A woman on instagram recently asked if I knew that there were other places to travel to other than just the US, Mexico and the Caribbean. Obviously I was a complete sarcastic ass when I answered her. Yes, I do know that there are other places to travel to. BUT when you can get to Cabo on a direct flight from Colorado in only 2 hours and 45 minutes, it’s a pretty easy vacation to come up with last minute. And that’s exactly what my husband and I did when we needed a quick weekend getaway with each other. I travel a good amount, but I don’t often travel with him. And many of the trips I do go on with him are for work, not for full on relaxing. And that’s what we needed. We needed time alone, with needed to turn off our phones, and we needed to truly relax. And since it’s takes about 24 hours to get to New Zealand, we chose Cabo instead.
We’ve been to Cabo once before and we LOVED it. We rented a big house with our family, we went whale watching, and we soaked up the sunshine on NYE instead of the freezing cold in Denver. So this time around we decided to stay at a hotel and I chose the Resort at Pedregal since it’s a stunning resort with great reviews and it’s in walking distance to the marina. Plus the food is phenomenal! Aaaaand they serve you some of the most delicious welcome margaritas when you arrive. That’s a major plus in my book. We had the Ocean View Deluxe Terrace room right at the corner of the resort and every morning we would wake up to the sound of crashing waves and stingrays leaping out of the water. It’s not whale mating season at the moment so we sadly didn’t see any, but I know other people who have stayed at this resort who were lucky enough to watch whales from their rooms. So cool. Even without the whales, we adored our room and terrace. We would get coffee every morning and sit out on the terrace and just listen to the ocean.

When you walk into the Resort at Pedregal, you’re welcomed by an incredibly friendly and attentive staff. Since this hotel is not an all-inclusive hotel, it feels like no detail goes unseen. They want you to feel pampered and helped, without being overbearing like many places in Mexico can feel. The resort has beautiful pool areas, large restaurants, and one of the best hotel gyms I’ve ever been to. We spent most of our time by the pool, reading and drinking. And since their margaritas are some of the best out there, we had a realllll good time. On our first day there, we arrived at 1:30pm, drank our welcome margaritas, ate sushi poolside, then had a few cucumber jalapeño margaritas before turning it in at 5:30pm and waking up at 9pm remembering that we missed our dinner reservation. And then we ordered room service instead. Some people like to do all kinds of different things on vacation…this vacation for me was all about eating, drinking, and wearing a robe as much as possible while eating room service.

And if I’m good at anything in this world, it’s eating. And we did a lot of it while at Resort at Pedregal. Something I loved about this resort is that someone contacted me before we even arrived and asked if we had any dietary restrictions. I mentioned that I was gluten-free and every server was aware of that while we were there. And the resort had so many gluten-free options to choose from. Not only did they have gluten-free bread at the start of each meal, but they had gluten-free baked goods for breakfast, and about a million different gluten-free options for every meal we had. We had the most comforting dish of soft shell crab and risotto at Don Manuel’s. And every morning I would have a gluten-free baked good at the same restaurant for breakfast. It was so indulgent and so damn good!
And breakfast was one of my favorite parts of Resort at Pedregal. I usually hate breakfast buffets because they normally suck. But not here. This resort has a HUGE breakfast buffet filled with fresh fruit, veggies, tamales, yogurt bar, baked goods, smoothie bar, meat and cheese bar, and then you can order eggs to your preference or order whatever the special was that day. Plus they have all sorts of breakfast cocktails to choose from. I ordered the carrot margarita quite a few times and it was absolute perfection! I’m seriously still dreaming of this breakfast buffet. It was simply the best!
And I already mentioned the gym, but it should definitely be mentioned again because it’s HUGE. Not only do they have all sorts of normal cardio, weights and machines, but they also have a separate area with air dyne bikes, rowers, TRX, boxing area, barbells, different fitness classes and the best of all…curve Woodway treadmills. If you haven’t tried out a treadmill like this yet, try to find one near you and be prepared to fall in love with it. This type of treadmill is powered by you – the faster you run, the faster is goes. And because of the shape, it puts you in a great position for a comfortable run while putting less pressure on your joints. It makes you feel like a good runner, even if you aren’t (like me!). I loved it so much that I mentioned to my husband about getting one in our house. The idea didn’t land.
My husband and I haven’t been on a ton of vacations just the two of us, but when we have, we’ve quickly figured out that we vacation differently. I prefer to do absolutely nothing. I want to eat, drink, swim, sleep, and that’s about it. Him, on the other hand, well he likes to stay busy and active. Which is why Costa Rica was one of our favorite vacations to date because we could do both at the same time. But since we would be mostly at the hotel in Cabo since the beaches aren’t great for swimming, we decided that one day I would choose what we did, then the other he would! And it worked out great! For my day, we worked out, we went to the pool, I read a book, we ate lunch, we went back to the pool, I napped, we ate, and we were in bed by 9pm. My dream vacation. The next day, we did what he wanted to do. And he wanted to go to the marina to watch the boats come in and bar hop. So that’s what we did! He put up with a pool day and I put up with a bar day. We grabbed margaritas at multiple spots then ended up getting the most delicious fish ceviche at The Oyster Bar. It was seriously fantastic!
Then we headed back to our hotel for one last dinner before we left the next day! El Farallon is a well-known restaurant in Cabo that many people get a reservation at even if they aren’t staying at Resort at Pedregal. It’s at the end of the property, with the restaurant built into the rocks for an amazing sunset experience and beautiful location to eat dinner at. And they also have a champagne terrace to enjoy before your meals. At this restaurant, you’ll not only enjoy a great experience, but you’ll enjoy extremely fresh plates during your four course meal. Come hungry and reserve a table early, so you don’t have to eat at 9pm after a day of drinking, like we did. Not a great idea.

Even though we didn’t spend a ton of time at this resort, we enjoyed every single second of it. It was exactly what we needed in a quick weekend away. And I would definitely go back! But next time we stay there, I want to spend some time at the spa, take some of the classes they offer like cooking classes or cocktail making classes, and take a day yacht trip where we can go fishing and the resort will then cook your fish for you!! How cool is that?!

If you’re looking to celebrate something special or just indulge in an amazing trip, I loved Resort at Pedregal and would highly recommend it! I asked PaleOMG readers where we should stay when we were planning a trip and there were so many different resorts to choose from, but I’m so glad we landed on this one! no macros or calories for me. i counted calories in high school but have never counted macros. i just try to eat clean as much as possible and not eat until i’m overly full. and thanks for the love, brittney!

Your trip looks awesome! Question – does this resort have a beach? My BF does not do pools (he dislikes the chlorine) and the idea resort needs to have a good beach 🙂
this resort isn’t great for beach. on this side of cabo, the water and riptide is super rough so no one really goes in the water or hangs out on the beach
We stayed at this resort last summer and it is absolutely amazing!! I’m so glad you mentioned the gym because my husband and I were there for a few days and we only discovered the second room (with mostly Crossfit stuff) a few days into our trip and were so surprised to see everything we needed to wod.

I agree that Costa Rica offers different options for travelers. My fiancé love Costa Rica as we can relax if we want or do crazy adventures if needed.
I do love Cabo for its accessibility and great resorts. I’ll keep in mind Pedregal but we like the pool/beach options.

it’s definitely more geared towards adults BUT they have a more kid-friendly side. i just didn’t see any kids while i was there, but we also stayed on the other side more and we were there during low season
