We were doing so good. Jackson has been doing his business outside like a champ. But this morning, he decided that standing next to the door was good enough. I’m pretty sure he’s been holding that amount of pee in for at least a week. He’s about 13 pounds and now he’s probably 6 pounds. That guy.

I’m real excited. My favorite blogger, How Sweet It Is, finally has her first cookbook for preorder. Let me preface something: she is not a paleo blogger. Not even close. But she has incredibly creative recipes and the best photography ever.  And she’s funny. Funny women are the best. I’m absolutely preordering her book just so I can stare at the pictures.

I’ve thought something was a bit funny at instagram lately. So whenever I post a picture using Against The Grain Gourmet rolls, people get all upset because they have cheese in them. And if my instagram name is paleomg, I should post only strict paleo foods. BUT when I post any sort of dessert like chocolate or my cupcakes or anything sweets related, NO ONE ever complains. I think it’s the strangest thing.

Just to spite those people, I put goat cheese on this recipe. What an a**hole I am.

PS I’m typing this blog post with one hand because Jackson refuses to calm the sh*t down. So I’m shoving his bone in his mouth to try to keep him calm. It ain’t workin’.

On a complete different subject, I’m dreaming about a vacation. I have some weddings this summer and I’ll probably spend a lot of time on the lake, but I need a beach vacation come fall. I’ve been quite intrigued with the thought of going to the Florida Keys and Key West. I’ve heard that it’s pretty expensive, but it looks like one of the most gorgeous places. Has anyone been there? I want to know more about it, but from people instead of just the internet. Tell me things. Did you love it? What was your favorite place to stay? What did you do there? Are you a million?

Chicken Enchilada Bake

Ingredients

Scale
  • coconut oil, for greasing baking dish
  • 1 pound cooked, shredded chicken (I used a rotisserie chicken)
  • 1 (14 ounce) can El Pato enchilada sauce
  • 1 (6 ounce) can of diced green chiles
  • 1 orange bell pepper, seeded and diced (or any color you like)
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • salt and pepper, to taste
  • 3 eggs, whisked
  • cilantro, to garnish
  • goat cheese, to garnish (optional)

Instructions

  1. Preheat oven to 350 degrees. Grease an 8×8 glass baking dish.
  2. In a large bowl, add shredded chicken, enchilada sauce, green chiles, bell pepper, onion, garlic, chili powder, oregano, and salt and pepper. (feel free to be generous with the salt) and mix well.
  3. Then add eggs and mix well to incorporate.
  4. Pour mixture into baking dish.
  5. Place in oven and bake for 1 hour and 15 minutes. Check at 1 hour to see if eggs have completely cooked through and cook extra 15 minutes, if needed.
  6. Let rest for 5 minutes then garnish with goat cheese (optional) and cilantro.

    I think I only saw one comment about the Dry Tortugas. That was a trip highlight for my family. It is only accessible by boat and is home to Fort Jefferson. How cool is it to have a fort in the middle of the ocean like that? It was also used as a prison and Dr. Mudd (the one who assisted John Wilkes Booth) was sentenced there. Fun and interesting day trip. Otherwise I just love Key West for the food–El Maison de Pepe is our favorite (Cuban) and the ropa vieja–literally dirty clothes is the best and you can totally paleoize it by removing the peas–hmmm maybe a future recipe????

    Go to Key West! It’s amazing!! We go every year. The food is a highlight for us. Seven Fish, The Flaming Bouy, El Siboney, Azur, Pepe’s, Sarabeth’s and B.O’s fish market are all really good! We just got back a month agog and we already miss it.

    I made this last week and it was delicious. I chose a night where heating up my oven would make the house miserable.It was pretty quick and easy to toss together. Hubby liked it too. Will definitely be a do again recipe in our house.

    Ok… just back from Key West… it was GORGEOUS!

    Here are my opinions on the things we did/were told to do:
    1. eat at “Better than Sex”… it’s a dessert only restaurant. Now, while the experience was fun (restaurant is dark/candlelit, they have drinks dipped in chocolate) in my opinion the dessert wasn’t all that, I’ve had better… and they seemed to be pre-plated, etc. We ordered and less than 2mins later food was in front of us. Just made me feel like they had a costco supply of desserts in the back vs a real pastry chef. It was also expensive – we dropped $60 and were in and out in under 20mins. My suggestion… pass up this place, or maybe just go for a chocolate dipped cocktail
    2. Le Croissants de France – yummy pastries! Bfast sandwiches, not so much. But if you go next door to the Bistro (I believe they’re co-owned) try the toffee banana pancakes! They don’t need syrup – they are fantastic!
    3. Southernmost Bar & Grill (I think that’s the name of it – it’s at the southernmost beach)… this was by far our favorite spot! Great view, right on the water with a small beach… and best drink I had all week was called Horny Parrot… try it
    4. Garden of Eden – lmao… this is a clothing optional bar on a rooftop… we went for 5mins, had a good laugh and left. PS. don’t sit on anything there… there really are naked people and they have no qualms about sitting on a bench or stool in their bare tushies.
    5. Cuban Coffee Queen – great cuban coffee. Other people we were there with also said they had the BEST cuban sandwiches… we didn’t get a chance to try those but I believe it. However, be prepared to wait… it’s a small shack and I waited 20mins just for a coffee. Worth it though! Just don’t wait til you’re starved to get in line 🙂
    6. Butterfly Museum… if you have a cloudy or rainy day… stop in here. There’s no way you’ll leave anything but happy and grinning from ear to ear. My husband didn’t want to go here… but once we were inside, I practically had to drag him out. Just a cool experience
    Well I could go on and on… but I’ll spare you! Enjoy it!
