Being back to reality is hard. Which is silly because I really like my reality. But going back to day-to-day activities seem so tedious when every day last week was started out on the beach with a cocktail in hand. Ew, listen to me. Stop complaining, Juli. You’re the worst.

You know what isn’t the worst? This curry. If you haven’t been on my blog very much, I’ll fill you in on a little tidbit about me: I LOVE curry. Not just kind of or yeahcurryiscool kind of love. No. I want it for my last meal. But the thing is, not all curry reigns the same. Is that how the saying goes? Whatever. There are all sorts of restaurants out there that have curry (many of which are thickened with flour…WTF?!) and some that just aren’t properly flavored. I’ve never been to Thailand so I can’t speak from experience, but I’ve eaten Tom Kha Gai at Departure in Portland and chowed down on duck red curry at Lotus of Siam in Vegas and both absolutely blew me away and just ignited my love for curry even more. Even though I’ve made curry in the past, it just never was exactly what I wanted it to be…until now. This curry has so much flavor, so much depth, and so much absolute perfection. I’m serious, I love this curry so freaking much and wish I could eat it every day. It’s my birthday on Friday and I have dinner planned at a Thai restaurant already. All I’ve asked Brian for months now is to take me to curry for my birthday. But he’s also taking me for gluten free pancakes at Snooze for breakfast. Fudge, I love that man so much! He knows the key to my heart!

I’m about to turn 28 years old this year and I’m pumped about it! 27 was such a great year with being engaged, getting married, releasing my third cookbook and buying our first home! So much cool stuff happened and I don’t want that to end. I asked one of my friends the other day what he would have done if he wouldn’t have had kids right away when he got married. And he said travel. So that’s what we have planned. We want to landscape our backyard (since we still have a whole in the cement after our sewer line fiasco and most of our grass is just dirt now) so we can get a hot tub at some point and enjoy winter more. But then we are ready to travel! First, I think we are going to hit up the Keys. Then Costa Rica since I loved it so much and want my favorite guy to experience it too. Shrimp Thai Green Curry

For the marinade

  • 1 pound shrimp, deveined and peeled
  • juice of 1/2 lime
  • 1/2 teaspoon grated ginger
  • 1 teaspoon red pepper flakes
  • pinch of salt

For the curry

  • 1/2 yellow onion, diced
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 3 tablespoons ghee
  • 2 tablespoons green curry paste
  • 2 (14 ounce) cans full fat coconut milk
  • 2 heaping tablespoons almond butter
  • 2 tablespoons honey
  • 3 teaspoons fish sauce
  • 1 teaspoon grated ginger
  • juice of 2 limes (about 45 tablespoons)
  • 56 lime leaves, rolled between your fingers to release the fragrance
  • 1 lemon grass stalk, cut in half lengthwise
  • 2 red jalapeno peppers, thinly sliced (remove seeds for less spice)
  • 3 large basil leaves, thinly sliced
  • handful of cilantro, roughly chopped
  • 1/3 cup cashews, roughly chopped

Instructions

  1. Place shrimp, lime juice, ginger, red pepper flakes and fresh salt in a bow, mix and set aside.
  2. Slice pepper, onion, and garlic while the shrimp marinates. Place 2 tablespoons of ghee in a large high rimmed pan. Once hot, add all the veggies to the pan and cook for 6-7 minutes, until onion is translucent and peppers are soft. Remove from pan and set aside.
  3. Add 1 more tablespoon of ghee to the pan. Once hot, place shrimp in pan to cook on each side for 1-2 minutes, then remove and set aside. (I did this in 2 batches to make sure the shrimp got a perfect color and crust on it, making sure the temperature of the pan doesn’t drop too much).
  4. Once shrimp has been removed, add green curry paste and whisk around. After about 30 seconds of whisking, add coconut milk, almond butter, honey, fish sauce, ginger, lime juice, kaffir lime leaves and lemongrass. Whisk together to combine. Let simmer for 5 minutes then add the pepper/onion mixture back to the pan along with thinly sliced red jalapeños. Simmer for another 5 minutes. When there are 2 minutes left, add in shrimp to heat through. Once it’s done cooking, add basil, cilantro, and cashews.
  5. Before serving, removing lime leaves and lemon grass!
  6. Garnish with extra cilantro!

    Next time you are in Dallas definitely go to malai kitchen for curry. It is insane. They even make their own coconut milk. Their green curry is the best I’ve ever had but the yellow is awesome too. You just can’t go wrong. Ok, now I’m hungry.

    Florida Keys! One of my favorite places to vacation!! If you want to party all week Key West is the place to be. If you’re looking for more beaches, snorkeling, kayaking… then go elsewhere. I really like the Marathon area. We usually fly into Ft. Lauderdale or Miami and drive down. Helpful tip: DO NOT rent from firefly car rental. It will be way cheaper but any savings will not be worth it by the amount of frustration you deal with having to deal with that company. Last time we were there we took a sea plane to the Dry Tortugas. GO THERE. It’s so amazing. The sea plane was awesome because you didn’t have to spend all day on a boat getting there. Came with a price tag though. Here are some pics if you want to check them out 🙂

    The only curry experience I have was the worst: Cambell’s Go Soup curry… LOL worst mistake of my life. Now I’m so scared to try curry at our actual thai restaurant because I’m scared I’ll hate it… What’s your favorite or what do you recommend for a starter like myself?

    PS Congrats on EVERYTHING. We had a sewer line replacement not 2 years after we bought our first house, so it’s basically a second car payment… not fun, sorry you have to deal with that!

    Ooh, that looks amazing! My husband is a huge curry fan, I am merely an affectionado. But I would love to attempt this recipe this weekend.

    I love to travel! I traveled quite a bit before kids, but never anywhere super exotic. I still want to make it to a palm-tree-white-sand-beach kind of locale one of these days. Bucket list!

    Hey Julie!

    Love your blog, contrats on getting married! I have been to the keys a few times it is def a great place to see if you haven’t been. The keys are a bunch of islands that were connected by bridges and roads during the FDR public works era. FDR was like, hey no one has jobs so let’s build a big ass 180 mile bridge out to Key West! (There is a military base on Key West so it wasn’t completely irrational) You can fly directly to key west but I’d reccomend flying to Miami and renting a car and driving the highway to key west, its gorge, seriously the best views of the ocean (plus the flight to key west is expensive). You can stop at the island keys along the way. Key largo is first (kind of dumpy) and there are a few others along the way. Fun fact about key west is that they are extremely lax about nudity and people sometimes go to bars in the nude. There is no open container law so you can drink everywhere. Also there are chickens everywhere randomly. I’d plan to drive but spend most of your time in Key West.

    My boyfriend and I have a trip planned to Austin for this weekend which I know you have been to a few times and I used your blog to pick good food spots! Our next big trip is to Greece. We are going to Athens, Santorini, and Mykonos. After that I am sure we will pick our next spot so maybe I’ll get some inspiration from you and check out Costa Rica! Have fun.

    G’day mate! (Can you see where this is going??) Here’s a brilliant idea – travel to Australia before you have kids!! Long flight that you don’t want to do with kids so go now and sooo pretty. It’s the best and you can wear togs (bikinis) all day long! Just google image Byron Bay (super healthy, surf and hippie town), try saying no after taking a peek!!

    Hey Juli!

    First, congrats on the wedding! I loved reading your blog about the wedding, my dream is also a destination wedding. Simply put, I just don’t want to mess with planning and paying for all that crap. I just want to go away and have a big ol’ party with the people I love most. I always thought I’d do Mexico (living in Texas, it’s just so close) but maybe I’ll consider some place like Jamaica now 🙂

    Second, love your blog, cookbooks, snapchats etc. That’s pretty much all I have to say about that. You’re the greatest! I am also utterly obsessed with curry, especially green curry – my last meal would be green curry & sour cream enchiladas (weird, yeah). So, I feel ya.

    Last, I LOVE KEY WEST. It is one of my favorite places to visit in the states. I’m not sure if you’ve ever been to New Orleans, but I think of it as a clean & tropical NOLA. Lots of great food & live music. It’s just so much fun and so relaxed. I have driven Key West -> Miami, so through all the keys, however, it was during a hurricane so I can’t really vouch for the other islands. However, my dream is to fly into Miami, rent a convertible and travel through the keys making a few stops (especially after watching Bloodline), ending with a few days in Key West. All you need in Key West is a bicycle (or moped, but let’s be honest – bikes are way cooler) and some flip flops and you’re set. Highly recommend, and when you start planning I can let you know some of my favorite spots 🙂
