Bacon Basil Twice Baked Sweet Potatoes

OMG I love girls nights. Meaning I love every night. I live with 2 other women, all of us are single, and we spend a good amount of time at home. Especially now that we just got patio furniture. We have this cute little back yard with a grill and now a table for 6. That means 3 more people can hang out with us. I wouldn’t mind if those were really good looking, intelligent, successful men who were passing by our house on the way to the park, just conveniently carrying homemade hamburger patties. Yep, that’s how I visualize my summer playing out.

It won’t happen. Let’s just face the truth right now.

But we will definitely have many girls nights on this patio. Just like the other night. It’s been extremely warm for Colorado in March so we’ve been spending more time outdoors. And invited some girlfriends over to consume copious amounts of food with us! Food loves company.

So Laura made burgers, Sarah brought wine, I made sweet potatoes and dessert, and Kristen and Steph just looked good. And set the table. No wait, Kristen brought pickles. She’s smart. So Laura stuffed some burgers with smoked gouda while I stuffed some sweet potatoes with a basil pesto and bacon. Holy balls they were delicious. I also treated those good lookin ladies to some caramel bars. I thought they were stupid fantastic, but they didn’t share quite as much excitement as I did. Silly women. This probably stems from the fact 3 of the 4 don’t eat paleo. Whatever. These bars tastes like caramel. Ha. Yes, I will post the recipe soon 🙂 gotta keep you wanting more! Look at our spread!

Bacon Basil Twice Baked Sweet Potatoes

  • Prep Time: 15 mins
  • Cook Time: 45 mins
  • Total Time: 1 hour
  • Yield: 4-6 1x

Ingredients

Scale
  • 3 medium sweet potatoes (go for the more round and plump ones)
  • 56 strips uncured bacon, diced
  • 1 cup fresh basil leaves
  • 45 tablespoon olive oil
  • 1/4 cup dry roasted almonds
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Using a fork, poke holes everywhere in your sweet potatoes. Place on a baking sheet and cook for around 25-35 minutes or until sweet potatoes are soft to the touch. (you want them cooked all the way through)
  3. While sweet potatoes are cooking, throw you diced bacon in a pan over medium heat and let cook through.
  4. Once the bacon is cooking, add your basil and almonds to a food processor, turn on and slowly add your olive oil. Once combined, add your lemon juice and a bit of salt and pepper to taste.
  5. When your bacon is done cooking, remove from heat but leave in the pan.
  6. After your sweet potatoes are done cooking, let cool for about 5 minutes then cut in half lengthwise and remove the insides, being sure not to tear away the skin. That could get messy.
  7. Place the insides in the pan with the bacon then add your basil pesto to the pan with bacon and sweet potatoes.
  8. Use a fork to mash the sweet potatoes while combining with the pesto and bacon.
  9. Now scoop sweet potato mixture back into the sweet potato skins and top with a bit of salt and pepper.
  10. Place back into the oven and cook for 8-10 minutes or until sweet potatoes have a tiny bit of char to them!
  11. Consume! Boom!
  12. Add the insides of the sweet potatoes directly

  9. I’m convinced that you have some sort of crazy time warp oven. Every time I bake a sweet potato (i.e. when I’m making sweet potato brownies…weekly) it takes at least an hour to bake! I suppose this is the universe’s way of building my patience.

    1. It may have something to do with the altitude difference. But I always thought you had to cook things longer the higher the altitude, so what the heck do I know?

  21. I had to stop myself from taste testing all the pesto before I could finish the recipe. That was awesome (used walnuts cause I didn’t have almonds). Do you think this would also work as just mashed sweet potatoes with all the yummy stuff added and then broiled for a few min? I was a klutz when it comes to scooping out the sweet potatoes without tearing the skins.

    I made these tonight and were delicious!!! The texture of the crunchy bacon and the almonds were perfect! I too had to bake my potatoes longer than 35 minutes (almost an hour) but everything else was perfect!! Keep the recipe coming; I’ve made several other ones as well!

  27. This is the third recipe of yours I’ve made in a row! I have to say, it was the first time I’ve ever worked worked with a sweet potato and man I was missing out…

    While the bacon pesto mix was very rich, I still felt like the sweet potato taste was overwhelming that delicious mix, so next time I’m going to increase the bacon amount…. I’m pretty sure nobody in the history of the world has complained about getting more bacon!

  28. I made these last night, but I was much too lazy to go to the grocery store, so I made due with what I had at home. Instead of almonds, I used walnuts, and just used less oil. Also, I have no food processor so I just used my blender which left the basil and nuts in a combination of large-ish chunks and puree. As it turns out, I liked it a lot that way. I also had to bake my potatoes for just over an hour for them to be cooked all the way through, and when I tried to take most of the insides out the skins basically peeled off. So I just took all the potato and mashed it in the pan with the bacon/grease and had some AWESOME mashed potatos instead. This may have been a result of me being to impatient to wait to bake them again…
