Brownie Batter Pancake Skewers

SAY WHA?! Did you read the the title of this recipe?! I must be high…or pregnant. Well we all know it’s definitely not the latter. And I suck at doing drugs. Figured that out in high school thankfully. So it must be…I just really like chocolate. Yep, that’s what it is.

Annnnnnd, I really like Pinterest. Thankfully Pinterest and chocolate pretty much go hand in hand. That’s where I got this recipe idea from. And on my Pinterest account, I’ve made it so my home page is only following people that pin food. If you don’t pin food, I want nothing to do with you. What else would I need the internet for? Shoes? Na. Hair…I tried to care about that, it didn’t work. Wedding ideas? I just threw up. Crafts? Hell to the no. Crafts are for people with children. Or time. Neither of which I have.

Speaking of children, I figured out reason #47 why I do not like them. One hissed at me while I stood in line at the grocery store today. Stared. And hissed. And her mother acted like it was normal. It’s normal for your child to hiss at other human beings? Where do you live? A sewage drain?

Geez I’m intense today.

By the way, I arrived at home today, package on the doorstep, waiting so patiently for me. What was the package you may ask? Well, it was a meat package. No, not my crush sadly, but a box of meat. I ordered lots and lots of meat recently from Tropical Traditions and it ended up on my doorstep two days later. Wanna know what I bought?! Of course you do!! I bought myself some short ribs, some ground beef, some ground bison, a rump roast aaaaaaaaand, that’s it. My life officially became better with this package. Now I’m just waiting for that crush to arrive at my doorstep WITH meat AND chocolate. I would die.

And just so you know, these mini pancake skewers could be made into big boy pancakes as well. But anything mini makes things cuter, and instantly taste better. It’s just fact. I’ve researched it.

Brownie Batter Pancake Skewers

  • Yield: 1-2 1x

Ingredients

Scale

For the pancakes

  • 1 banana, peeled
  • 2 egg whites
  • 1 whole egg
  • 2 tablespoons coconut flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon agave or raw honey (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt

For the toppings

  • handful of strawberries, diced
  • 1/4 cup coconut butter
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon agave or raw honey

Instructions

  1. In a food processor or blender add your banana and pulse until completely broken down into a soupy paste.
  2. Then add your egg whites and egg and pulse again to combine.
  3. Lastly, add all of the rest of your pancake ingredients and pulse to thoroughly combine.
  4. Heat up a large skillet or pancake griddle under medium heat, grease with a bit of coconut oil, and add your pancake batter to the hot skillet with a spoon. Make to your preference size, small for the skewers, large for big boy ones.
  5. Flip pancakes when you begin to see bubbles forming on the top surface of the pancakes. The smaller they are, the shorter amount of time they will take to cook so keep on eye on them.
  6. While your pancakes cook, mix your coconut butter, cocoa powder, and honey/agave. Place in microwave if needed to mix thoroughly into a paste.
  7. Once your pancakes are done cooking, stack one pancake, then a slice of strawberry and repeat as many times as needed, stick a toothpick through it, and pour chocolate sauce over your pancakes.
  8. Consume.

Notes

This will make 4-5 skewers with 3 pancakes per skewer, ranging from 1-1.5 inches in diameter. Definitely double or even triple the recipe if you have a large crowd!

  1. NO comment on the food but the kid hissing is pretty funny – this is why I was only a teacher for 2 years. Kids are a pain and parents are worse – haha.

  2. wow….youve really outdone yourself here juli. holy crap I can’t wait until strawberries come into season so I can have fresh garden berries sandwiched in chocolatey deliciousness.

  3. This recipe is a thing of beauty… Artwork, really. We made these tonight. They were amazing,,, I’d give them 6 stars if I could!

  4. My almost 3 yr old nephew kind of hisses but here’s why: his parents are big time zombie fans and his little hissing is him pretending to be a zombie. He will even say “brains” and will make eating noises near your head. Thankfully he never really bites but he has scared a few kids at the playground with the hissing noise.
As for this recipe….reposting with a major OMG!!! I think my husband will most definitely not mind trying this paleo recipe. 😀

  5. Cecil the Seasick Sea Serpent

    OMG you’re nuts man.
“Kids are very perceptive” so he’s’a’pickin’ up on yer nut-vibe yeah.
My kid wouldn’t hiss, he’d take your hand and kiss it because he’s a grass-fed primal boy and he likes pretty women- like his Mama! Haaaaaahahahahhaa!
    Diggin yer blog El Duderinette.
This recipe is ‘the full sick’, which here in Oz is a compliment.
    : )

  6. Hissing children? That is really creepy! I prefer my greyhound to kids any day. Wanted to send you a quick note and tell you how much I enjoyed the Cinnamon Chipotle Sliders… I made them last night with some roasted broccoli and eggplant on the side.
    Rocked my world. 🙂 thanks!

  7. Of course. The week I start to lock down my nutritional “extras” for Regionals. At least now I know what I want to make the weekend AFTER. May 26, I’ll see you in my dreams…

  8. OMG YOU CAN SET YOUR PINTEREST PAGE TO DO THAT?!?! HOWWWW????? (btw, I pretty much steal all your food pins. Yes. I’m creepy)

I get really excited for boxes of meat from the farmers around here when I order them. I tell all my coworkers about it too. I don’t think they quite get it.

  9. lol you realise that you can follow specific boards of people and not all of them! Just unfollow the other boards 🙂

Kids are kids, it’s the parents you have to watch out for they are the ones who teach the blank canvass manners.

  10. I just made these for breakfast. If I didn’t live in Maryland I would would walk to your house and hug you. Brilliant. Seriously brilliant.

  11. I know this is going to send shockwaves thru the Paleo community but I hate coconut. Like the smell, the taste…everything. I have tried different types and in different foods and still can’t for the life of me make it happen. Is there a substitution I can use so that I can hop on boarding this baking train you got going?

  12. You’re hilarious and amazing! Love your posts, love your recipes and as a noob to paleo and cross fit, very inspirational!

  13. Sorry to hear your bad experience with a hisser. Man alive I tell ya parents these days are a hot mess — myself included, but I wouldn’t allow my children to do that. Insane shorties.

I may have to try this..not sure it will fit into how I should eat. 😉 KIDDING I had to go there. Maybe a great — monthly thing.

    k. arms hurt from the WOD on Tuesday… lol so typing is done. 🙂 Started my own blog, cause I can talk all day long… 🙂 My coach is single..just sayin. 😉

  14. I hope substituting cacao butter for coconut butter works because I don’t have 8-10 minutes to wait for coconut shreds to turn into butter. I want these NOW. I’ll let ya’ll know how the cacao butter works

  15. Just wanna say THANK YOU. I have looked at lots of sites and gotta say YOU ROCK. I love the pics, consistency, story telling and your over all attitude. Your rants make my day brighter.

  16. I just want you to know that I want to be your best friend…ok wait that sounds super freaking creepy. I’m not a super freaking creepy person. Shoot, if I’m denying that does it mean that I am superfeeaking creepy?!?!? Anyway, I love your blog. Your stories make me laugh my booty off and your recipes are divine!

  17. my sauce was a FAIL 🙁 instead it turned into a buncha clumpy crumbs! any idea why this may have happened? it was my 1st time to make coconut butter, which I thought I blended well enough… but maybe I should have kept it in the processor longer… my coconut butter ended up being kind of a thick liquid… maybe it needed to be more runny to make the sauce? ok, now I’m just rambling to myself like an idiot and you probably don’t know what I’m talking about! hahaha

  18. Making these this morning! And…I just told my little boy that he should never hiss at anyone. Just making sure I cover my bases ahead of time. 🙂

  19. haha, when I told people I was dipping bacon in chocolate today and eating it with nut butter and hot sauce I got the same thing….but then again, pregnant or not dont knock it til youve tried it. Seriously try it so many flavors your tounge will have an orgasm!

  20. These were good; thank you for sharing your ideas, recipes and funny sense of humor.

This is a great one. I just did warmed strawberries as the topping…delish!

  21. I didn’t join Pinterest until I realized that it had FOOD. Like foodgawker for the entire internet! Now I get mad when there are non-food pins in my stream. Ugh.

  22. Reading this just made my evening..I had no idea there was anyone else on this planet that doesn’t like children. Please keeep more of those rants coming…they’re glorious. And your recipies are amazing by the way.

  23. My girls and I made this one yesterday, when looking for a healthy-ish dessert/snack idea (and one that we had the ingredients to in the house). We ended up just making the pancakes themselves, with no filling or topping, but they were amazing anyhow! I’m sure it helped that we threw a ½ cup of chocolate chips in the batter, too, but hey…

The only problem now is that my 7-year-old wants them every morning for breakfast… do you think that would be bad? 😉

(the only reason I didn’t leave a rating is because we made such a modified version of it… but “we loved it!” should suffice, right?)

  24. Good lord!! So great! I just made this and I cant believe how awesome it is. This sure beats any fatty ol’ dessert! Heaven in my mouth!

  25. Just made these for Father’s day and it was so great! I didnt have all of the coconut ingredients so as a topping, I added honey with cocoa powder and strawberries.. it was amazing and tasted better than ordinary pancakes!

    Thanks for the great recipe!

  26. Just made these and WOW. I used a dark cocoa so they came out considerably darker and richer. No chocolate sauce, just ate alongside fresh strawberries and raspberries.

  27. I just made these to celebrate my 40th birthday after eating eggs and veg for breakfast for the past 3 weeks. Holy crap, what a treat! I am new to the whole paleo philosophy but I like your philosophy! Juli, you are frikken awesome!

I live in Denmark and cannot access coconut flour so I used home-ground almond meal. instead I threw in a few more tablespoons and the finished product was perfect.

So satisfying and awesome to know they are healthy.

By the way, pancakes were never my favourite but this recipe have converted me!

  28. OMG! You are a freakin’ genius! I was looking for a recipe to use up a banana and was in the mood for some pancaky thing. The first breakfast thing I find on your site is brownie batter pancakes. Are you kidding me?! How lucky am I?

This is litterally the best thing since I’ve stopped eating sliced bread. And the first pancake recipe I’ve tried that’s light and fluffy like a pancake should be. I’m actually glad my husband doesn’t eat Paleo…more for me!

  29. Made these this morning and oh man are they AMAZING!!!! I forgot the coconut flour on the first batch (yes, I made several batches) and I ended up with perfect chocolate crepes! Also, my strawberries were bad so I served them with bananas sliced the long way and they were soooo yummy! Can’t wait to try them with the berries!

  30. Hello from the UK! Your recipes look amazing. Definitely going to try this one 🙂

I adapted your apple cakies recipe into a loaf earlier and it’s wonderful so thank you for that inspiration.

One day I’ll start a blog, when I get up the nerve.

  31. Your recipe has been tested and approved in France this morning. What a delicious breakfast for a lazy Sunday!

Thank you, you’re so funny and creative.

  32. andrea lauridsen

wow, wow and oh wow is all i can say about this pancakes 🙂 they made me smile and im not a morning person thank u july (hug) 🙂 .

  33. I tried it and it has become one of my favorite breakfast recipes…
My kids gave it a Thumbs Up and one of them is a Very picky eater… Thanks for this great recipe…

  34. Made this recipe this morning. I expected an abundance of sweetness but everything was so balanced. The pancakes weren’t sweet but the chocolate syrup and strawberries were, and added the sweetness that the pancakes lacked. For me this made four pancakes and I couldn’t even finish it all. It was very tasty! Next time I want to make this as a sweet treat dessert for a guiltless dessert. So happy to have tried this! Thank you 🙂

  35. this is so yummy! made it this morning! i had to sub the coconut butter, i just used grass fed instead! i trued almond butter (fail) i tried ghee ( fail) so so yummy and healthy!!!
