This idea sounds genius doesn’t it!? I’m just so damn creative, right?! Wrong. The Domster came up with this idea. A while back, he mentioned that he wanted to make a blueberry bbq recipe. And this man can make some down right amazing bbq sauces along with any other food you ask him to. He’s insanely good. I love him for this. I tend to go to him for recipe ideas. This man can think up some good sh*t. He’s fantastic. And good looking. And single. Just saying. Anyways, the problem is, he doesn’t always cook things paleo, so when I consume his bbq sauce, my love handles grow an extra inch. Thanks Dom, thanks. So I decided to create my own bbq sauce and make it paleo-tastic. And it was. For sure.

A group of us ate this meal on the rooftop of RJ’s building. What? You thought that was MY view from MY place? HA. Let’s be realistic. You saw my oven door in my place. You think views like that have ovens like mine? Lord, I’d hope not. But we like to call RJ’s rooftop ‘Cantina de Rej’. You can see me check in there on occasion on Facebook, unless we’re not Facebook friends. Like Dom and I. He doesn’t have a facebook. Sketch, I know. This f*cking guy.

Paleo Blueberry Maple BBQ Chicken

For the chicken:

  • 2 lbs chicken, I used tenders but whatev
  • 3 tablespoons bbq rub (I used Cowboy BBQ rub from Sunflower Market)
  • 3 tablespoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the BBQ sauce:

  • 23 tablespoons fat, I used olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 23 cups fresh blueberries
  • 2 cups tomato sauce
  • 2 tablespoons apple cider vinegar
  • 1/2 cup maple syrup
  • 1/4 cup coconut aminos or gluten-free soy sauce
  • 1 tablespoon bbq rub
  • 1 teaspoon red pepper flakes, to taste
  • salt and pepper, to taste

Instructions

  1. Let’s get this saucy sauce going. Melt the fat in large saucepan/skillet over medium heat. Add garlic and onion and cook until the onions become translucent, about 8-10 minutes.
  2. Add tomato sauce, blueberries, maple syrup, coconut aminos, bbq rub, and red pepper flakes; bring just to a boil. Reduce heat to low and simmer until sauce thickens slightly, about 20 minutes.
  3. Stir in the apple cider vinegar; and add salt and pepper to taste.
  4. While the sauce is simmering, heat your grill and start preparing your chicken
  5. Grab a large shallow bowl out and throw your chicken seasonings in it. Then heavily cover your chicken in the seasonings. If you need more, add more. Just make sure the chicken will have a real kick to it. Don’t be scrrred.
  6. Now grab a small bowl and put 1-1.5 cups of your blueberry bbq sauce in it and grab a brush to rub the sauce on your chicken. Not a hair brush. If you don’t have a brush, you can just use a spoon to top some of the sauce on your chicken with.
  7. Place the chicken on the grill and brush some of the sauce on the tops of the chicken tenders. Turn the chicken over when the edges begin to whiten and the chicken puffs up a bit. Puffy chicken, yum.
  8. Let the chicken sit for about 5 minutes once it is off the grill and top the chicken pieces off with lots of bbq sauce.
  9. Consume somewhere with a good view.

    Just made your sauce with some baby back ribs. So delicious! I made a half batch with blackberries and without the crushed red pepper for the kids–they loved it and ate it like soup! I also made an extra spicy batch without berries for me and the husband–so good. Love, love, love! Will definitely make again.
