I know. This meal looks like sh*t. It’s kind of suppose to. Because a lot of the meals I just make for myself look like this. Kind of gross. Kind of plain. But still delicious.

Here’s the thing. You may think I eat fancy recipe made meals on a daily basis, but you’re completely wrong. I make meals to make you guys happy, but I don’t always make fancy meals for myself. I’d sometimes rather just have super simple stuff. Like shredded pork from the crockpot. Or eggs and bacon for breakfast…or dinner…like last night. The easier it is for me to make, the happier I am. So I wanted to share one of those ugly, easy meals that gets me by.

Don’t like it? Boring? Understandable. Ah well.

So yesterday I talked about my Contribution tab on my website. I am amazed with how generous people are. It’s so freaking cool. Not only did I get donations, but I got some emails along with the donations thanking me for the website. It’s crazy. I do this website because I love it and I want to make eating paleo easy, and people are thanking me for that. So awesome. Thank YOU for all your support.

Even Sergio was supportive from Afghanistan. He donated $0.25. And told me to put it to good use. But he also thought up the idea of putting up a kissing booth outside of my work. He thinks I would make more off of that. But here’s the thing. 85% of the people who walk down the street outside of my gym are homeless. And drunk. And usually passed out. So making money off of those people doesn’t seem quite right. And I have small lips. People would be disappointed. F*cking genetics.

So tomorrow I will be posting yet another post about what I eat and do during the day. I got some requests about posting the weights I use in my workouts, so I’ll be doing that. Don’t worry, it’s not that much. And my good friend Jessica asked if I’d post some of my songs from my playlist that I play in class. I’d say a good 65% of my athletes hate my music, but that means 35% like it! I rock at math! So I’ll at least share my music with the world wide web in hopes of increasing that percentage. Fingers crossed!

Oh and btw, I have been dreaming about chocolate. Dreaming, people. So I made these egg free blueberry brownies last night. And then melted 85% dark chocolate on top. It was stupid delicious. So not good for you, but so delicious. Just thought I would tell you. And don’t worry, I will share the recipe with you soon. As well as the brownie batter ice cream I made the other night while slightly intoxicated on wine. If I can remember it. Good ole Friday nights.

On my phone screen I thought that was bacon-wrapped chicken. I bet that would work too, mixing the broccoli half way through to get the drippings… but yours is easier.

I thought it was bacon too! Too bad it wasn’t. Balsamic bacon wrapped chicken. Yum!

Looks great! I love the simplicity of this recipe since life is so busy. This is the stuff that needs to go in the cookbook.

    1. Cindy says:

I made this last night and it turned out really good. It did take 35 minutes to cook. How did I know it needed more time? I cut it open and looked. Duh.

Love easy-peaz. Julie, when you post tomorrow’s daily consumption blog, will you include if you drink a protein shake EVERYDAY? Not sure whether to or not. Thank you!

  5. Megan says:

I love simple recipes. All your other recipes are great – It just takes a lot more will power for me to get off my a$$ and make them. So feel free to post more simple ones 🙂

I’m on day 11 of my first Whole30 which I totally jumped into without doing anything paleo beforehand. I am an AVID food blog followering (like 30 of them) and yours has now not only joined the list but moved to #1. Thanks for making things I want to smash my face in while being witty and entertaining.

Ooooh, I want to hear the music choices! The person who chooses the music at my CF is a late-20s dude with TERRIBLE taste in rap music. *head meet wall* However, there was one time when I finished a grueling WOD, flopped onto the floor, and “Damn It Feels Good to be a Gangster” immediately came on. That was pretty epic.

  8. LRPB says:

I kept thinking your chicken was wrapped in bacon and was confused why bacon wasn’t listed in the recipe. Ha, finally figured out it was balsamic vinegar! But there’s an idea for the next time you make this chicken 🙂

    1. Gabby says:

I kept thinking the same thing!! Bacon! Delish!

  9. Brian says:

I make something similar to this all the time. I also throw in some sliced onions to give it something extra. I love just throwing everything in a pan and letting it roast in the oven.

Also I tell my coach I don’t like her music all the time. It’s not true but when she tells me I need better form I tell her she needs better music. I’m sure your music is also just fine.

  10. Sabrina says:

Sometimes simple is better and the tastes pop more. 🙂
I totally had to Google the song you played during one of your vidoe posts you danced in. Then I purchased it on iTunes…share more please! 😉
