What the fudge is up with moths invading my household? Is it “when spring has sprung, the moths will come” season? I don’t get it. But I hate it. I turn on my lamp on night to read my book and a swarm of them (meaning two) fly at the light like they are seizing. So rude. I’m trying to read my book on a Saturday night at 9pm, and these moths are acting like the own the place. And then they are seizing so much, they hit me in the face and proceed on to hit every other wall, object, and light around every room. Is that why they die? Because they give themselves so many concussions? Do I just sound like a complete idiot throughout this entire paragraph? I’ll move on. You suck moths.

So now that I’ve cursed the day a moth was born, I’m sure you’re wondering what I was reading on a Saturday night. No? Cool. Whatever. I’ll tell you anyways. I was reading the second book of the Hunger Games trilogy, “Catching Fire” and seriously could not put it down. I read it Friday night, Saturday night, and Sunday morning and afternoon. All done with it now. It.Was.Awesome. Every single chapter was great. If you disagree, I curse the day you were born. Jesus, I’m kidding. Don’t leave my website. Is it weird I’m excited for Regionals to be over just so I can start the third book and have more time to commit to it? Totes weird. At least I’m committing myself to something since I can’t seem to make a commitment to any human being. Kidding again. My roommate Laura and I are committed to each other. Roommate for life.

Guess what? I’m super excited. My girlfriend Sam comes into town tomorrow and is staying with me over Regionals weekend! YAY! I’m even cleaning the house for her. Like vacuuming our carpet and sweeping the floors. I’m even going to scrub the shower. Big things going on here in the tres amigas household. I just made that up. And it was stupid. Sorry guys. Disappoint is on your face, I’m sure of it.

Chicken Basil Meatloaf

Ingredients

Scale
  • 2lbs US Wellness Meats Ground Chicken
  • 2 eggs, whisked
  • 1 cup almond flour/meal
  • 1 cup fresh basil, chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried parsley
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients for meatloaf in a bowl.
  3. Place ingredients into two loaf pans.
  4. Bake for 25-30 minutes or until there is no pink remaining in the loaf.
  5. Eat!
  6. OMG, that was easy.

    I just made this tonight, and it was delicious!! Thank you for always sharing your creations. Everything I have tried from your website is heavenly! One thing I did differently was use ground turkey, our market didn’t have chicken, but still amazing!!!

    Fantastic. So easy and tasty. I recommend serving it with mashed cauliflower for a little “meat and potatoes” style dinner, or with some guacamole because guacamole.

    So damn delicious! I made it with 1 1/2 lbs ground turkey and unfortunately didn’t have onion or garlic powder. Just had a slice for breakfast and sooooooo good!!
