I know. This meal looks like sh*t. It’s kind of suppose to. Because a lot of the meals I just make for myself look like this. Kind of gross. Kind of plain. But still delicious.
Here’s the thing. You may think I eat fancy recipe made meals on a daily basis, but you’re completely wrong. I make meals to make you guys happy, but I don’t always make fancy meals for myself. I’d sometimes rather just have super simple stuff. Like shredded pork from the crockpot. Or eggs and bacon for breakfast…or dinner…like last night. The easier it is for me to make, the happier I am. So I wanted to share one of those ugly, easy meals that gets me by.
Don’t like it? Boring? Understandable. Ah well.
So yesterday I talked about my Contribution tab on my website. I am amazed with how generous people are. It’s so freaking cool. Not only did I get donations, but I got some emails along with the donations thanking me for the website. It’s crazy. I do this website because I love it and I want to make eating paleo easy, and people are thanking me for that. So awesome. Thank YOU for all your support.
Even Sergio was supportive from Afghanistan. He donated $0.25. And told me to put it to good use. But he also thought up the idea of putting up a kissing booth outside of my work. He thinks I would make more off of that. But here’s the thing. 85% of the people who walk down the street outside of my gym are homeless. And drunk. And usually passed out. So making money off of those people doesn’t seem quite right. And I have small lips. People would be disappointed. F*cking genetics.
So tomorrow I will be posting yet another post about what I eat and do during the day. I got some requests about posting the weights I use in my workouts, so I’ll be doing that. Don’t worry, it’s not that much. And my good friend Jessica asked if I’d post some of my songs from my playlist that I play in class. I’d say a good 65% of my athletes hate my music, but that means 35% like it! I rock at math! So I’ll at least share my music with the world wide web in hopes of increasing that percentage. Fingers crossed!
Oh and btw, I have been dreaming about chocolate. Dreaming, people. So I made these egg free blueberry brownies last night. And then melted 85% dark chocolate on top. It was stupid delicious. So not good for you, but so delicious. Just thought I would tell you. And don’t worry, I will share the recipe with you soon. As well as the brownie batter ice cream I made the other night while slightly intoxicated on wine. If I can remember it. Good ole Friday nights.
Easy Chicken Dinner in 1…2…3
- Prep Time: 5 mins
- Cook Time: 25 mins
- Total Time: 30 minutes
- Yield: 4 1x
Ingredients
- 3–4 chicken thighs or breasts
- 5–6 heads of broccoli, chopped into florets
- 4–5 tablespoons olive oil
- 2–3 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- salt and pepper, to taste
Instructions
- Preheat oven to 375 degrees. Place broccoli florets and chicken pieces into a 9×13 baking dish.
- Pour olive oil and balsamic vinegar over your chicken and broccoli. Then season with garlic powder, salt and pepper. Mix around to help coat the broccoli and chicken.
- Bake for 20-25 minutes or until chicken is cooked through. Not sure if it’s totally cooked through? Cut it open and look. Duh.
LOL at first I thought this was bacon wrapped chicken – then I read the ingredients and it wasn’t but it should be! I love bacon – just fyi! Love the idea even without bacon though BUT bacon bacon bacon would be nice…lol just saying! :o) Thanks for the idea – you rock as always!!

I thought it was wrapped in bacon too…way to hook and bait all of us, ugh. 😉 I guess this will be almost as delicious as having it wrapped in bacon, you tricky woman!
I thought it was bacon too and had some on hand so I threw it on! It’s delish with bacon!! Also, I didn’t have broccoli so I made it with brussel sprouts and cauliflower…sooo good and easy! Thank you!!!
Loved this recipe….. so yummy. Made enough for leftovers to take to work and still tastes really great. With all the bacon talk though, I decided to make mine with bacon on it as well. Will make this again!!!
