awesomeness 😉
I think an ice cream maker is going on my list of things I want as a present. I got a donut maker when you started with the donuts but have been holding off on the ice cream maker. This one pushed me over the edge.
★★★★★
Sadly don’t have an icecream maker but is it just a mixer/cooler combination? I may try mixing it and freezing in a bread pan like you mention in an earlier comment.
Thank you for your service, Sergio, and welcome home! And thank you, Juli, for the recipe…can’t wait to try it!
Ohhh I’m so glad you’re seeing someone ! Life’s been hectic here, gotta say I fell off the paleo wagon, but liking this recipe and hoping to find some time to make it !
Ohh I forgot ! Welcome back, Sergio !
what the he!! is wrong with you posting this recipe! I’m on a whole30 and now I have to think about this for another 18 days. THANKS
Damnit, I NEED an ice cream maker!!! These look amazing.
Congratulations! I’m so happy you’ve met someone. You have such a great personality, and you’re such a pretty girl. Wishing you all the best!!
But, ummm…HUBBA HUBBA, Sergio!!!! 😉 LOL!!!
Oh…and…the ice cream sandwiches are yummy, too!!! 🙂
★★★★★
Thank you for another awesome recipe! And thank you to Sergio for your service to our country! My hubs is in the air force too and I second the mustache advice. Currently it is “Mustache March” at the squadron, no bueno…
Chocolate and peanut butter seems to go hand in hand. Thanks for sharing this ice cream recipe.
Hi there. The current Food on Friday on Carole’s Chatter is collecting links to posts about ice cream and sorbets – or anything similar like gelato. I do hope you link this in. This is the link . Please do check out some of the other links – there are a lot of good ones already. Have a great week.
AMAZING!!!
I am so excited to see that there is an ice cream I can eat! I don’t have an ice cream maker so just used my freezer and stirred every now and then. I can’t explain my shock and awe when I held up a spoonful of perfectly formed ice cream.
Made these sandwiches for my fiances bday last night and they were a huge hit 🙂
Thank you sooo much!
★★★★★
Hey is there any chance the cookie part of this is like a whoopie pie? I have been trying to find a paleo whoopie pie for my husband who completely kills my paleo efforst by eating those darn things daily.
kind of similar!!!
suggestions?
Is their anyway to make this WLC friendly??
Made just the cookies and they were absolutely delicious!!
Ok I’m also going to say it, Sergio is hott! Tell him if he ever finds himself in Atlanta to look me up 🙂
First I want to say WOOT WOOT Air Force ROCKS! I’ve been an AF wife for the past 11 years and my hubby is getting ready to head to Afghanistan for a year:( Glad your bestie made it home safe! Anyway I LOVE these and so do my kids!!! They were bugging me in the store for ice cream sandwiches, then I remembered your recipe, pulled it up on pinterest, grabbed the ingredients, went home and got straight to work. YUMMY Thank you!!!

I just found this recipe upon lurking through your site, and it’s like 30+ C here today in Ontario, Canada with the humidex (not sure what that would be in fahrenheit – sorry!) so I’m craving some ice cream-y like MAD.
As a side note (and I know this blog post is from some time ago), but is it weird that I kind of like Sergio’s moustache? I don’t know, kind of cute! Hard to not like a man in uniform though!
I meant to say ‘something ice cream-y’, not just ‘some ice cream-y’ (unless ice cream-y is the new way to say ‘ice cream’ and I just started a new trend or something … sweet).
