Chocolate Chip Tahini Blondies

Ingredients

  • 1 cup tahini
  • 1 cup coconut sugar
  • 1/4 cup melted ghee (or coconut oil, etc.)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup paleo baking flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • pinch of fine salt
  • 1/2 cup chocolate chunks
  • pinch of coarse salt

Instructions

  1. Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper.
  2. In a large bowl, whisk together tahini, coconut sugar, ghee, vanilla extract, and eggs.
  3. Once combined, add in the paleo baking flour, cinnamon, baking soda, and a pinch of salt. Then fold in chocolate chunks.
  4. Pour mixture out into baking dish and spread out evenly. Top with coarse salt.
  5. Place in the oven to bake for 40-45 minutes, until brown and the middle is cooked through. Let cool for 5 minutes before removing from baking dish and cutting into 16 squares.
