Secret Ingredient Chocolate Pancakes

  • 1/2 cup finely shredded zucchini (drained of liquid)
  • 1 packed cup fresh spinach
  • 2 eggs
  • 1/3 cup almond milk
  • 2 tablespoons black cocoa powder
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup tapioca flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/3 cup mini chocolate chips

Instructions

  1. Add all ingredients, except for the chocolate chips, in a high speed blender and blend until smooth. Fold in mini chocolate chips.
  2. Place pan over medium heat, grease pan, then use an ice cream scoop to scoop the batter onto pan. Cook on each side for 2-3 minutes, until bubbles begin to show in the batter, then flip. The batter should created 12-14 five inch pancakes.
  3. Top pancakes with maple syrup and enjoy!
