I’m feeling absolutely off right now. My husband had a 90 hour work week last week, so I spent every single day working because I pretty much felt guilty NOT working. But I’m fried. And feeling a little less motivated. So my goal today is to snap out of it. Not totally sure how I’m going to accomplish that quite yet, but I will figure it out and get back to you.

I don’t know why the hell I’m even talking about my emotional instability when I could be talking about others. Meaning The Bachelor. The producing team really did their due diligence when it came to making the dates as awful and uncomfortable as ever. PS I’ve never used the words due diligence and I really don’t think I used them correctly here, but it just feels right, so LEAVE ME ALONE! Starting with the first date, taking bridal themed photos. I couldn’t even handle how awful, incredibly uncomfortable, and super weird that date was. And I’m not even talking about the photographer’s romper. That’s a whole different blog post. No, I’m just merely talking about Corinne and her frat house party, girls gone wild ways. Do you think the producers forced him to give her the first rose? Do you think it works like that? It must. You don’t watch a girl take her top off and make you grab her boobs on national television and think, wow, I really want to bring this chick home to my 12 year old sister who I played soccer with in the first episode. She seems so wholesome.

I hope Corinne is on the show for quite a while. ENTERTAIN ME, you outstanding liar! She’s a liar because she said no one has grabbed her boobs like Nick did. Just take that in for a second. She’s the best.

But the second group date took it up a notch when they went to the museum of break-ups. How do they even find these hell holes?! I would honestly rather go to a normal museum filled with stuffed, dead animals then have to step foot in a museum filled with hatred and sorrow towards others. Deep, I know, but come on! Who wants to live out their own break-ups let alone someone else’s!? The best quote of the night, which is really saying something since Liz wrote down her entire awkward encounter with Nick and read it to everyone, was when the whole group walked into a screaming match of 2 actors breaking up with each other and Christen (who was obviously chosen for Luke) says, “I can’t believe a break up is happening HERE!” You can’t believe it, Christen? Are you f*cking high? Because you always seem cracked out. Cracked out in a very positive way, but still cracked out.

Did anyone else notice the implants in the museum? Someone gave back their implants in a break up.  And someone put those implants in a museum. Let that resonate.

I’m glad Liz went home. We get it, you slept with Nick. Now you’re being the weird clinger and making us all feel weird about it. I’m pretty sure the producers cut and pasted words to make it seem like she talked about their encounter 87 times per day, but still, it’s too much. When a guy doesn’t contact you, it’s a sign. HELLO, Facebook was invented for a reason: to stalk others until they agree to go on a date with you. Not doing it on national television for others to mock you. How the hell do you think I met my husband!?

And I literally could care less about Danielle’s date. The only thing interesting that happened on that date is they landed a helicopter on a f*cking yacht!!! Now THAT was entertainment!

Boo. I wish it was Monday again. The Bachelor is literally the only good thing about Mondays at this point.

Chicken Bacon Ranch Casserole (video!)

Ingredients

  • 1 medium spaghetti squash (about 2 1/2 pounds), cut in half
  • 1/2 pound bacon, cubed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 yellow onion, minced
  • 2 garlic cloves, minced
  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup Primal Kitchen Ranch
  • 3 eggs
  • chopped chives, to garnish

Instructions

  1. Preheat the oven to 400 degrees F. Cut the spaghetti squash in half lengthwise. Place the squash cut side down on a baking sheet and bake for 30 to 35 minutes or until the skin gives when you press your finger to it. Remove the squash from the oven and reduce the oven temperature to 350 degrees F. Grease an 8×8 glass baking dish.
  2. While the spaghetti squash cooks, place a large saute pan over medium heat, add bacon, and cook until crispy, about 10 minutes. Remove and set aside. You’ll want to leave behind about 2 tablespoons worth of bacon fat to feel free to remove any excess once bacon has cooked. Add peppers, onion and garlic cloves and cook for about 10 minutes, until onion is translucent.
  3. To the pan with the peppers and onion, add the ground chicken along with the garlic powder, salt, black pepper, and cayenne pepper. Use a wooden spoon to break apart the chicken and cook until no pink remains, about 10 minutes.
  4. Use a fork to scrape out the spaghetti squash strings and place in the greased baking dish along with the chicken mixture, ranch and eggs. Mix to combine then sprinkle the crispy bacon on top.
  5. Place in the oven to bake for 1 hour to 1 hour and 15 minutes or until the center is cooked through and edges have begun to brown. Garnish with chopped chives on top before serving!

      you definitely could! i would just reduce the number of eggs, it wouldn’t need double the eggs. and the time would probably take longer but i can’t say how long exactly

    I was SOOO excited to try this! Hubs and I have fallen off the primal wagon and I’m fighting to get back on, so I thought this would be the perfect recipe to boost my ass back up there. Other than using regular Ranch.

    UNTIL I cut the spaghetti squash in half. I had missed a soft spot and the whole inside was a yucky, slimy brown. GROSS.

    Thankfully I still had half a box of Orecchiette pasta on hand from a craving a few weeks ago so the rest of the ingredients won’t go to waste. I imagine it will still be amazballs.

    This is in the oven right now. I substituted ground turkey as I couldn’t find plain ground chicken. I also added some frozen spinach that I needed to use up and used 1 whole onion. This overflowed my 8×8 dish so I transferred to 9×13. Casseroles are great way to provide leftover meals for the weekdays when I don’t have a lot of time to cook. Made your pizza pie last weekend and it was great.

    Just a friendly tip: be sure to squeeze out the spaghetti squash if it’s too watery! If not, you could have excess water on the bottom of your pan ???? but it’ll still be real tasty! ????

    I have never once left a comment on a blog that I made a recipe they posted, which I know is a dick move, but I have to tell you how much I love this recipe. I have been following you on Instagram and your blog for about 6 ish months and have made a couple of you dishes and loved them all. I was hesitant about this one only because I find that spaghetti squash for me has a sweet flavor which I think runs some recipes. But this one was perfect. I added jalapenos to mine because I had some left over from a different recipe I made this weekend. Thank you for the amazing food and the honesty in your blog. Cant wait to see what you cook up next (pun intended 🙂

    This was amazing! Cooking Paleo, I tend to avoid casseroles (with all the creamy additives and a bunch of other crap we don’t eat). NOT ANYMORE. I literally couldn’t stop eating this (think Miranda from Sex and the City going after the chocolate cake even after she put in in the trash-that kinda crazy). Even now I’m so full but there’s one scoop left and I’m actually CONSIDERING finishing it. I’m SO excited to try more of these casseroles. I subbed in the little pearl onions in place of the peppers (we avoid nightshades, yeah we are those people). Still SOOOO GOOD. So glad I started following you on Insta!
