It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

Hi Juli ! So happy I stumbled on to your website while searching for Paleo muffins. I recently made the switch from gluten free. I made these muffins last night and they were AMAZING !!! I’m impressed with myself for actually making them but more impressed with you and this recipe ! I just added a tablespoon of fresh lemon juice and some lemon zest. Can’t wait to try your other recipes !!
Best muffins ever!! Just recently switched to paleo in the past month, so I bought your book last week and saw these and immediately had to make them!!! Recipes like this totally make the switch over to paleo soooo much easier!
🙂
I do these muffins all the time, but I use strawberries and leave out the coconut (because I’ve never been a fan of blueberries or coconut). I love them! I actually had someone request for me to make them these for their birthday.
Best muffins I ever had, looooooved them. Mine didn’t bump up on top like yours but I did baked them at a lower temperature and I know that can make cakes and cupcakes bake more flat on top. Thank you for sharing.
What a great recipe! Made these several times!
I absolutely love reading your recipes and rants! I HATE to cook and now that I have 3 tiny people I HAVE to feed – it makes cooking a tad bit easier when I read your blog. (Just a tad)
Had a Friday afternoon craving for some blueberry muffins and these hit the spot! Delicious! Mine took a little longer to bake (I’m sure that’s because I tried to go to town with the blueberries…) The flavor was just the right amount of sweet, and the hint of coconut was perfection. I went to take a picture of them, but they seem to have disappeared.
These were delish! I made them with frozen mixed berries so I had to cook them a little longer, but such a great breakfast on the go. I’m going to try making them without as much coconut oil the next time…as in, I ate them all and I’m making them again today. 🙂
I am going to try these, I am looking for the perfect Paleo blueberry muffin, will be back to rate these….regarding an above post , you don’t have to count calories if you eat paleo
These look delicious!! I love muffins!! But I’m wondering about the baking powder. Most of the ones I looked at have corn in the ingredients, and I am allergic to corn. Do you have a good baking powder that doesn’t have any corn, paleo friendly? Or do you make yours? If so, how? Thanks!!
you can make your own baking powder! there are lots of recipes on the internet and in paleo cookbooks!
