Wait. Now I’m watching ‘The Wedding Planner’. Ugh, gag me.

Actually, I know why. Because my face is in a lot of pain. Acne is straight up painful. It legitimately hurts. And trying to get rid of it hurts even more. I went to see the woman who works on my face and she definitely had her work cut out for her. So frustrating. I eat well, I work hard, but my face is still ridden with extremely unattractive bumps. Dumb. So going out on a Saturday night with my face looking like someone had thrown darts at it was out of the question. Plus going out sucks. My couch is incredibly comfortable. My blanket is even more comfortable. AND I own fuzzy socks. Boom.

Wanna know a secret that’s not really a secret now because of the world of Facebook?! My birthday is coming up. Yes, yes it is. And yes, I know I can remove my birthday from my Facebook, but who wants to do that when a ton of random people you never talk to you tell you happy birthday? That sh*t feels good. Don’t act like you don’t love it. But anyways, I’ve decided for my birthday, I’m going to spend money I don’t have on a new camera. I’m going to do it. Then maybe someday, if I have more money that doesn’t really exist, I can put together a cookbook. With good pictures. That make your stomach growl. And sing joyful songs.

Like this recipe. This bread was delicious. Straight up wonderful. ESPECIALLY with the walnuts on top. My friend Zanna had the idea of making it into french toast which is GENIUS. But I didn’t try it…because I ate all of it….pretty quickly. Laura had like 4 bites too so it evens it all out, right? Thought so.

Maple Walnut Sweet Potato Loaf

Ingredients

Scale

For the bread

  • 1 medium sweet potato (or yam) ~ equivalent to 1 cup, skin removed after baking
  • 1 cup roasted, unsalted cashews
  • 6 medjool dates, pitted
  • 3 eggs, whisked
  • 2 tablespoons raw honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • pinch of salt

For the topping

  • 1.5 cup walnuts, chopped
  • 1/4 cup raw honey
  • 2 teaspoons cinnamon
  • 1 teaspoon maple extract
  • pinch of salt
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 425 degrees.
  2. Poke holes in your sweet potato and bake for 30-40 minutes or until soft and completely cooked through.*
  3. While your sweet potato cooks, add your dates to a food processor and pulse to combine. Then add your cashews and let run until you have paste with the cashews completely broken down and combine with the dates.
  4. Once your sweet potato is cooked, reduce heat of oven to 350 degrees.
  5. Add cashew and date mixture to a bowl, along with your baked sweet potato with the skin removed, eggs and all other bread ingredients. Mix well.
  6. Grease two loaf pans (I used 9 x 5 sized) and add your sweet potato mixture equally to both pans.
  7. Bake for 15-18 minutes then let cool.
  8. While the bread is baking, place a small skillet over medium heat and add your coconut oil then chopped walnuts.
  9. Let the walnuts begin to toast for a minute or two, then add your honey, cinnamon, maple extract, and pinch of salt.
  10. Mix to combine and let cook for about 1-2 minutes more.
  11. Add your sticky nut mixture to the top of your sweet potato breads.
  12. Let cool completely (the nut mixture will harden a bit) then cut and serve!

Notes

If you want that process to be quicker, add your holey sweet potato to the microwave and cook on high for 3-4 minutes or until soft.

    Ugh! Acne sucks. Mine got *better* with paleo, but still would get random horrible breakouts. Then, a friend told me about this:

    This is the ONLY thing that has worked for me [had been to a dermatologist in the past, etc]. I swear by it. And you can do it with all over-the-counter stuff. I don’t use any of his products, but the “regimen” is awesome.

        No problem! Should you choose to try it, be sure to read his FAQ and “What to Expect” section – it really helped me stick with it when I was getting discouraged that it wasn’t working. Just had to get through an annoying “adjustment” phase. My experience when first starting it pretty much mirrored what he outlines on the “what to expect” section.

      The regimen has worked wonders for me as well! I’ve been doing it for about 8 years with OTC products. I do love his AHA+ stuff though. I use it on my face/chest/back every night before bed.

        I’ve actually wanted to try that! I use the Neutrogena equivalent now, but it’s a lot more pricey than his. When my Neut. one runs out one of these days I think I’m gonna go ahead and try his.

    Yum this recipe looks amazing! I’ve been making the transition to a Paleo diet (AKA still having trouble giving up the bread) and your blog has been a great tool.

    Acne is no fun – I’m 25 and I finally got it under control about 3 months ago. I take a low dose of spironolactone (oral) every day as well as Retin-A (topical) twice a day. The spironolactone makes me have to pee a lot but its a small price to pay for clear skin. I tried the regimen (acne.org) and it didn’t work for me, as I don’t have time to wait around for my face to dry in the morning. Plus, I’m super active, so a lot of times I have to wash my face more than twice a day. Good luck with your acne woes – I feel your pain!

    What camera are you thinking of getting? I need a new one, too. My Point and Shoot Cannon isn’t doing the job when it comes to my kids’ sports 🙁 I cannot wait to try this recipe!! YUM!     Grrrrrrr acne! Never had it as a teen, but then I went and growed up. The introduction of kefir into my diet helped clear my hormonal acne (i.e.,it occurs around the jawline in those big cysty bumps). If you don’t want to drink cow’s milk kefir, you should try coconut milk kefir. I’m convinced the probiotics is the way to clearer skin. Also, I started “washing” my skin with coconut oil and/or jojoba oil only. (Google it, sistah!)

        Usually about 6 oz., but I love the stuff so sometimes I drink more. I tried to coconut kefir once, years ago, and I didn’t love it, but that was before I had incorporated so much coconut into my life. I should give it another shot.

        Also, zinc. It’s good for your immune system and it rebalances your testosterone (or something) so it helps with acne.
