You know what is hands down the best thing in the world? Ok, picture this. It’s a beautiful 72 degrees in Denver, CO, you are driving to Whole Foods, with the windows down, with some random Top 40 hit on the radio blasting, as you dance like an idiot and sing at the top of your lungs, fully believing you sound JUST like Katy Perry. That is my life summed up in a nutshell. Well, sometimes it’s Beyonce. Ok ok, a lot of the time it’s Beyonce. We’re like the same person. The same.
I think I might drink alcoholic beverages this weekend. Yeah, I just might. I haven’t drank alcohol since December 11th at my gyms Christmas party. That was a sh*t show. I don’t drink very often because then I can’t workout and it ruins my overall body composition, so I stay away. And stick to paleo desserts instead. 100% of the time I would choose cake over alcohol. I have some issues.
Me drinking really isn’t that different from me sober. When alcoholic beverages are consumed, it’s usually in large quantities, so my walking pattern slightly changes. Meaning when I feel like I’m falling, I just step a bit quicker in hopes of not falling. And I turn those steps into dance moves. Really bad dance moves, but they have some kind of legit rhythm to them. I’m gonna dance my ass off in Cali. It’s just plain fact. Sergio’s friends may hate me. Good chance.
Ok so let’s get one thing straight. I honestly believe that pork should ALWAYS be paired with some kind of fruit. Plain and simple. Pork and fruit are perfect for each other. Kind of like me and my imaginary wonderful CrossFit man out there. We are destined to be together, it just doesn’t always happen. Which is shame. Holy crap it’s been a long time since I’ve been on a date. I hope I someday attract the opposite sex.
Holy balls, off track. I got the idea of roasting grapes from the ever amazing How Sweet It Is. She actually has a paleo recipe on her blog, I wonder if she knows. Either way, I’m still in love with her. And envy the food she comes up with. I want to sit on the floor of her kitchen and have her feed me like a puppy dog. Not even joking.
Roasted Grape and Onion Pork Chops
- Prep Time: 5 mins
- Cook Time: 20 mins
- Total Time: 25 minutes
- Yield: 4 1x
Ingredients
- 4 pork chops
- 2 cups red, seedless grapes
- 1 medium red onion, sliced
- 2 tablespoons Gold Label Virgin Coconut Oil – 1 tablespoon melted
- 1 tablespoon crushed rosemary
- salt and pepper, to taste
Instructions
- Preheat you oven to 400 degrees.
- Place your grapes and sliced onions on a baking sheet, drizzle 1 tablespoon of melted coconut oil over the top and mix to coat the onions and grapes.
- Bake for 15-20 minutes of until the grapes burst. Be careful to not burn them. I did. Fail.
- When your grapes are almost done cooking, heat up a large skillet over medium heat and add your remaining tablespoon of coconut oil.
- Season both sides of your pork chops with salt, pepper, and rosemary.
- When pan is hot, add your pork chops and cook on both sides for 5-8 minutes (depending on the thickness of your pork chops) or until completely cooked through.
- There should be no pink inside your pork chop.
- When grapes are done roasting, remove from oven and let cool for a couple minutes.
- Top your pork chops off with grapes and onions then SERVE!
- Delish!

ok I was a skeptic…. roasted grapes sounded weird and not that appetizing to me… especially with salt and pepper. I have to admit that it’s my new favorite thing in the world. i could just make some of the grapes by themselves and eat them as a snack!

Juli I made this last week – I loved it. The grape compote was creative and new and really went well with the pork I thought! I coated the pork chops in coco flour to help get the rosemary to stay put and it made a nice crust to boot. I wrapped two chops in bacon to.
