It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

Whaaat? These are amazing little devils! I am not a sweet fan so these hit the spot without being overly sweet. Love, Love Love them!!! Thank you!
Mine weren’t as adorable but still yummy!!
Made these for the first time last night, they came out perfect and looked beautiful. With the amount of honey, I thought they would be much sweeter and so glad they weren’t. Since I am not really a blueberry fan, I will make these w/raspberries next time.
I made these for my brother in Afghanistan. Food sucks over there. He will love these. Going to share on my website too.
Mahalo! Jamie
These muffins were amazing, and you are hilarious! I missed muffins… thank you soooooo much.
This has been my favorite Paleo remake of Blueberry Muffins! I also added a bit of vanilla to mine! MMMMmmmm. Love em!
Do you have the nutritional facts on these?
no ma’am. i don’t ever look at that kind of stuff.
There’s a few websites that will help you calculate the calories… I usually use http://www.myfitnesspal.com/recipe/calculator However…now that I’ve started Paleo, I REALLY don’t want to know the nutritional info. As long as it contains ‘good’ ingredients, that’s enough for me. These might make me sad knowing the calorie/fat content 🙂
I just made these and am in LOVE with them! My first ‘dessert’ since going Paleo a month ago. I’ve been desperately craving something sweet and these hit the spot! I got 12 fairly big muffins out of the recipe, and used 1 cup blueberries instead of 1/2 a cup b/c it just didn’t seem like enough. Perfect!
Juli,
YUM! I just recently found this website beacsue I was looking for a Paleo meal plan. Let me just tell you I’ve cooked more in the past few weeks than I think I have my whole life. NOT KIDDING. Your recipes are great and your blog is very entertaining. I’m so excited that I can eat Paleo and enjoy it! I’ve been blabbing about this site to all my friends too. You’re going to be a star girl. You have “IT”, not that I’m a talent agent, but you do.
Just tried baking these muffins yesterday, and they are glorious. This is my first attempt at paleo baking (I was never big on baked goods even before paleo), and these are wonderful. I used coconut flour instead of shredded coconut (because I didn’t have any shredded), and it was just fine.
