It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

Terrible. My husband is not a picky eater, and even him did not want to have more than a bite. They almond butter was overwhelming.
This was my first attempt at baking something Paleo and they were wonderful! I used frozen blueberries that were picked this summer and they turned out as planned. I think I could convince my non-paleo friends and family that these were the regular kind. Batter was yummy too out of the bowl, thanks for a great recipe!
Preggo Craving about to be satisfied! YAY!
Just made these and they didn’t puff up at all 🙁 any suggestions? I didn’t have sea salt so I just used regular table salt. Would that have caused the issue?
no definitely not. did you use the baking soda and baking powder?
These are great muffins and are my go-to recipe for gluten free ones. The eggs and almond give it a protein boost. You can get almond butter at Costo in bulk for much less.
I love these!!! My favorite Paleo snack!! I would like to know how many calories are in each muffin. Thank you!!!
Just made these and they were so great!!! I made 2 more batches right after…
For all of those looking for the calories, I calculated the nutritional facts of the main ingredients (Maranatha Almond Butter, Blueberries, Bob’s Red Mill Almond Flour, 3 Large Eggs, Raw Honey and Shredded Coconut), and if you made 11 muffins, here are the facts for each:
284 Calories
23 Carbs
19 Fat
9 Protein
77 Sodium
17 Sugar
I just made these tonight after a paleo fail with another blueberry muffin recipe and they are amazing!!!
I love how these tasted except i think i stuffed up somewhere. the mixture seemed very fluffy n whippy. So as i had run out of almond flour i added some extra coconut flour. What ever i did dint work. I made double batch as i have visitors coming on the weekend, an i used frozen blueberries as the nearest shop is over an hr away. fist of all i’m guessing it was Fahrenheit not Celsius ??and my mixture was cooking but sunk in the middle. They didnt come out whole muffins at all. the pieces still tasted yummy but ended up as more of a desert rather than a muffin. Can u help me pls im still new to Paleo and desperately want to make things i can eat and sneak into my sons lunch box for school.
yes in Fahrenheit. not sure why it would come out whippy, it shouldn’t be whippy at all
