Well hi there! Guess where I am? Back in an airplane yet again! This time I’m heading to the lovely state of Texas and to my favorite city in Texas – Austin!! I try to make a trip once a year to Austin and I’ve made that happen for the past 4 years so this will be my 5th year in a row! I’m heading out there to hang out with the awesome people behind Siete Foods and some of my favorite girlfriends, Lexi from Lexi’s Clean Kitchen, Cassy from Fed & Fit and Vanessa from Clean Eating with a Dirty Mind! We plan on eating (A LOT) because that’s what you do while in Austin, working out and heading to Barton Springs for a little play time! Four times in Austin and I’ve still never been to Barton Springs. Major fail. I just get so distracted by all the restaurants I want to hit up in the short amount of time, ok?! We are there today until Sunday so who knows what else we will end up doing! I effing love Austin!
It has been a serious whirlwind since I got back into town from Santa Ynez on Friday. I’ve been getting a bit of anxiety about all the upcoming travel and making sure the blog is good to go for any of the awesome people out there still reading throughout the summer! I’ve been whipping up new recipes, getting lots of photos done and coming up with different content that hopefully you’ll like to read. Whenever this anxiety creeps up, I have to lower my coffee intake because MAN, coffee makes me crawl out of my skin and heart pump out of my chest if I have the slightest bit of anxiety going on.
I think the hardest part of travel, and what spikes my anxiety, is not seeing my husband as much and not spending much quality time together. He works so much so he rarely gets to travel with me. And then when we do get to see each other, we are both exhausted and end up falling asleep on the couch while trying to get through one of our shows. LUCKILY we have a trip planned for Lake Powell in September which will be the perfect for reconnecting and being a married couple again…instead of just roommates who see each other between trips. Lake Powell is seriously one of my favorite places on earth.
I’m bored with myself today. Probably because I’ve been up since 4am today and I’ve been smelling McD’s egg mcmuffins since 5am. Not my favorite smell to wake up to. Honestly, it’s probably my least favorite smell. Because it smells like farts. And it makes people fart. And then I’m stuck on the plane with them.
You know what doesn’t hurt your guts? This side dish. It’s honestly freaking awesome. And crazy refreshing. Cold veggie or fruit salads are what life is made of in the summertime. Turning on the oven to roast brussels sprouts in the summer is one of my worst ideas to date. Kgottagobyyyyyyye!
Watermelon & Fennel Mint Salad
- Yield: 4-5 1x
Ingredients
- 2 cups watermelon, sliced
- 1 medium fennel bulb, thinly sliced
For the dressing
- 1 small shallot, chopped
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 tablespoon mint leaves, chopped + extra for garnish
- 1 tablespoon dill + extra for garnish
- 1 teaspoon dijon mustard
- pinch of salt
- 3 tablespoons olive oil
Instructions
- Place watermelon and fennel in a large bowl and set aside.
- Blend together all ingredients for the dressing in a high speed blender until smooth.
- Pour dressing over watermelon and fennel and toss to combined. Garnish with extra dill and mint! Serve or place in the fridge for flavors to meld more!

If you and Lexi are looking for something fun to do Saturday night in Austin, my roller derby team has a bout at the Palmer Events Center at 7pm. I honeymooned in Austin last year and we ate EVERYWHERE while we were there! I highly highly recommend going to to a place called “FIXE”. It’s little higher end, but man on man, every single thing I ate was last-meal good!!!
We also stopped into Crossfit Central while we were there and the people were great.
Make sure you get a chance to walk around South Congress–so much to see there! Jo’s Coffee, Uncommon Objects, Maya Star (a women’s boutique). That whole street is great.
We went to the Graffiti Park while we were there too which was kinda fun. It’s a great spot for taking photos!
I just got my first bag of Siete chips in the mail yesterday! I got the lime tortilla chips and am afraid to open the bag because if I love them, that bag will be gone! Which I know I am going to love them.. Your love for sweets is just like my love for chips.. I’m doomed.. Have fun on your trip and I am excited to hear/read about it!

I’m going to Lake Powell in September! It’s my first time and we won’t have a sweet house boat (as of right now) like I’m sure you will – I’ve seen your house boat party pics 😉
Any suggestions on sweet spots to hit?
i have absolutely no idea where i am when i’m in powell, we just boat until we end up somewhere cool lol
