I can’t even with this recipe. I love it so much. After making my Bacon Cheeseburger Meatloaf last year, I thought it would be fun to throw a new spin on it in casserole form. Because PEOPLE LOVE CASSEROLES. People crap the bed over casseroles. And even after making this recipe 4 times in a week, I STILL love it. It’s that good. Just trust me and make it, ok?!
You know what I’m slightly sad about? I’m sad it doesn’t get bright out until later in the morning nowadays. I was waking up at 5am every day, then I would crush the entire day and do it all over again the next day. But now I’m not waking up until 6:30am. I’m losing an hour and a half of my day. Sure, I could set an alarm, but that would defeat the whole purpose of working for myself. So instead, I’ll just do the healthy thing about b*tch about it. That’s not annoying at all, is it?
So I have this new favorite instagram page I started following. And when I say favorite, I don’t mean favorite whatsoever. But I do find it incredibly interesting. My friend told me to follow the IG page @celebface (which is a private account that you have to request to follow) and now I can’t stop looking at all the celebrities that edit their photos that are shared online. It’s so addictive. I’ve definitely whitened my teeth in photos and removed a giant zit that took over my forehead, but I’ve never widened my hips in a photo. My chocolate addiction does that for me. Who are all these people out there that are Facetuning the crap out of their photos?? I should share my chocolate drawer secret with them. It’s much more fun than photo editing.
Speaking of fun, I went to a super fun wedding over the weekend. Two of my friends got married and they did their wedding right. First off, their registry was for things they wanted to do on their honeymoon in Spain. So you could buy them drinks on the beach or a dinner in Spain, or you could buy them tickets to a museum or a night in a hotel. I think that is just so much more fun than buying someone sheets or wine glasses. You get to buy them an experience they will never forget. I love that. And then the wedding itself was perfection. Drinks before the ceremony, a short 30 minute ceremony followed by an amazing buffet dinner that no one had to wait around for, then only 2 speeches, open bar and dancing. But the best part of all? They had amazing homemade desserts. I always judge a wedding based off their desserts. My husband and I went to a wedding years ago and they had super crappy store bought pies. Not even warm, just the crappy cold fruit pies you buy last minute on Thanksgiving day when you’re desperate. I told my husband that the marriage would never last based on the dessert choice…and they were divorced 2 months later. This wedding had homemade truffles, cookies, bars, and everything in between. The truffles were full on crack. Verdict of the story – they will be together forever.
It was quite the interesting night all around. We got to a bar before the wedding that we thought our friends were at. But when no one was there, I had a feeling I needed to look at the wedding details once more. Turns out, the wedding was in 10 minutes when we had just sat down and ordered a drink. I thought the wedding was in walking distance so we got our check and ran out the door and into a wedding a block down. Turns out, it was NOT the wedding we were going to that night. But the bride looked stunning. So I looked at the map again and noticed the wedding was 6 blocks down. We now had 5 minutes to run there…in heels…in a jumpsuit…in 80 degree weather. Luckily I was buzzed so I got to running. And falling. Thankfully my husband caught me as people in traffic honked and laughed. And we got there only 2 minutes late, but still before the wedding started. I could NOT stop sweating as soon as we sat down. The sweat actually pooled in my belly button and I had to slide my sticky bra off. I thought I put my bra in my own purse, but someone on a group message the next day sent a photo of the bra that was found in her camera bag. Moral of the story, other than look at the wedding invitation ahead of time, is that it was an AWESOME wedding that goes down in the history books for a damn good time. Their honeymoon is going to be just as epic as their wedding and their marriage is going to be even better. I love love.
Bacon Cheeseburger Casserole
- Prep Time: 15 minutes
- Cook Time: 55 minutes
- Total Time: 1 hour 10 minutes
- Yield: 6 1x
Ingredients

½ pound bacon
-
2x16 ounce bags of frozen cauliflower florets
-
¼ cup nutritional yeast
-
½–1 teaspoon salt
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
1/4 teaspoon white pepper
-
2 eggs
-
2 pounds ground beef
-
½ yellow onion
-
2 garlic cloves
-
½ cup ketchup
-
¼ cup mustard
-
¼ cup mayo
-
salt and pepper, to taste
- chopped green onions, for garnish
Instructions
- Preheat oven to 400 degrees F. Grease a large baking dish.
- Cook bacon until crispy, chop into small pieces and set aside.
- Steam cauliflower until fork tender. Add to a high speed blender and blend to combined. Then add nutritional yeast, salt, garlic powder, onion powder, white pepper, and eggs and blend until super smooth. Set aside.
- Place ground beef, onion and garlic in a large pan and break meat into small pieces, until meat has browned, add a bit of salt. Then add ketchup, mustard, and mayo. Mix then add a bit more salt and pepper and ½ the bacon.
- Pour beef mixture into the greased baking dish and spread evenly throughout. Pour cauliflower mixture on top and spread evenly throughout. Top with the rest of the bacon and a bit of black pepper.
- Place in oven to bake for 20-25 minutes, until top has slightly browned.
- Top with green onions before serving.

Would this freeze well if made ahead?
I can’t say for sure since i haven’t froze it myself, but i would think it would freeze ok
Do you think dijon mustard would work as well as yellow mustard? (I hate yellow mustard so I don’t keep it around, but I do like dijon!)
yes, it will taste just a tad different, but it will still be delicious!
I’ve made this 3 times following Juli’s recipe to the T. Didn’t have to change my shoes once. It is delicious whether I eat it from the casserole straight out of the oven or from tupperware out of the fridge 3 days later. So tasty and satiating. So, I’ve messed around a few times since:
– yellow mustard tastes so much more like a cheeseburger than Dijon or stone ground
– Worcesthershire is an addition to consider if it’s a part of your burger routine
– last time I put sesame seeds in the cauliflower “bun” and I really liked it
Also, freezing it is not recommended unless you can really dehydrate that cauliflower blend without overcooking it. I haven’t tried it on this casserole but with others the high water content of crucifers gets “unemulsified” (?) in the freezer and ends up soupy in the bottom of the dish = soggy cheeseburger :/
Finally, if you’re making it for the first time bake it long enough so it’s browned like the video version. Yuh um!

This looks delicious! Would you say this is a relatively “healthy” recipe? Trying to stay low-ish calorie/carb/fat.
i have no clue if it’s low calorie, carb or fat. but you could plug the recipe into a nutritional calculator online and find that out for yourself!

you could definitely try a cashew cream, i haven’t tried it that way so i can’t say for sure
This was great! I was hesitant about the nutritional yeast and cauliflower, but it tasted great! My kiddos ate it as well which is a plus in my book.
