Ugh, I hate waking up to find out hackers decided they wanted to take your hard-earned money and spend it on playstation headsets. D*ck move, guys. That’s the most boring stolen purchase I could even think of. Karma is really gonna bite you in the ass…you know that right? Your mom told you about karma? And ending up in a wind tunnel as your hell? Nope, no fire is involved in this hell, just miserable, cold and aggravating wind. Good luck.

Wind has really taken over Colorado the last two days and it has been BITTER. So the other day, I had to get a bunch of fashion photos done since I’m leaving out of town and of course I chose the windiest, coldest day to do them. It was so windy that while I was on the treadmill starting my running workout at Orange Theory, the power went out and almost threw all of us off. Safe. So while I sported multiple dresses and tops PERFECT for spring, I was shivering so hard that I could barely keep my mouth open to smile. On the way home from photos, I was suppose to go to the grocery store for dinner and just said f*ck it because I didn’t want to get out of my car. Seat warmers and steering wheel warmers are truly one of the best inventions in the entire world. Truly. Jackson (my french bulldog) hasn’t even enjoyed a walk in the past 2 days because his mother throws a fit about it and lasts 2 minutes. I hate the wind. And I truly hope the hackers end up in wind hell. God bless.

You guys, let’s move past all this and onto some happy news! I leave tomorrow for Expo West! Expo West is a natural products expo with seriously THOUSANDS of exhibitors. I didn’t really know how big it was until I was talking to my friend Kyra from Kyra’s Bake Shop and she mentioned to wear comfy shoes and that last time she went, she didn’t even get to talk to half the companies that she wrote down. So now I’m slightly nervous and overwhelmed. I’m not a huge fan of crowds or people….so this could be challenging for me. But when my friend Cassy from Fed and Fit invited me last minute, I couldn’t say no. I love new experiences and I hope to get to know some new companies and other bloggers out there! Fingers crossed I don’t have an anxiety attack. I’m packing lots of snacks to keep my blood sugar, along with my tolerance, high. LET’S DO THIS!

And guess what?! I have four trips coming up in the next month! LA, San Diego, Dallas, then Costa Rica! I’m so pumped for all of them! Especially Costa Rica because not only is it Costa Rica, but it’s also our 1 year anniversary! So fun! But with that many trips coming up, I have LOTS of packing to do. So stay tuned on the blog tomorrow because I’m doing a special post about how I pack my carry-on and get the most out of a small bag!

Mocha Latte Smoothie Bowl

Ingredients

Scale

For the smoothie

  • 1 frozen banana
  • 1/2 cup cold brew coffee
  • 1/2 cup almond milk
  • 2 tablespoons unsweetened cocoa powder
  • 12 tablespoons maple syrup (depending on your sweetness preference)
  • 1 tablespoon collagen (see the two brands I use here)
  • 1 tablespoon almond butter
  • 1/2 teaspoon vanilla extract

For topping

  • coffee beans (you totally don’t have to do this but MAN, it’s tasty if you love coffee flavor!)
  • almond butter

Instructions

  1. Preheat oven to 350 degrees. Place coconut flakes and sliced almonds on a baking sheet and into the oven to bake for about 8-10 minutes, until fragrant and golden brown.
  2. Place all ingredients for the smoothie into a blender and blend until smooth.
  3. Pour smoothie into a bowl, top with the toasted coconut flakes and sliced almonds, then sprinkle with a few coffee beans and some almond butter!

Question…my family and I have been paleo for several years now, however I am severely allergic to bananas and am wondering if you have a reccommendation for a substitute when used in recipes like this new one you’ve posted. It really sucks and I find a lot of times I can’t have certain things because of it. Thanks!

      when it comes to this sort of recipe, that’s tough. the only thing i can think of is roasting diced sweet potatoes then freezing them and using that instead of a banana

        This sounds weird, but I’ve seen some people using frozen cauliflower rice in smoothies recently! Haven’t tried it myself though.

      I like to use avocados. It’s a different taste than bananas, but I like them for the lower sugar content, and sometimes I just get tired of tasting banana. OR, if I’m using more carbs, I’ve used baked sweet potatoes or even the ones from cans.

    I once had someone try to hack me by charging over $2800 in men’s suits, shirts, ties, shoes, and socks, which (after I got over being pissed off about it) was pretty funny because at the time I didn’t even have $2.80 left in that account, so it didn’t go through – ha ha!
