Place cucumbers in a shallow bowl and top with rice vinegar and sugar. Toss to combined and set aside.
Cut salmon into cubes and place in a bowl. In a small bowl, whisk together honey, hot water, and avocado oil. Pour over half the mixture onto the salmon and mix to combined. Place salmon in an air fryer basket, turn the temperature up to 400 and set the time for 5 minutes.
While the salmon is cooking, cook the rice in the microwave or stovetop.
Build your bowl with rice, salmon, pickled cucumbers, and avocado. Then garnish with the remaining hot honey sauce, green onions, cilantro, sesame seeds, and Korean chili flakes before serving!
