Homemade Pork Breakfast Sausage

I talk about pork breakfast sausage on my blog on the reg. That means regular. That’s because it’s delicious. And I eat it almost every morning. I get it from Whole Foods, from US Wellness Meats, and then sometimes, when I’m feeling frisky I make it myself. That’s rarely. Because I’m lazy. Can’t help it, people. I just can’t. BUT, not all of you have a Whole Foods near you or want to order food online. Understandable. So I made this recipe for you non-lazy people.

Anywho, I’ve recently become completely obsessed with a new realty show. Yes, you can roll your eyes at me. I get it. You’re too good for trash T.V. and actually have a life that you don’t need to fill your time with a person’s fake life. No, I get it. But I’m not that cool. I like watching over people’s true/fake lives. Watching another person’s life unfold on a visual network is invigorating. Not really, but you know what I’m sayin’. That’s why we read blogs, right? Other people’s lives are always more fun than our own. Wait, that’s not true. I like my life most of the time, when I’m not bawling my eyes out because of a simple head cold. Back to the point, I’ve recently become competely obsessed with the new reality show ‘Total Divas’. Have you seen this sh*t? It’s awesome.

So I’ll give you the rundown. So you know the WWE stuff? Like those huge dudes that shoot roids and fake smash each other’s heads in? I don’t really get the thrill of it, but it seems that millions of other people do and love watching it. Weird. So anyways, some hot women do this as well, but in skanky clothes. (ps- my spell check doesn’t recognize skanky. that’s funny) IT’S AWESOME! I honestly don’t really know why because the show is just all about following them around and listening to their high school drama between each other, their men, and in the ring. But it’s somehow addicting. I wonder if my life would look dramatic if it was filmed every day. Pondering….

Ok, back to reality. I was thinking the other day, I’m not sure if I’m more annoyed with selfies on instagram or the fact that they are called selfies. And hashtagged as selfies. I don’t know if I’ve ever hashtagged a picture of myself as selfie, but I’m disappointed if I have. It’s a trend that needs to stop. STOP THE MADNESS.

Homemade Pork Breakfast Sausage

  • Yield: 3-4 1x

Ingredients

Scale
  • 1 pound ground pork
  • 1 tablespoon coconut sugar
  • 1/2 tablespoon garlic powder
  • 1 teaspoon dried sage
  • 1 teaspoon fennel
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes
  • pinch of ground cloves
  • salt and pepper, to taste (I added a decent amount of salt)

Instructions

  1. Mix together all ingredients in a bowl.
  2. Create 5-7 patties with the pork.
  3. Place a large skillet over medium heat. Cook on both sides for about 5-6 minutes per side, or until cooked through.
  4. Serve with whatever else you like for breakfast!

  1. Hmm, cloves, I’ll try that in mine (from Civilized Caveman). When I’m motivated, I make a bunch and freeze them raw. When I’m lazy I just cook it as sausage crumbles and freeze those for adding to scrambles. Love my vacu-sealer.

I can’t have too many of these things in the house, they’re only supposed 2b occasional treats! 🙂 Of course, I can’t have chocolate, so that does limit which treats I can eat. (can’t have citrus or coffee either, and don’t do dairy – so bummer on those yummy looking choc chip & freckled almond cookies- I SO would eat the whole stack! I can only have 1 flavor of rickaroons too, but that beats nothing…would be nice to see more places making treats with gf&vegan carob chips, which I’ve just found)

  7. Does anyone have a substitute for fennel?? Not sure if I should leave it out or substitute. Don’t like it and it makes me burp…gross.

  8. I make this using Ground Turkey too. So Delish! I let it marinate for an hour or more to really meld the flavors. Thank you for the recipes!

  9. You know how long it took me to figure out that to Americans, sausage meat (and chorizo) don’t have to come in sausages? Mind. Blown.

    We don’t do that down here in Aus, you get link sausage or packets of mince. So thank you v. much for the recipe, because now I know what is in a breakfast sausage (and it’s not the crap filler they put in sausages in the supermarket!).

    I have never been able to find chorizo meat that isn’t in a salami-like impossible to break down state, either – I can only use it like salami in slices 🙁 But it’s still super delish, so I’m not that sad.

  14. I just tried your sausage. Excellent. The sausages we have here in the UK (unless from a real butcher) ie the supermarket are full of cereal and crap. Yeah, crap, sorry. Yours is ace, I swapped out the clove for mace for a truly Charles Dickens Victorian experience lol. Seriously good and keep em coming.

    I do my patties a little different let me know what i need to drop or add. First i am a diabetic, and have diverticulitis. I do ground 1-1/2 lbs pork, tbsp of basil & oregano, pinch of cyan pepper. bake on a rack for 20 min at 350.

  17. I used the fennel seeds and it was a great flavour. Think I’ll try ground next time though. We don’t have breakfast sausage in Australia but I enjoyed this this morning. I used it in a hash with sweet potato and zucchini. We also don’t have hash either but its great trying new recipes. Thanks for this one!

  19. Do you think you could mix all the ingredients, form the patties, then stack them with pieces of wax paper in between each patty, place in tupperware in the fridge, then just cook as the week goes by? How long do you think the patties would last raw?

  20. This has become my “go to” breakfast sausage recipe. The only changes I make are to add 1 tsp of onion powder and about 2 tblsp of maple syrup instead of coconut sugar. It’s the best recipe I’ve found and I’ve tried LOTS of them. It’s delicious!

  23. These were delicious! I left out the fennel because I didn’t have any but followed everything else. They were great by themselves but I topped with maple syrup because thats how I like to eat my breakfast sausage. My 3 year old approved until he tasted the red pepper flakes, I will have to try it without those next time.

  24. I think i’m going to need to make this in a 5 lb raw batch! Then i’ll go ahead and separate back into single lbs and place in the freezer for future use!!! So excited!
