Peach & Burrata Salad

For the dressing
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh basil, chopped
- 1 green onion, sliced
- juice of 1 lemon
- 2 tablespoons olive oil
- pinch of salt
For the salad
- 3 peaches, sliced
- 3 apricots, sliced
- 2 ounces sliced prosciutto
- 8 ounces burrata
- 1 teaspoon flake salt
- 1/2 teaspoon black pepper
- handful of fresh basil leaves
- Place all the ingredients for the dressing in a bowl and whisk together.
- Add peaches, apricots, and sliced prosciutto to a large plate. Tear burrata apart and add throughout. Top with flake salt and black pepper, fresh basil, then spoon dressing on top with desired amount!
