Donuts are my happy place. I remember growing up on the swim team during the summer months of my adolescence and my mom would buy all of us a dozen donuts from the grocery store and I would eat probably 8 of them. And then go swim. I couldn’t get enough of donuts. And I had no idea what they were doing to my insides and in turn, showing up on the outside. Alas, that love for gluten dissipated but the love for donuts still burns bright. Luckily, I’ve been able to find some gluten free donuts at home and when traveling. BUT, I like making them and keeping them at home in the freezer so I can have one whenever I want one and I know exactly what is in it!

But enough about donuts! Let’s talk about real life going on over here! Because it’s been extremely busy lately. I feel like I’m home for just a couple days then I have to head back out again. I’m pretty much living out of a suitcase. A suitcase I hate. I need to get a new one ASAP. I just got back from San Francisco on Friday night and I leave to see a friend in Idaho on Thursday morning. But one thing I’ve started to love all because of traveling is PODCASTS!! After starting my own, now I want to listen to them all the time. On my flight, while walking around the airport, while walking my dog, while driving anywhere, or just instead of watching TV. I first started with Serial because EVERYONE recommended it then I moved on to Accused. Then I ended up watching 3 documentaries on Netflix about murder mysteries, like the Amanda Knox documentary. That stuff is so interesting…but so so so so depressing. And now I’m constantly having nightmares. One nightmare I woke up from and felt like I couldn’t move. Like I was actually debilitated from fear in my dream. That’s effed up.

So, obviously, it’s time to move on to new podcasts. Some happy go lucky kind of podcasts. Like Girls Gone Wod. And whatever else you guys recommend. Is there any podcast you’re obsessed with right now!? I need something new for my flight to Idaho! My husband even bought me noise cancelling headphones yesterday…which are crazy by the way! You seriously can’t hear anything around you. How amazing are those going to be when there is a screaming baby on the flight?! AMAZING!

Pumpkin Latte Donuts

  • Yield: 10-12 donuts 1x

Ingredients

For the glaze

Instructions

  1. Preheat mini donut maker.
  2. Place pumpkin, maple syrup, ghee, eggs, cold brew coffee, and vanilla extract in a food processor and puree until smooth. Then add coconut flour, tapioca flour, espresso powder, pumpkin pie spice, baking soda & powder, and salt and puree once more until smooth.
  3. Grease donut maker with coconut oil spray or whatever you have on hand. Use a spoon to scoop mixture into each donut mold. Follow directions for mini donut maker and cook however long directions recommend. Repeat until all batter is gone. This should make about 10-12 mini donuts.
  4. Mix together all ingredients for glaze in a bowl then dip each individual donut into the glaze and place on a wire rack to let the excess glaze drip off. Serve immediately!

  1. I too got hooked on podcasts after I listed to serial. Here are the ones I’m currently subscribed too (besides yours of course!)

    Open for Business: EBay podcast all about business stuff
    Stuff You Should Know: there is a reason that A LOT of people like SYSK…they talk about really random things (polar bears, zika, etc.) and it’s just a fun podcast to listen to
    Science Vs: the host is funny and the concept is that the podcast pits facts/science against beliefs…i.e. is organic food really better for us?
    Surprisingly Awesome: talks about how mundane things (i.e. broccoli) are surprisingly awesome
    Reply All: all about random internet things
    StartUp: the first season is about them starting their startup (which is a podcast company), and the other 2 seasons are a little different but just as good

    Finding good podcasts is sometimes hard, so I’m excited to hear what others recommend!

  2. Mmmmmm….Pumpkin anything right now, especially donuts!!! I only have the silicone baking pan for donuts, so I’m going to give it a whirl in there-and will report back with cooking time and how they turned out 😉

    1. I’m happy to report that they came out beautifully in the oven! I had a 6 hole donut pan and was only able to get 3 donuts out of it…using the left over to make mini muffins (if I had only filled the wells 3/4 full, I probably could have gotten 4 donuts).

      I baked them at 350F for about 20-23 minutes. You will need to cool completely (in the fridge for quickness) before removing & frosting. I did add a little coconut oil to make it creamier/thinner so I could drizzle over the donuts.
      Go make these, STAT!!!

      1. I did the same temp and time but in a metal doughnut pan and on the convection oven setting and they came out great. My husband won’t stop eating them. Says it’s the best thing he’s had in a long time.

  5. You mentioned yesterday about new content for weekly workout post and I think it would be awesome if maybe you talked about how to reach a goal with a certain move. Like what can someone do to build up to being able to do a strict pull up? Even Kip pull-ups or double unders.

  7. I commute 45 minutes both ways, and podcasts are how I survive. On regular rotation I have, Girls Gone WOD, NPR’s Pop Culture Happy Hour, Gretchen Rubin’s Happier Podcast, NPR’s Code Switch, My Dad Wrote a Porno (don’t drive while listening, your laughter will cause you to wreck the car), Young House Love Has a Podcast, Invisibilia, Nerdette, and the Lively Show. And I agree with Natalia, America’s Test Kitchen is also a great one.

  8. I love podcasts and can’t wait to listen to yours now that I just finished listening to Accused! I live about a mile away from where she is buried. Is it creepy that my girlfriends and I were going to go search for her grave on our morning run?

    1. you can find it in the grocery store in the same aisle as the coffee. if you don’t find it there, use Starbucks’ instant coffee, VIA. i highly recommend the Italian Roast for these kinds of recipes. Cafe Bustelo also sells instant coffee, and it’s good too.

  9. I am super into this podcast called “In The Dark” – it is all about the Jacob Wetterling kidnapping. I loved Serial and I love this one too – but I also am from Minnesota so I grew up hearing all about that kidnapping. Spooky but great!!! And the podcast “Guys We F****d” is fun! Light-hearted and slightly inappropriate but very entertaining. I would also recommend downloading Audible – audiobooks. Sooooo great too!!!! Enjoy 🙂

Omg … real quick before Podcast talk … I just started the Amanda Knox documentary last night and made myself turn it off so I could go to bed, of course had a nightmare about it and then put on Friends so I could fall asleep. Holy shit is it good!! Poscasts… besides the usual ones, I have recently gotten into Christy Wright’s Business Boutique and Monday Peach (because sometimes we need help with adult things like running a biz and budgeting your dinero). I also like Fed & Fit (duh) and am always on the lookout for new ones! They were a life saver on the red eye back from Maui last week (babies DO NOT like to be on dark planes at 2am … weird). I am so trying some of the other ones that are mentioned here!! Thanks for the donut recipe … these are going down this weekend!!

  15. You have to listen to the Undisclosed podcast! Like right now! (If you haven’t already). It’s like the follow up to Serial, and even better, in my opinion. It’s Rabia Chaudry (Adnon’s best friend’s older sister who got Sarah to investigate the case which became the Serial podcast), along with two other attorney’s, and they dig deeper into Adnon’s case and uncover SO much more about the evidence, or lack thereof, police misconduct, and everything else that went wrong with that case. Some of the stuff they figure out is even more unbelievable than what Sarah brought to light in Serial. I couldn’t stop listening. Anywhoo, I am also loving YOUR podcast, and can’t wait for more. I don’t know how you do it all, but I’m glad you do. I’m cooking my way through your most recent cookbook and loving everything I’ve tried so far. So thank you for your hard work and being real. Your snaps are the first I watch too. You make me laugh everytime. :). Ok, novel finished.

    I adore the Simply Human podcast with Mark and Rick – they are bloody hilarious and you gotta love a bit of boy humour whilst also learning! Haha! You would love it!

  18. Okay I feel like it’s really crucial to not only recommend the best podcasts I know, but also the best episode. One time, I was going on a cross country road trip and asked facebook for their faves – it was a treasure-trove of podcast goodies. So here you go!

    *Death, Sex & Money – Why You’re not having sex; Cheating Happens; Siblinghood
    *Invisibilia – How to Become Batman (this is incredible)
    *Hooked on Pop -The Weeknd Dance of deception
    *The American Life – Switched at Birth (it is jaw-dropping, one of their all time best); If you don’t have anything nice to say, say it in all caps (a writer confronts an internet troll, so that might be gratifying to hear)
    *The Ted Radio hour is always interesting
    *The Tim Ferris show – best interviews are with Sofia Amuroso, Whitney Cummings, Arnold Schwarzenegger and Tony Robbins and Triple H

    Can’t wait to see what other people recommend. Have fun listening!

So, totally a guilty pleasure but I’m in sales and I also drive an hour to get into my territory every day so I live for podcasts as well as trashy tv when I get home lol.. so Stassi Schroeder from Vanderpump Rules has a podcast that I listen to. Not one I listen to every time, because it’s not always interesting,, but it’s a good guilty pleasure when she has people like Jax (recently!) on. Yours and girls gone wod (when you’re on) are the only other podcasts I listen to but I am trying to branch out!!

  20. So excited you got noise cancelling headphones!!!! They are GAME CHANGERS. Sometimes on flights I just turn them on and listen to nothing. It makes my own little bubble of quiet in a hectic travel day.

    My fav podcast right now is the Run Up. It’s by the New York Times, and examines facets of the presidential campaign. I thought I was over the campaign- but this is really interesting. Like they had a TV critic on last week comparing Trump to Tony Soprano.

  22. If you are looking for a funny podcast, try the dollop. It’s 2 comedians – one tells the other a crazy story. Some are better than others -episode #3 about competitive endurance tickling was one of my faves.

  23. OMG YOU HAVE TO LISTEN to LIME TOWN! It is soooooooooooo creepy! Keep in mind that it is fictional-at first I was like-WHOA IS THIS TRUE?!?
    Its totally not real but its amazing and creepy and so entertaining-its kind of set up like Serial. You will love!

  27. Hi everyone. I tried baking these and it worked fine. 350F for about 18 minutes. I used a full sized muffin tin and half-filled 8 silicone muffin liners. The only change I made to the recipe was using coconut oil instead of ghee. They’re currently cooling… can’t wait.

  28. Since the hubby does not like coffee, I subbed the coffee out for some chocolate extract and the expresso powder for some cocoa powder. They were awesome with just a hint of chocolate. Will be making them again, thanks!!

  29. My son and I made these today. They were delicious.

    I made these in a 12 mini donut pan, at 350 for 10 minutes. I had a little more batter, so we used his mini cupcake maker, also for 10 minutes.

    Interestingly, the donut pan ones has a more delicate texture and the cupcake maker ones were denser. Seems like a pretty flexible recipe!

  30. This will be a good week for commuting to work-new podcasts and some delicious donuts to have with my coffee. The donuts are really good -not too much pumpkin and I don’t really care for almond butter, but it works really well here. I ended up putting it on all the donuts.

    For those that need to bake in an oven, I did a double batch to make 12 and baked for 12 minutes in a preheated oven at 350. Check after 10 minutes.

    We are downsizing and that includes a kitchen, so no cute mini donut maker for me right now.

  31. The mini donut maker is sold out on amazon. They do have the cake pop version. Has anyone tried this recipe in cake pop form?

  32. I made these with the Babycakes Donut Maker but I had a really hard time with the glaze. It was too thick and made a bit of a mess.

    Do you have any suggestions for a thinner glaze that’s easier to work with? I tried adding more honey but it didnt work.

    The cake part was delicious!!

    1. i used a pretty runny almond butter so that could have caused yours to be thicker if you used a thick almond butter. next time, just add a little almond milk or coconut milk to thin it out!

      1. I also had this same problem, and was coming here to see if anyone else did. I kept microwaving it to get it to thin out. Not ideal, but did the trick, though still was not smooth, like the photo. I’ll have to make again to try your milk idea. Also, this made way more than 10-12 donuts. Not complaining, just took longer 🙂
