Vanilla Tahini Pumpkin Seed Granola

  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together maple syrup, tahini, butter, vanilla bean paste, and vanilla extract. Once combined, add oats, pumpkin seeds, and salt then mix until completely coated in the tahini mixture.
  3. Pour onto baking sheet, spread oats into a flat layer and press into the parchment paper. This will make it nice and chunky once cooled. Place in the oven to bake for 15 minutes, turn baking sheet, then bake for another 15 minutes. Once done baking, let cool COMPLETELY on the baking sheet.
  4. Eat by itself or in a bowl of your milk of choice!
