Ingredients

Scale
  • 1 pound Brussels sprouts, cut in half

  • 2 tablespoons high heat avocado oil

  • 2 tablespoons lime juice

  • 1 teaspoon salt

  • ½ teaspoon garlic powder

  • 1/4 cup pistachios

  • 5 pitted dates, diced

  • ½ pound bacon, chopped

  • juice of ½ lime

  • basil leaves

  • mint leaves

  • coarse salt

  • black pepper

Instructions

  1. Toss Brussels sprouts in oil and lime juice along with salt and garlic powder. Place in the wire basket of air fryer (I use a 6qt air fryer). Turn temperature up to 385 degrees F and time up to 25 minutes. Cook for 15 minutes, pausing the air fryer every 5 minutes to toss the Brussels sprouts.
  2. When there is 10 minutes left, add pistachios and dates on top of the Brussels sprouts then top it all with bacon. Cook for the last 10 minutes, tossing at the 5 minute mark.
  3. Once finished cooking, add to a bowl and toss with a little extra lime juice, salt and pepper and then top it all with basil and mint leaves.
