Do you know how hard it is to not eat the bacon while trying to make this recipe? Real stupid hard. I had to make extra bacon.
Sorry about the picture suckiness. I have kind of sucked at photography lately. That’s probably because, well, I suck at photography. I need to hire someone to do my food photography for me. Someone who doesn’t like making money for their contribution to my website. I’d pay them in food though. And hang out with them. I’m excited for this imaginary person. I think we could have real good time together.
I ate this guac with chili lime grilled sweet potatoes…but you’re gonna have to wait until tomorrow to see that recipe! Jokes on you!
Guess what? I go to Lake Powell soon! Yes I do! It’s a bit worrisome since I have the competition the next weekend after I get back, but I’m trying to press on. I’m not sure what workouts I’ll do there, but I have a feeling it will look a lot like this:
- burpees
- air squats
- burpees
- push ups
- burpees
- burpees
- burpees
In some weird way, I really like burpees. I’m not any good at them, but I actually kind of like the pain they cause. It’s crazy how such a simple movement can inflict so much pain onto the body. Bodies are weird. Burpees are weirder.
Wanna see how good I looked on Saturday night? Reaaaaal good. And this was before I was intoxicated. This is the exact reason I didn’t get hit on. #fail. I love hashtags.
I have almost stopped craving sweets completely. It’s pretty rad. Except now I kind of want ice cream. Ah crap.
Grilled Bacon Guacamole
- Prep Time: 20 mins
- Cook Time: 10 mins
- Total Time: 30 minutes
- Yield: 3-6 1x
Ingredients
- 3 large avocados, halved lengthwise, pits removed
- 1 (14oz) can diced tomatoes, excess liquid removed
- 2 tablespoons olive oil
- 6–8 strips bacon, cooked and diced
- 1/3 jalapenos, finely chopped
- 2 garlic cloves, minced
- 1/4 yellow onion, diced
- 1 tablespoon garlic powder
- 1/4 teaspoon cayenne pepper
- handful of cilantro, diced
- juice of 2 limes
- salt and pepper, to taste
Instructions
- Heat up your grill!
- Cut avocados in half, remove pits, place on a plate and spritz (yes I said spritz) with 1/2 a lime.
- Then use a brush to “glaze” the inside of the avocados with olive oil then sprinkle with salt.
- Place avocados face down on the top rack of your grill and cook for 6-8 minutes or until your avocados have grill marks on them.
- While avocados cook, cook your bacon, let cool and dice up with a knife.
- Dice up your jalapenos, yellow, and garlic cloves and place in a large bowl.
- Once your avocados are done cooking, let cool, then scoop the ingredients into your bowl.
- Use a fork to mash up your guacamole, then add your bacon, tomatoes, garlic powder, cayenne pepper, your remaining lime juice, cilantro, and salt and pepper. Mix well.
- Serve with chips of your choice or eat with a big honk of meat!

Juli, weird revelation this past week. About cutting out nuts, I though maybe you were nuts, but turns about you are right. I was home potty training my son for the past 5 days, didn’t have time to get “snacky” like I do at work and didn’t eat any nuts. Just meat and veggies, holy hell I feel amazing. Bloat be gone!!! Thank you so much for putting the nut theory out there!! Now I need to go back to work and change my snack drawer!!! Any ideas for a person that sits and thinks about food when she gets bored? Jerky? Eggs? I’m not very creative b/c I have been snacking on nuts mostly.
Thanks again!
I had bacon guacamole at my favorite mexican joint this weekend. AMAZEballs!!!! Honestly, I felt like a crack addict but with bacon. Nobody in their right mind can say no to bacon.
LOL, that picture of you in the bar…and I’m laughing with you because I look like that in most “candid” photos as well. Why can’t my sitting around doing nothing face be a beautiful smile? 🙂
This. Exactly. I can’t get a good candid photo of myself to save my life.
your boobs are rockin gurl. im takin my les crush to an extreme with this comment 😐
I just started wanting ice cream randomly too…i think it’s weird when i want ice cream. I haven’t thought about it in a couple month and all of a sudden it’s all i want. i found a recipe for paleo grilled peach ice cream made with canned coconut milk. Maybe you can make a crazy concoction of ice cream made from sweet potato puree/cinnamon/nutmeg/coconut milk??
LIKE!
Is that Justin Kuchta in the picture?
Yes, yes it is
Hahha that’s awesome–I went to High School with him.
I can’t stop laughing!!!! So sorry but that photo is hilarious. I have a theory on your dating getting hit on issue….you are always hanging out with hot guys who could beat the crap out of any guy that approached you, I’m thinking they are scared to get beat up…just a thought:)
So trying this while camping this weekend.
Just got a song and dance from my 8yo when I showed her this recipe!!! Patting the tummy and all!!!
You’ve done it. You’ve done it! Coupled my two favorite things in the whole world..Guac and Bacon into one. HOORAY! If I wasn’t at work, and up in Broomfield…I’d kiss ya! Can’t wait to make this…
And, I agree with Kristin W., Juli…my gut is that maybe guys are intimated by the amount of dudes, ripped dudes, you hang out with. Keep your head up though lady, you are young..and eventually your prince will arrive!
Sweetheart……I think you are so dang cute! I would seriously consider cutting off an arm to have your thighs, butt and well, everything else!! I am a 53 yr. old 260 lb. woman who is 3 weeks into Paleo and Crossfit. It’s the hardest thing I’ve ever done but I believe the 2nd half of my life will be so much better now because of it. I am so happy to have found sites like yours like inspire and encourage me. Don’t ever forget that on the days you might feel down on yourself – remember you are an inspiration to someone!
Way to go Sharon ! Keep up the good work !
