I hate falling up the stairs. It’s embarrassing.

I went to Omaha, Nebraska over the weekend. It’s humid there. I was sweating more than usual. Which is a lot. Then it was really windy. Which my hair didn’t love. Other than that, Nebraska is nice. I can only say that because it was nice outside and wasn’t snowing. But everyone I talked to there told me to never move away from Colorado. Probably because Colorado is the greatest.

Anywho, I went to Omaha for the boyfriend’s brother’s high school graduation. So great. He’s going to play football in college. How exciting. I might even go to a game or two. Or three. That will be the second football game I’ve ever gone to. I wasn’t one to go to college football games in high school or college. I never knew anyone who was playing, so why would I care? Now I’ll know someone. I may even scream. I feel awkward screaming during sports.

Back to graduations. I remember graduating high school. To me, it was a wonderful day. I HATED high school. Pretty much hated 96.5% of it, so I was stoked when I knew I didn’t have to see anyone from high school anymore. Or step foot in that high school again. Or be in my hometown much anymore. It was a new chapter in life. A time to become a person I wanted to be. College is just so much more fun. You get to do random stuff. And bad stuff. And stupid stuff. All stuff that you can mostly get away with because you’re in college. It’s awesome.

And you know what else I found out in Nebraska. There are cars out there that have air conditioning FOR YOU BUTT. In the seat!! It’s true. My boyfriend’s sister had them in her car. I thought my new car was real great because it had heated seats, but AIR CONDITIONED SEATS?!?! Mind.Blown.

I want to see the movie ‘Now You See Me’. I love magic.

Chocolate Strawberry Donuts

Ingredients

Scale

For the topping

  • 1/2 cup dark chocolate chips or Enjoy Life Chocolate Chips, melted
  • 1 tablespoon coconut oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Sift together almond flour, unsweetened cocoa powder, coconut flour, baking soda, and salt into a large bowl.
  3. Then add the honey, coconut oil, vanilla, and eggs. Mix well.
  4. Then fold in diced strawberries and chocolate chips.
  5. Grease your donut pan with some coconut oil and pour the donut batter into the pan. This made 6 donuts from the batter.
  6. Place in the oven and bake for 20-25 minutes.
  7. Let cool. While the donuts cool, mix together coconut oil and chocolate then use spoon or knife to scoop out some of the chocolate and pour it back and fourth to create cute little lines.
  8. Eat up buttercup.

    love your recipes! I’m new to paleo and crossfit– love crossfit but paleo is a bit harder to stay on track, as I was raised on dairy and grains. lots of great food ideas and variety– thanks!

    These are amazing. I was making with a 4 year old so we dipped in chocolate and finished with sprinkles. Although I imagine they aren’t paleo. Also we made 12 out of the mixture but maybe my pan is smaller. Thanks so much for the recipe!!

    How many carbs? That would be useful on your recipes cause I am going on this low carb diet where I have to limit my carbs to 30 grams a day for 9 days.

    These are great and really hit the spot. I’ve made them twice. I dip the tops of mine in the chocolate and sprinkle the tops with nuts or sprinkles. I always use raspberries instead of strawberries (a small package of raspberries is the perfect amount.) It makes 12 large donuts in my pans. My daughter also loves them and since it’s just the two of us when they have cooled completely we each get one and then put the rest on a cookie sheet and freeze them. Once frozen I wrap them individually in press n’ seal and put them in a big freezer bag. When you are ready to eat one unwrap it and heat it up for about 20 seconds or less and they taste as good as when they were first made.

    Amazing!!! I made these yesterday morning and had to share with the family. Everyone loved them. I just went on a 5 mile run and came back while planning on eating only one with my green smoothie shake but just had to eat two. Oink Oink….

    So to be honest I usually browse all the recipes on here drooling but never indulge because I am intimidated by most of them. I am a hot mess in the kitchen. However that being said I love this recipe and nailed it first try!
    I have tried other recipes for ‘paleo’ donuts that looked easier only to fail tremendously the first try and having to tweak them the second time to get them to come out.
    Not only did I not tweak this recipe at all (and blow it awaythe first time) but these are delicious! Which is good and bad because I am left feeling proud but also like a lioness in heat protecting her kill while I devour them.

    5 stars!
