This recipe is pretty epic. I recently asked my Facebook followers to tell me what meal they missed most since going paleo. Among the many amazing answers, one stuck out the most to me. Poutine. I pronouce it ‘poo teen’. No idea if that’s right, but I’m going with it. And the reason this meal stuck out to me was because I had no idea what it was. I had to Google that business and figure out what all the craze was about. Well, french fries with gravy and cheese curds DEFINITELY caught my attention. Holy balls. I really wish that meal would have occurred in my life prior to paleo. So instead, I made up my own recipe. I don’t know what poutine tastes like so this could be nothing like it, but I don’t really care. It tastes like sweet heaven.

I had a fun weekend. Let’s recap. I had a Coaches Prep Course all weekend. Learned how to be a better coach as well as some tips for becoming a better athlete. Pretty damn awesome when you have people like Nicole Christensen, Russell Berger, and Chris Spealler helping you correct your form. I’m pretty sure I’m in love with Chris Spealler. I never wanted to jump on the bandwagon and be obsessed with him, but he’s just wonderful. And good looking. I’m sure his wife is very good looking as well. And his child. I can’t wait to meet my very own Chris Spealler. A really good looking CrossFitting man who is super humble and kind. And single. Where are you bro?

Anywho, on Friday I told Sergio that I wanted to go out Saturday night. That quickly changed as soon as I got home from my course and sat on the couch. And immediately decided going to a bar sounded like sh*t. And watching ‘Love Actually’ sounded much more fun. Then Sergio showed up at my house and gave me the look of disappointment, so I had to go. But once we got in his car, with heated seats, I was happy. And then I got to see a ton of friends that I rarely see since I’m slightly antisocial. AND since Sergio was so appreciative of me going out to the bars, he grabbed my phone and changed my Facebook status to ‘I gotta go poop so bad’. What a good friend. Always making me look good for all the single men out there.

I just ate an entire sweet potato. With butter. Real butter. It was stupid good.

  • Yield: 2 1x

Ingredients

Scale
  • 1 sweet potato, cut lengthwise into preference sized french fries
  • 68 strips of bacon, cut into 1 inches pieces
  • 1 head of cauliflower, stem removed, cut into small florets
  • 1/2 cup canned coconut milk
  • 1 tablespoon almond butter
  • 1 shallot, thinly sliced
  • pinch of dried thyme
  • pinch of black pepper
  • pinch of sea salt
  • 1 tablespoon fat of choice
  • Coconut Oil spray

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut your sweet potato in half lengthwise, then slice the sweet potato into 1/2 inch strips then cut those in half. This is all in an attempt to create perfect little french fries.
  3. Place parchment paper on a cookie sheet and line sweet potatoes on it so they are not overlapping.
  4. I used spray coconut oil and lightly sprayed the sweet potatoes then topped them with a pinch of salt.
  5. Then remove your stem from your cauliflower and roughly chop cauliflower into small florets. Cheese curd size will do.
  6. Place in a glass baking dish and drizzle a tablespoon or so of your fat of choice.
  7. Place cauliflower as well as sweet potatoes in the oven to cook for 20-25 minutes. (Your cauliflower may take longer)
  8. While the goodies are in the oven, add your diced bacon into a skillet over medium heat. Use a wooden spoon to break up the bacon and help cook on all sides.
  9. Once bacon is done cooking, remove from heat and remove bacon with a slotted spoon and place on a paper towel.
  10. Pour excess bacon fat into a jar or can (save it ya dummy) leaving 2 tablespoons behind in your skillet for the gravy.
  11. Place skillet back over low heat, add your shallots to cook down for 2-3 minutes, then add coconut milk and almond butter then some thyme and black pepper.
  12. Let the coconut milk come to a slight boil then use your spoon to mix together and begin to cook down.
  13. Once the mixture begins to thicken, add your bacon back to the gravy and remove from heat.
  14. Once your sweet potatoes and cauliflower are done cooking, place in a bowl or on a plate, top with gravy, and devour!!

I actually have poutine gravy in my pantry, saved from my last trip to Montreal… I’ll have to check the ingredients and see how far it deviates from being paleo. I might use a little bit of it just for the flavor. Definitely trying this recipe soon!

I went to college in Montreal and could get poutine delivered to my apartment. Ohhh those were the days. Now I’m back in the US, poutine-less. Probably a good thing.

Oh and cheese curds are delicious. Also known as “squeaky cheese” from the sound it makes when you chew it.

Lol well hopefully this satisfies your poutine needs!

    1. How come sweet potatoes are allowed on Paleo???

    2. You said “real butter” did you mean almond butter?

    3. I’m sure this would taste great, but not very much compares to real poutine even if it is a “gut bomb” lol

      1. There are different opinions about sweet potatoes. I use them often because I workout for a living so I need that extra sugar and nutrients that you can get in a sweet potato. If you are looking for weight loss, they are not something you want to be consuming at a high rate.
      2. Real butter from cow’s milk.
      3. You never know until you try this!!

Pronounce it like a Quebecoise, and its “poots-INN”, we laugh at the english pronunciations 😉 And, mm, squeaky cheese 😉

I’ve tasted a pub version using sweet potato fries and curried gravy. Interesting…

Lol thank you Amanda! Well hopefully you try this recipe out and can tell me how my interpretation measures up to the real stuff

Just finished a bowl of this and had to thank you. There are no words. Well, maybe “holy s**t that’s good” which is what my husband said when he tried it. Thanks!!

    Hi Julie!

I don’t mean to be a complete pain in the arse … but the shallots … what does one do with them exactly?

I made this on Sunday and cut up all the ingredients … got through the recipe and low n behold there were my shallots chillin on the cutting board. NOT TO FEAR … they gladly were added to the gravy and were delish, but was that the correct thing to do with them?

You rock, btw, in the least creepy way possibly.

Oh poo did I forget that step? Not surpised lol. And yes, they are suppose to be added to the gravy. Sauteed up for some flavor!

I made this last night with beef bacon that I got from Calligrate on 2nd & Santa Fe, and it turned out amazingly good. One thing to note: i made two batches of sweet potato fries, and I used the convection fan in my oven for first batch of sweet potato fries, which was a mistake. The second batch I turned the fan off, and they cooked perfectly. I sautéed the cauliflower with garlic, too, and it was spectacular. Thanks for a great recipe, the gravy was awwwwwwwesome.

    1. juli says:

Awesome!! Thanks for the comment Jeremy! Sounds awesome!!

I used your recipes for almost every meal this week and this one (like all of them) was DELICIOUS!! We had some gluten free beer and poutine for dinner. Loved it! Great job Juli!

Nice recipe! I recommend using sautéd mushrooms instead of cauliflower. The texture is more similar to the curd cheese!

I laughed at this blog it is so us! Our Costco misrebmhep is expired, but we still have our misrebmhep cards so we can get through the doors & get hotdogs and poutine (and of course samples too!). In fact, I think we’re planning on going there for lunch today
