I’m in a major funk here. And I’m not one to be in a constant funk. I go through these probably 2-3 times per year. I’ll hit this weird stage where people aggravate me more than usual, my recipes start to fail, and I don’t really want to do anything. I even get annoyed while driving. And I usually don’t get annoyed because I just think people are dumb so I ignore them and drive the speed limit. But my aggravation is getting the best of me. I get frustrated constantly reading mean comments on social media and I kind of  go into attack mode. I’m not one to attack people, I just usually kill them with kindness (you know, the passive aggressive way) but when people become rude over social media, I pretty much want to claw their eyes out. There, I said it.

BUT, I won’t do that. I’ll get over my funk at some point. Maybe it’s because I have to give the government half my hard earned savings. That’s always a ball buster. If I had balls. Damn taxes. Or maybe it’s because it’s not summer yet. Summer makes everything better. Either way, I still have to pay the government and I still love living in Colorado where it sometimes snows in May, so I just need to pull my wedgie out of my butt and go get an ice cream cone. People with ice cream cones always look like they really enjoy life. Yep, I need an ice cream cone.

Ok, so I’m done with negativity. DONE WITH IT. You know why?? Because I have a new cookbook coming out soon and George and I just decided on a different cookbook cover so I’m officially excited. With the book cover being done, there are only a few more feedback steps we have to do before the book goes into the printer on April 1st. Pretty exciting! That means we will have it in our hands in the next month and people will have their preorders come June 10th. Did you preorder your cookbook yet??

Bacon Chorizo Chipotle Smothered Meatloaf

Ingredients

Scale
  • 1 pound ground beef
  • 1 pound ground chorizo
  • 2 medium carrots, chopped
  • 1 cup chopped button mushrooms
  • 2 cups baby spinach, chopped
  • 1/4 white onion, minced
  • 2 garlic cloves, minced
  • 1 cup almond flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon white pepper
  • 1/2 pound bacon
  • 23 tablespoons Sir Kensington’s Chipotle Mayo or homemade chipotle mayo
  • chopped green onions, to garnish

Instructions

  1. Preheat oven to 350 degrees
  2. Place all ingredients, except for the bacon, mayo and green onions, in a large bowl and mix well with your hands until combined.
  3. Put all the mixture into a 9×5 baking dish. Cut the bacon strips in half so they fit across the baking dish perfectly. Layer the bacon down the baking dish, overlapping the bacon slightly and covering all the meat mixture. Tuck the sides of the bacon in so they don’t turn up while they bake.
  4. Place in oven and bake for 1 hour and 15 minutes. Then turn on broiler and cook for less than 5 minutes, just to brown the bacon a little more. Keep an eye on it to make sure it doesn’t burn.
  5. Garnish with chipotle mayo and green onions.

    Sorry in advance for my psychology kick here:

    Sometimes I think those funk moods are just our mind/body’s way of saying “slow down.” Like, even if we don’t feel stressed out per se, we might actually BE stressed because of all that’s going on in our lives… And stress plays a huge role in all areas of life: mood/patience level, our perceived success at career/life, eating patterns, physical well-being, etc. It’s obviously easier said than done, but I am a big fan of down-time in my own life. I -CAN’T- keep going without it. I just have to turn into a little hermit for a bit, and then I can be back to my normal self.

    Just my five cents worth! Hope you know how much your blog and recipes and personality are appreciated!!

    First off – thank you for introducing me to Sir Kensington’s!! I found it in my local Whole Foods and I’m now completely obsessed (just finished the Chipotle flavor, got to try them all). The meatloaf looks INSANE (like all of your recipes). Honestly, some people just never seemed to learn the old saying, “if you don’t have something nice to say, don’t say anything at all.” Some people suck….you are not one of these people. Keep doing what you’re doing, which is obviously what you love! These haters are probably just mad, sad and cranky b/c they are stuck with a sucky life and don’t have the balls to do anything about it so they waste their time online pooping on other people to make themselves feel better!! Keep up the super, duper, yummy work!!!!

    I live in a resort town and we call the funk you’re in right now, “the marches”. It’s not quite spring and people are ready for winter to be over and want the tourists to leave! People start acting crazy around this time of year. They get rowdy and confrontational and just all around weird. The only way to combat it is to crossfit my butt off!

    Love your blog and your recipes! You’re great!

    What is wrong with people? I have completely stopped using the word paleo in my everyday life- apparently it is everyone’s duty to say “IS THAT PALEO” every time I eat a piece of chocolate or have a whiskey sour. I don’t yell at you when you stuff your rude face with pizza and cookies and red bull so leave me alone!
    Just find happiness in the fact that you will be doing dead lifts on their graves. Too far?

    People have been rude to you lately! I can imagine its hard to ignore but that’s exactly what you need to do. Your blog is my favorite to read. I’ve been Paleo for about three years. What I cook at home is always Paleo but if I decide to go to dinner I eat what I want, it’s my business! Don’t change a thing (except for the funk) and keep the awesome recipes coming!

    Happy people don’t try to make other people unhappy. You must have a lot of unhappy people following you on social media, and really, their meanness is their issue. It must suck to have to deal with all of the mean comments, but based on the comments I read on this blog, there are many more people who think that you are awesome.

    You are my favorite Paleo blogger. I love your authenticity, but unfortunately when you put yourself out there, you subject yourself to the haters, too.

    I appreciate the time you spend blogging and posting FREE recipes. You don’t pretend to be perfect Paleo. You help a lot of people change over to a healthier lifestyle, and I think the fact that you aren’t perfect Paleo makes you more real and helps people who struggle with the transition.

    People will always find something to complain about and something mean to say. I feel sorry for those people because they are probably miserable.
