So get this. Jackson has been off for a couple months now. Not eating regularly – sometimes not eating for an entire day, not having the best bowel movements of all time, and just sleeping more than normal. Sorry, TMI. Ok, I’m not really sorry, what I’m about to tell you is worse. So I decided to finally take him to the vet and of course, they asked for a poop sample. Cool, whatevs, bag up some poop then double bag it and it will all be fine, right? Wrong. I had to take him to the gym while I worked out before I took him to the vet. So where did I leave the poop? In the trunk of my car. Why didn’t I just put it outside on the ground to be picked up after the gym? Because I’m an idiot. A big, poop-car smelling idiot. My car was real potent after that.

Then the vet called me back the next day to tell me nothing was wrong with his poo. I carried that bag of poo around like it was my purse for nothing. I guess I should be happy that my dog is just being stubborn rather than sick, but all I can think about is the poo purse.

Let’s get away from this topic. I’m trying to think of things to talk about but my mind is completely clouded with my upcoming cookbook. I’m sure you’re getting sick of hearing about it, but I can’t help it. It’s a project I worked my ass off on for a year and it’s FINALLY almost here. It’s literally 12 days away and then I start on book tour. I start in Denver, then head out to Atlanta, Boston, New York, Pittsburgh and Chicago. And that’s just my first leg of the trip before I start the second leg with Vanessa from Clean Eating with a Dirty Mind (since she comes out with her first cookbook soon!) up the west coast and into Texas! Traveling on book tour is challenging because you need normal daily outfits, plus book tour outfits, and workouts outfits. That’s a lot of outfits per one city. I totally have a suitcase that can handle that, but I’m worried about when I take the train from Boston to New York. I’ve never been on a train like that. Does it matter how big your suitcase is? Do I just sound like a dummy? Teach me things.

Should I join Periscope? Diane recently tried to tell me about it, but it just gives me anxiety since my phone can hardly handle all the apps I have. I keep deleting apps on a regular basis and can only have about 5 photos in my photo album at a time, so how could I handle yet another app? Do you guys love it? What would I post? I’m behind the time, update me!!

PS – I LOVE these tacos. Seriously obsessed. One of my favorite Cuban dishes at a restaurant in town is Picadillo, so I thought what better way to eat it than in a taco. And boom, these beautiful tacos were born.

Picadillo Tacos

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 white onion, diced
  • 1/2 green bell pepper, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • salt and pepper, to taste
  • 8 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 2/3 cup beef broth
  • 1 tablespoon white wine vinegar
  • 1/3 cup green olives, halved
  • 1/3 cup raisins (optional*)
  • 6 cassava tortillas
  • roughly chopped cilantro, to garnish
  • lime wedges, to garnish

Instructions

  1. Place a large cast iron skillet over medium heat, add ground beef to brown and break into pieces.
  2. Once almost cooked through, add onion, bell pepper, oregano, cumin, bay leaf and salt and pepper. Mix well to combine and let cook for about 10 minutes.
  3. Then add tomato sauce, tomato paste, broth, vinegar, olives and raisins (if you are using raisins), mix well then cover and cook for 25 minutes, stirring frequently.
  4. To soften must b nutty tortillas, place on hot skillet or on gas range to brown on both sides. Remove bay leaf, then add picadillo to tortillas, squeeze fresh lime juice on top and garnish with fresh cilantro.

Notes

*I left them out because the man in the house isn’t a fan of raisins. But it adds a nice sweet element paired with the salty olives so I would recommend it!

      sadly, it doesn’t look like it. when talking to the main book stores, they only wanted to do signings outside the city, like 2 hours outside 🙁 maybe in the future though because I want to go to Canada SO bad, so I’ll keep trying!

    Hey Juli! My frenchie had similar issues and I just had to add full fat yogurt to his food in the morning. He also has a chicken sensitivity, so I try to avoid any food/treats with added chicken. Also he is hating this Denver heat right now, which is making him sleep more! Stubborn little bubbas!! Good luck with the poo-stank!!

    I live in Boston and have taken the train to NY many times, and I don’t think you will have an issue with a big suitcase! The trains usually aren’t overly crowded and I believe they have baggage storage areas on board. If you get on at South Station I think you also might be able to check bigger bags. I think in theory there’s a 50 lb max rule like airlines, but I’ve never once seen them weigh bags on that train!

    I know I sound like a legit crazy person (and a commercial) but this lady helped me when my cat was sick/being a jerk and the vet couldn’t figure out why. She was featured in 5280 too…if that helps 🙂

    It’s going to be a Taco Thursday for me tonight! Can’t wait to try this recipe!

    BOS to NY or vice versa (too lazy to scroll up to see which way you are going) – will be an Amtrak train. You can either clean & jerk your suitcase to the overhead bin or roll it to the front of the car where there is an abundance of space & seats – if you are nervous about leaving your suitcase unattended. If I had your wardrobe I’d sit tight with the case – kidding, sort of.

    Hi Juli, Not sure what you feed Jackson but I changed my dog to a raw diet and it really changed her life. Not cheap and kind of gross at times but works very well. I also only feed her paleo stuff. Sweet potatoes, eggs, veggies, pretty much I give her anything I eat and those days I find she isn’t eating if I throw a little people food in it with it, the whole dish is gone.

    You should seriously look into the raw food movement. I’ve been feeding my cat and dog raw food for the past year and it has been the best decision EVER! The BARF website has a host of great info.
