Peach & Burrata Salad

For the dressing

  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 green onion, sliced
  • juice of 1 lemon
  • 2 tablespoons olive oil
  • pinch of salt

For the salad

  • 3 peaches, sliced
  • 3 apricots, sliced
  • 2 ounces sliced prosciutto
  • 8 ounces burrata
  • 1 teaspoon flake salt
  • 1/2 teaspoon black pepper
  • handful of fresh basil leaves


  1. Place all the ingredients for the dressing in a bowl and whisk together.
  2. Add peaches, apricots, and sliced prosciutto to a large plate. Tear burrata apart and add throughout. Top with flake salt and black pepper, fresh basil, then spoon dressing on top with desired amount!
