If you look at this recipe and immediately want to say, “BEANS AREN’T PALEO” you would be 100% correct! I’m so proud of you and your knowledge! But here’s the thing…I ate strict paleo for years and years and years, and I thought I was doing the best thing for my body. But then I learned about beans and their soluble fiber along with why it’s so important to the body. So I started adding in beans on a daily basis, 6-8x per day, and I’ve never felt better. My acne has almost completely disappeared, my bodily functions are better, my energy is up, my sleep is better, even my sex drive has improved. So yes, you are correct when you say beans aren’t paleo, but I’ve personally started adding them into my own diet and I’ve experienced such incredibly positive results. And because of that, I want to continue to share the recipes I’ve been making for myself and my household. If you don’t want to add the beans, merely take them out. Botta bing, botta boom.

PaleOMG Sweet Potato Tacos

Speaking of tacos, my best friend and I went shopping yesterday for wedding dress (don’t worry, the tacos will come back around). We went to this beautiful spot called LUV Bridal in Denver, which I highly recommend if you live here, she tried on probably 7 dresses there and she looked stunning in every single one. But the last one she tried on there was PERFECTION! I didn’t want to be crazy vocal about it because I wanted her to choose the one that she loves most, but I still made it clear that I thought she looked the best in that one. She wanted to sit on it for a little bit so we also went to another spot to try on dresses and they all sucked ass. I hope she ends up getting the dress at LUV Bridal because it fit her like it was made for her. But back to tacos…we went to grab some tacos after her appointment and there was a bit of a hairy situation there. There was a hair in my tacos. Not a long one, but a long enough one. At this point, I was almost done eating my tacos, almost completely finished when I found it. I didn’t complain because I’m not that kind of person, but I did think about showing it to the server as a little heads up. But then what was she going to do? Give me more tacos that may have a hair in them? My questions is – what would you do in this situation? What kind of hair-in-taco kind of person are you?

Sweet Potato Tacos

Ingredients

Scale

For the pickled onions

  • 1/2 onion (purple, white, or yellow)
  • 1/2 cup white vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon black pepper

For the black bean puree

For the avocado crema

  • 1 avocado
  • juice of 1 lime
  • 1/3 cup cilantro
  • 1/4 cup chicken broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder

For the tacos

  • 68 cassava tortillas
  • 1/2 cup cherry tomatoes, sliced
  • handful of cilantro
  • fresh lime wedges

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Add sweet potato to the baking sheet then toss with chili powder, salt, chipotle powder, and cayenne pepper. Place in the oven to bake for 25-30 minutes.
  2. Place onion in a bowl, top with white vinegar, maple syrup, and black pepper. Toss then set aside.
  3. In a high speed blender, blend together beans, salt, garlic powder, and broth until smooth. Pour into a bowl and set aside, then rinse out the blender.
  4. Add the ingredients for the avocado crema to a blender and blend until smooth and creamy.
  5. Once the sweet potatoes are done cooking, heat tortillas over an open flame on the stovetop or in a pan. Once warm, top each tortilla with a spoonful of black bean puree, then avocado cream, add a couple spoonfuls of sweet potatoes, cherry tomatoes, pickled onions, cilantro, and a squeeze of fresh lime juice on top!

    This is amazing- every bit of it. I did make some taco meat to go with it for my growing and always hungry 16 year old. Used corn tortillas. Just yum!

    Like you, I probably would not have said anything … just gagged a lot!! However, maybe the server should be told! Maybe other people also found a hair. That person who prepares the tacos could then be told to wear a hair covering so this doesn’t happen again. …. Still gagging here!
    Can’t wait to try this recipe! Looks so good! I try to eat Paleo, but I do love beans!! So, I may try adding them to my eating plan. Every one could use a little more energy and enhanced sex drive, right!!??!! *Ü*
