Rocky Road Ice Cream

- 2 14-ounce cans of coconut milk
- 3/4 cup maple syrup
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon black cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- pinch of salt
- 1/2 cup mini marshmallows
- 1/4 cup mini chocolate chips
- 3 tablespoons sliced almonds
Instructions
- Whisk together coconut milk, maple syrup, cocoa powders, vanilla extract, almond extract, and salt until combined. Fold in mini marshmallows, chocolate chips, and sliced almonds.
- Pour mixture into an ice cream maker and follow the directions for churning time.*
- At this point, you can serve the ice cream as is (soft serve) or pour the soft serve ice cream into a bread pan and freeze for a couple hours before serving! Whenever serving this ice cream, be sure to let the ice cream sit on the countertop for 20-30 minutes before scooping!
Notes
*If you do not have an ice cream maker, you can simply put the ice cream mixture into a bread pan and freeze overnight. Then let the ice cream sit on the countertop for 20-30 minutes before scooping and serving!
