4 Ingredient Chocolate Mint Cashew Clusters
- Preheat oven to 350 degrees F. Place cashews on a baking sheet then place in oven to roast for 8-10 minutes or until the cashews are slightly browned and fragrant.
- Place chocolate chips in a double boiler to melt, then add peppermint oil and mix to combine.
- Add roasted cashews to the melted peppermint chocolate and mix until cashews are coated. Line a baking sheet with parchment then use a spoon or cookie scoop to scoop out 1-2 tablespoons of the chocolate cashews then place on parchment paper and sprinkle with coarse sea salt. Repeat with all cashews then place in the fridge to harden for about 10-15 minutes.
- Remove from fridge a few minutes before serving to help come to room temperature!
