- 2 mangos, peeled and diced
- 1/2 red onion, finely diced
- 1/2 cucumber, diced
- 1 jalapeño, seeded and finely diced
- 1 lime, juiced
- 1/4 cup cilantro, finely chopped
- 1 avocado, pitted and diced
- salt, to taste
- Chop up all ingredients
- Mix all ingredients in a bowl
- Eat with whatever you'd like. I paired mine with chili lime plantain chips from sprouts and then topped it on some shredded crockpot pork!
