OMG I love girls nights. Meaning I love every night. I live with 2 other women, all of us are single, and we spend a good amount of time at home. Especially now that we just got patio furniture. We have this cute little back yard with a grill and now a table for 6. That means 3 more people can hang out with us. I wouldn’t mind if those were really good looking, intelligent, successful men who were passing by our house on the way to the park, just conveniently carrying homemade hamburger patties. Yep, that’s how I visualize my summer playing out.

It won’t happen. Let’s just face the truth right now.

But we will definitely have many girls nights on this patio. Just like the other night. It’s been extremely warm for Colorado in March so we’ve been spending more time outdoors. And invited some girlfriends over to consume copious amounts of food with us! Food loves company.

So Laura made burgers, Sarah brought wine, I made sweet potatoes and dessert, and Kristen and Steph just looked good. And set the table. No wait, Kristen brought pickles. She’s smart. So Laura stuffed some burgers with smoked gouda while I stuffed some sweet potatoes with a basil pesto and bacon. Holy balls they were delicious. I also treated those good lookin ladies to some caramel bars. I thought they were stupid fantastic, but they didn’t share quite as much excitement as I did. Silly women. This probably stems from the fact 3 of the 4 don’t eat paleo. Whatever. These bars tastes like caramel. Ha. Yes, I will post the recipe soon πŸ™‚ gotta keep you wanting more! Look at our spread!

This wasn’t mine. It tasted like dog poo. But it makes me look sophisticated right?
I actually ate lettuce for once
That bacon was stupid good.
Holy beautiful

Bacon Basil Twice Baked Sweet Potatoes

  • Prep Time: 15 mins
  • Cook Time: 45 mins
  • Total Time: 1 hour
  • Yield: 4-6 1x
Scale

Ingredients

  • 3 medium sweet potatoes (go for the more round and plump ones)
  • 56 strips uncured bacon, diced
  • 1 cup fresh basil leaves
  • 45 tablespoon olive oil
  • 1/4 cup dry roasted almonds
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Using a fork, poke holes everywhere in your sweet potatoes. Place on a baking sheet and cook for around 25-35 minutes or until sweet potatoes are soft to the touch. (you want them cooked all the way through)
  3. While sweet potatoes are cooking, throw you diced bacon in a pan over medium heat and let cook through.
  4. Once the bacon is cooking, add your basil and almonds to a food processor, turn on and slowly add your olive oil. Once combined, add your lemon juice and a bit of salt and pepper to taste.
  5. When your bacon is done cooking, remove from heat but leave in the pan.
  6. After your sweet potatoes are done cooking, let cool for about 5 minutes then cut in half lengthwise and remove the insides, being sure not to tear away the skin. That could get messy.
  7. Place the insides in the pan with the bacon then add your basil pesto to the pan with bacon and sweet potatoes.
  8. Use a fork to mash the sweet potatoes while combining with the pesto and bacon.
  9. Now scoop sweet potato mixture back into the sweet potato skins and top with a bit of salt and pepper.
  10. Place back into the oven and cook for 8-10 minutes or until sweet potatoes have a tiny bit of char to them!
  11. Consume! Boom!
  12. Add the insides of the sweet potatoes directly
this picture might possibly be the ugliest thing in the world. maybe.

  1. I wish I could have taken up one of those 3 empty chairs – your food looks amazing! And can I just say that I was so worried through that whole Beyonce video that her boobies were gonna fall out! Yikes!

  2. I love the sweet potatoes going to try it!!! Also I have a handsome, single successful brother who lives in the Denver area. Just thought id throw that out their for you πŸ™‚ just in case your looking πŸ˜‰

  3. i think step 12 is missing “to your mouth” at the end of the sentence. effin YUM! i almost lost my appetite with that Beyonce vid. thank Gawd you posted pics of the food before that link or you might have lost me. looking forward to the caramel bar recipe!!!

  6. If only I could look like Beyonce a few months after having a baby. If only I could look like Beyonce EVER!

Must actively consume more paleo yummies and it’s sure to happen right? Except maybe for the boobs…

Looks Delish Juli – thanks again! Can’t wait for the Caramel Bars.

  7. Except she didn’t look like that just after having a baby ’cause this song has seemingly been around for ages. How did i miss that one?

    Still want body and boobs….

  8. Um, Where have you been all my life? Seriously, when I think “What’s for supper yo?” this is the first place I go. Next week is going to be good eats compliments of Paleomg!

Also, Holy Balls? My new favourite saying. Especially after wod 12.4 was posted last night. Holy Balls indeed.

  9. I’m convinced that you have some sort of crazy time warp oven. Every time I bake a sweet potato (i.e. when I’m making sweet potato brownies…weekly) it takes at least an hour to bake! I suppose this is the universe’s way of building my patience.

    1. It may have something to do with the altitude difference. But I always thought you had to cook things longer the higher the altitude, so what the heck do I know?

  10. I know a thing or two about girls nights as well. I live with 2 roommates (and friends live above and below us) so its pretty much constant girl nights. Can’t wait for those caramel bars, non-paleo people don’t appreciate desserts quite like us I would say πŸ˜‰

  11. Looks delicious! How often do you eat sweet potatoes? I love them, but hubby worries about the carb content.

  12. Coming from the non-paleo roommate…those carmel bars were EFFIN delicious! Thank you for feeding me πŸ™‚

  13. OMG! you make me laugh everyday. i eat paleo. but even if i didn’t you’d make me wanna try it. you are amazing. and an inspiration. i am going to the gym tonight because of people like you. and great paleo food!

  14. And NOW I love that video. Awesome. And when I’m done with this pesky whole 30 I’m getting down on this recipe.

  15. My boyfriend has a love/hate going for you! He loves the stuff I cook that is inspired by YOU but he hates how much time I spend on your site and facebook hehehe…keep it up girl you ROCK! xoxo from SC

  16. I think i’d move to Denver so i could be eating all the food you cook up. Don’t worry… i pull my own weight in the kitchen, so you’d be eating some good food by me πŸ˜› i can make some good “paleolized” Peruvian food! Yeah!

I’m gonna write up a recipe and sent it your way πŸ™‚

Thanks for this recipe. I’m making it for Saturday. It’s my parents’ 50th anniversary of being together (the crazy kids dated 8 years before getting married!)

  17. Holy Monkey!! I’m doing two things the minute i get of the godforsaken camp i’m in in the middle of nowhere: making this recipe and ordering me up on o’them shirts!! And no, it’s not a prison camp. It’s worse…northern Canada. -20 yesterday. Love the recipes though…keep ’em coming ’cause they’re all winners. Just like you.

  18. My roommate and I just made a 100% paleo dinner for her parents and brother, including these potatoes, and they loved everything! Honestly, I want to marry these potatoes. Love your site – keep it up!

  19. OMG – these are AMAZING! My roommate and I just basically licked our plates clean! Just had it with a simple turkey burger on a bed of mixed greens to round it out. SO GOOD – THANKS!!!

  20. I made these on Saturday for me and my wife. They were so good I had to make them again on Sunday! Thanks for the recipe. My wife and I have been doing Paleo for a little over 2 months. I have dropped almost 20 pounds and my wife is having to buy herslef new clothes! Paleo + Crossfit = Awesome (healthy) life!

  21. I hate sweet potatoes. Don’t kick me out of the paleo club. I’m still trying to lose weight so it’s not as much of a travesty as it might sound like.

These may change my mind though! I will put them in my face tonight!

  22. I had to stop myself from taste testing all the pesto before I could finish the recipe. That was awesome (used walnuts cause I didn’t have almonds). Do you think this would also work as just mashed sweet potatoes with all the yummy stuff added and then broiled for a few min? I was a klutz when it comes to scooping out the sweet potatoes without tearing the skins.

  23. So tasty Juli! Honestly We need to get you a published cookbook! You have not disappointed me yet!

  24. I just had these for breakfast…..again. They go great with some fried eggs! As a ‘Paleo Triathlete’ this hits the spot after a long swim, run or ride. Delicious!

  25. Is it just me or was Beyonce seriously channeling Janet Jackson there….that whole thing felt like some sort of flashback to the 90’s. I kinda liked it! I wish I had boobs to fill in that gold pantsuit…..

  26. Stephanie Poelman

I made these tonight and were delicious!!! The texture of the crunchy bacon and the almonds were perfect! I too had to bake my potatoes longer than 35 minutes (almost an hour) but everything else was perfect!! Keep the recipe coming; I’ve made several other ones as well!

  27. another amazing recipe. I made it with the boston butt crockpot recipe as well. after almost 23 years of marriage, my husband is impressed with my cooking.. lmao…. all thanks to you.. πŸ™‚

  28. This is the third recipe of yours I’ve made in a row! I have to say, it was the first time I’ve ever worked worked with a sweet potato and man I was missing out…

While the bacon pesto mix was very rich, I still felt like the sweet potato taste was overwhelming that delicious mix, so next time I’m going to increase the bacon amount…. I’m pretty sure nobody in the history of the world has complained about getting more bacon!

    Kudos again.

  29. I made these last night, but I was much too lazy to go to the grocery store, so I made due with what I had at home. Instead of almonds, I used walnuts, and just used less oil. Also, I have no food processor so I just used my blender which left the basil and nuts in a combination of large-ish chunks and puree. As it turns out, I liked it a lot that way. I also had to bake my potatoes for just over an hour for them to be cooked all the way through, and when I tried to take most of the insides out the skins basically peeled off. So I just took all the potato and mashed it in the pan with the bacon/grease and had some AWESOME mashed potatos instead. This may have been a result of me being to impatient to wait to bake them again…

  30. I just wanted to let you know that, as a (somewhat) newly paleo gal, I absolutely LOVE your blog. You seem like you take a pretty down to earth approach, and your recipes have been helping me stuff my face in a deliciously healthy way. Thank you. πŸ™‚
