Another bean recipe coming your way! No, beans are not paleo. But the great thing about this recipe is that all you need to do to make it paleo is not add the beans. It’s that simple. No bitching needed. It’s been a week of bitching on the internet, so let’s clean it up around here, guys. No need to get upset about things that aren’t worth getting upset about. Bigger fish to fry, don’t ya think? This soup is pure comfort food, but the best part is that it’s crazy easy to make. You don’t need a boat load of ingredients and you may already have all of them in your pantry. I made this dish one night when I wasn’t sure what the hell I wanted and it’s now become a staple in our week! Fall is lovely, especially when it’s filled with soup!
I gotta touch on something, because God forbid I share (gasp) ANOTHER BEAN RECIPE. I had a couple people reach out to tell me that I need to rebrand since I’m going outside of paleo these days. Even though I’ve shared thousands of free paleo recipes, 3 paleo cookbooks, and ate paleo for 8+ years. But since I have expanded my palate into other food groups, some people believe I should rebrand my site. So I thought I would put things in perspective – rebranding costs A LOT of money. Thousands upon thousands upon thousands of dollars…while this site already costs A TON of money to run (I think many people think sites are free or don’t cost much money…that is incorrect for a site like this one). Then after you rebrand, you have to hire your web developer to redesign your site to match your rebranding, which also costs thousands of dollars. Rebranding isn’t just calling your site something different, it costs a ton of money. And I’m explaining this because I think we (as human beings who all think we know what is best) think we understand what it takes to run a business, but we really have no idea unless we are in it. I’ve had this website for almost 10 years and it’s stayed alive because I’ve put A LOT of money, time, and hard work into it. And if I now want that hard work to have some beans in it, that’s how it’s going to be. If you are unhappy with that, I’m sorry for your upset, but it’s not worth it. Please do not email me asking me to rebrand, unless you would like to pay for it yourself and become my manager (for free) to handle it all in a smooth fashion.

Woooooooweeeeee I sound like a bitch, huh? I’m ok with that. If people want to share their viewpoint and advice, I’m here to share my own. I gotta stand up for myself! And I’m just at my wit’s end, honestly. A bit exhausted from the last few days of social media and people taking their election stress out on me. Just a reminder, I am not Trump or Biden or Harris or Pence. Or anyone else in government. I’m just a woman who loves to work out, eat delicious food, hang with my dog, and listen to true crime podcasts. I also like to eat beans to clear up my acne and share that experience/food with you. Is that worth getting upset about? Nah. Life is too precious to stress over what other people’s diets look like. You know what you should stress over? Cannellini Bean Soup
- Prep Time: 10 minutes
- Cook Time: 35 minutes
- Total Time: 45 minutrs
- Yield: 6-8 servings 1x
Ingredients
- 1 pound spicy Italian sausage
- 1 yellow onion, minced
- 2 large carrots, diced
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 2 teaspoons Italian seasonings
- ~50oz chicken bone broth*
- 14oz can of diced tomatoes
- 1 tablespoon tomato paste
- 1 head of dino kale, chopped and massaged
- 29oz can of cannellini beans, drained and rinsed
- black pepper, to taste
- coarse salt, for garnish
- fresh parsley, for garnish
- gluten free baguette**
Instructions
- Place a large pot or dutch oven over medium heat on the stovetop. Add the Italian sausage, break apart into small pieces and cook until no pink remains. Use a slotted spoon to remove the sausage and set aside for later.
- Add the onion and carrots to the pan along with 1/4 teaspoon of salt. Sauté for about 5-7 minutes, until onion begins to become translucent and carrots begin to soften. Add garlic, 1/4 teaspoon salt, and Italian seasonings and sauté for 3 more minutes. Add in broth, diced tomatoes, tomato paste, and kale. Combined then cover and let come to a boil for 10 minutes.
- Lastly, add the Italian sausage, cannellinni beans, and black pepper to the pot and let the beans heat through for 5 minutes. Garnish with extra black pepper, coarse salt, fresh parsley, and some crust gluten free bread!

* I used three 16.9oz containers of Kettle & Fire chicken bone broth
** I used Against The Grain Baguette

You are on my “check every morning” rotation, I have been some combination of paleo or keto for over a decade, but every once in a while i want/like a good dish with beans in it 😉

Making this tonight! I was going to use the instant pot…I’m assuming the directions would change to: brown the meat first, then add in everything (except for garnishes) and set? Can’t wait to try it!

Making this today and sent hubby to the store for 3 things, including Chicken bone broth…he came home with Beef bone broth. Apparently he doesn’t read lists!! Will the beef broth compromise the taste of soup?
I agree with other comments about your getting negative comments regarding your recipes and/or ingredients you choose to post…It’s your site, you can/should do anything you darn well please! We readers can choose to make them or not, but criticizing ingredients (like beans, bread, or whatever) isn’t productive. Those naysayers don’t have to make it or just leave out/substitute ingredients you don’t want to use…not that hard a choice. IMHO
