Please understand that I know these breakfast cookies may look a little ugly. I get it. But they taste awesome. Just a fact.

I miss Jackson SO much. I’m just leaving Austin this morning to head back home and kiss his face over and over until bites me with his little gremlin teeth. He loves to do that. And by the way, Jackson is my dog if you didn’t know who that man name was. He’s still a puppy, not yet a man. That could be a song.

So Austin was amazing. I’m going to do a summary post tomorrow about all of it, don’t you worry, but I can at least do some summarizing. I ate a lot. I hung out with awesome paleo people. Some people were annoying. I mean, it’s the paleo community. It’s full of intense hippies. You’re probably an intense hippy, aren’t you? Judging. Jk jk. I like the smell of lavender sometimes, too. Back to my point. I shopped a lot. I talked to a lot of people. I did a cooking demo. I drank barely any water. I spoke on a panel that I so did not want to speak on. I had more dairy then I’ve had in the entire year. I laughed so hard I cried. Twice. I packed my bag home with 4 chocolate bars. I went to an awesome CrossFit gym and did a super painful workout. I sweated into my eyes while working out. And I stayed in a super fun condo with 7 other people. The coffee table was a giant drum. No lie.

I’m so ready to be home. I made the bf send me multiple pictures every day of the puppy. He’s growing up so fast and I’m missing it all! I was hoping that by the time I got home, he would be perfectly potty trained. But it doesn’t look like it’s going to turn out like that. I think we will still have to work at it. Poor kid. He just likes to be independent and prove that independence through urinating where he pleases. That just ain’t gon’ work.

Speaking of ain’t gon’ work, I’m a bit annoyed with United Airlines right now. I usually stick with them because they tend to almost always have wi-fi, their flights have always been on time with me, and they have seemed to always have a decent amount of space in their planes. I was wrong. This time around, I was forced on one of their United Express planes that looks like it should be taking me from Denver to Colorado Springs, instead of all the way to Austin. They are so small that only a purse fits in the bin overhead and you can literally smell the breath of the person sitting next to you. And based on my experience on this trip, these little dinky planes do not tend to be on time. I’ve never really had a flight be late with United and then once I was lucky enough to ride on the United Express, all my flights were late. I feel like this happens because they are the little, nerdy planes so they get pushed around by the bigger ones and can only come out to play when all the bigs ones are gone. Well you know what United Express? You need to pull up your big boy pants and get your sh*t together. Meaning get rid of those planes so I can make it on time to my destination. Maybe it’s just time to pick a new airline. What do you think? What’s your favorite airline to fly?

Carrot Cake Chocolate Chunk Breakfast Cookies

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, add carrots, coconut sugar, coconut oil, eggs and vanilla extract to a bowl and whisk.
  3. Then add coconut flour, tapioca flour, pumpkin pie spice and salt and mix until combine. Then fold in chocolate chunks.The dough will seem a bit dry and thick, don’t worry.
  4. Use an ice cream scoop to scoop a rounded scoop onto a parchment paper lined baking sheet, then press the cookie down with your fingers.
  5. Repeat. This should make 12-13 cookies.
  6. Bake for 35-40 minutes until cookies are cooked through in the middle.

    Southwest all the way! I’ve had nothing but problems with Delta and I fly out of one of their hubs (hint – it’s not Atlanta). If they can’t get things right on their home turf then there’s really no hope.

    Cookies look awesome! Think I’ll try some banana and applesauce and cook in a dehydrator to make them autoimmune compliant! I miss treats…

    I usually like United but had a pretty crappy experience flying from Aspen/Snowmass to NJ. I was booked on United Express from Aspen to Denver and then on a regular United plane from Denver to Jersey. United canceled the flight completely because of high wind in Denver. I had to rebook everything and ended up flying United Express from Aspen to Chicago and then Chicago to NJ. Four HOURS on United Express…no fun. I understand United can’t do anything about the weather, but the United folks in Aspen were super unhelpful and couldn’t really be bothered to help me rebook. I had to call the airline’s 1-800 number and got it taken care of in 3 minutes. Although it sucked, I would fly United again….Southwest is the WORST airline I have ever used. Always late, ALWAYS. Crap planes and horrible customer service. Southwest also cancels flights, a lot, for non-weather related reasons.

      The honey sub would definitely not work because coconut sugar is granulated/dry ingredient whereas honey is wet. Here is what I would try though with your particular situation: Increase coconut flour by about 1/4 cup and no tapioca flour. Add another egg. Start with 1/3 cup honey and increase from there as needed.

    I just recently flew Southwest and did not like it one bit.
    NO assigned seating! Sucks!
    I’ve always liked Delta and Alaska.
    I’ve heard great things about Virgin.

    These cookies look great! Perfect for my girls, who always ask for cookies for breakfast, and I always have to say no.

    I will be trying these with reduced coconut oil. I am in Argentina and we personally bring in all of our coconut oil/flour every time we visit the USA. I can’t spare a whole cup just for one recipe! 😉 I’ll try to replace some of the sugar/oil with a banana or apple sauce and let you know how it turns out.

    We always fly American to/from the USA and have always had good luck with them. Some of the international routes are running the gorgeous new planes, which makes the experience even better. Sorry that United sucked so badly!

      I have these cookies in the oven now. I reduced both the oil and sugar to 1/3 cup each, added one mashed banana and one extra egg.

      The consistency is great, very appropriate for cookies. I question the baking time of 35-45 minutes for cookies? I know that ovens vary, but mine were cooked in 15 minutes!!

      I love the concept, but couldn’t stomach the idea of a whole cup of sugar and a whole cup of oil. I feel much better feeding these to my family with reductions to 1/3 cup each. Recipe as written, 3 stars.

        How many cookies did you make? Perhaps they were smaller.

        Also, if you look in the comments below she said the coconut flour should be increased to 1 cup (don’t know if you made them before or after she corrected for that)… that may have made a difference in baking time for you and how you made the subs.

        I agree there is a lot of sugar, but they seem to be more of a treat than a “I’m going to eat 5 for a meal” type thing. Most cookie recipes have at least a cup of butter so I don’t see why 1 cup of coconut oil is so odd. I do appreciate your inclusion of the subs though, very helpful.

        I also really question the baking time….I didn’t look at mine for 35 minutes and when I opened the oven door they were completely charred! Such a shame as the dough was delicious!! I did not see the correction of coconut flour though, perhaps I’ll try again and monitor cooking time.

    I love flying with Southwest. 2 free checked bags, up to 50lbs each. You know how much food/beverages I can bring home from places I visit? Lots! 😉 Their prices also tend to be pretty consistent, which I like too.

    First of all, these look awesome. I was going to use a whole bag of carrots to make my kid some baby food, but I’m poaching some of them for cookies, now. (I’m obviously a devoted mother, y’all can tell)
    Anyway, fly Frontier. They’re AWESOME. Actually, Denver is one of their hubs, so its even easier for you! Nice planes, nice staff and just a good experience…and I HATE flying, so if I don’t hate flying with Frontier, that means they’re incredible.
