We were doing so good. Jackson has been doing his business outside like a champ. But this morning, he decided that standing next to the door was good enough. I’m pretty sure he’s been holding that amount of pee in for at least a week. He’s about 13 pounds and now he’s probably 6 pounds. That guy.

I’m real excited. My favorite blogger, How Sweet It Is, finally has her first cookbook for preorder. Let me preface something: she is not a paleo blogger. Not even close. But she has incredibly creative recipes and the best photography ever.  And she’s funny. Funny women are the best. I’m absolutely preordering her book just so I can stare at the pictures.

I’ve thought something was a bit funny at instagram lately. So whenever I post a picture using Against The Grain Gourmet rolls, people get all upset because they have cheese in them. And if my instagram name is paleomg, I should post only strict paleo foods. BUT when I post any sort of dessert like chocolate or my cupcakes or anything sweets related, NO ONE ever complains. I think it’s the strangest thing.

Just to spite those people, I put goat cheese on this recipe. What an a**hole I am.

PS I’m typing this blog post with one hand because Jackson refuses to calm the sh*t down. So I’m shoving his bone in his mouth to try to keep him calm. It ain’t workin’.

On a complete different subject, I’m dreaming about a vacation. I have some weddings this summer and I’ll probably spend a lot of time on the lake, but I need a beach vacation come fall. I’ve been quite intrigued with the thought of going to the Florida Keys and Key West. I’ve heard that it’s pretty expensive, but it looks like one of the most gorgeous places. Has anyone been there? I want to know more about it, but from people instead of just the internet. Tell me things. Did you love it? What was your favorite place to stay? What did you do there? Are you a million?

Chicken Enchilada Bake

Ingredients

Scale
  • coconut oil, for greasing baking dish
  • 1 pound cooked, shredded chicken (I used a rotisserie chicken)
  • 1 (14 ounce) can El Pato enchilada sauce
  • 1 (6 ounce) can of diced green chiles
  • 1 orange bell pepper, seeded and diced (or any color you like)
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • salt and pepper, to taste
  • 3 eggs, whisked
  • cilantro, to garnish
  • goat cheese, to garnish (optional)

Instructions

  1. Preheat oven to 350 degrees. Grease an 8×8 glass baking dish.
  2. In a large bowl, add shredded chicken, enchilada sauce, green chiles, bell pepper, onion, garlic, chili powder, oregano, and salt and pepper. (feel free to be generous with the salt) and mix well.
  3. Then add eggs and mix well to incorporate.
  4. Pour mixture into baking dish.
  5. Place in oven and bake for 1 hour and 15 minutes. Check at 1 hour to see if eggs have completely cooked through and cook extra 15 minutes, if needed.
  6. Let rest for 5 minutes then garnish with goat cheese (optional) and cilantro.

    On another note, do you think you could do a post on your favorite workout crops/tights? I’ve been searching for the perfect pair–wide waistband, nice fabric, not sheer–but it’s difficult! Thanks a bunch!

          I just went and looked at this website and loved it. I have a couple pairs of Lulu’s, but they’re just so expensive! And it’s a pain to wash workout clothes over and over. I just made my first order! I’m excited for it to come in!

      Try lululemon “In the Flow II Crop.” They have wide waist bands, aren’t sheer and the material is great. They are snugger than wunder unders, but due to the wide waist band there is no worry about the dreaded muffin top.

    looks great!

    I used to be stationed in Key West. It’s not as nice/fancy as the pictures make it to be. There are no waves, the water isn’t very blue. It is very run down. It’s a tourist trap and your right, its expensive. Not worth the price. But hey, if you really want to go, go for it! I would suggest staying in a B&B to get the real Key West feel, not one of the hotels. Have fun if you do decide to go!

      I 100% agree with Megan. When they say the FL Keys really the only one worth going to is Key West there is nothing in any of the other cities. It is also run down, expensive and there are no good beaches, no sand, the beaches are rocks. You could pick somewhere so much better. I have been there twice once by my choice and once for a wedding and both times I said I would never go back.

      Lots of valid comments about Key West but we love it there and it’s a great getaway from the harsh New England weather. We stay at the same place when we go: The Orchid Key Inn and it’s truly a slice of heaven. Juli – I love your site and every recipe I’ve tried has been great.     Key West is the best! Pricey once I got home and I reviewed my bank account and saw ALL the bar tabs, I’d try to rent a house and bring more alcohol rather than pay Duval St prices. Brunch at Blue Heaven, Bloodies at the Green Parrot – scooters, hula hoops, roosters and hemingway cats. Go, go right now!

    We love Key West! There’s some great history there and if you stay in the older section you can walk everywhere. We’ve stayed at the Key Lime Inn and Orchid Key Inn (both awesome, both expensive, as most Key West hotels are). We did a day with Danger Charters (snorkeling, kayaking, sailing), a bike tour with Key Lime Bike Tours, a sunset cruise with Sebago, and went stand up paddleboarding with SUP Key West. Good food, drinks everywhere. Very fun town! If you want to lay on the beach though, it’s not the best choice. Parts are overly touristy (cruise ships coming in regularly), but if you do some research there are great options there.
