Summer has officially started. And I love it. It’s constantly sunny. The sun comes up at 5am and doesn’t go away until 9pm. I am always smiling because I hate the snow and there is none of it in my future. Our back patio has new furniture to sit and eat on as we stare at the constant traffic. And now I can tan on the patio and make the neighbors feel uncomfortable. Summer is just the best.

I think I was lucky enough to miss some of the last crappy Colorado weather this past weekend when I headed to Nebraska for a wedding. My boyfriend has about a billion friends in Nebraska and yet another one was getting married so about a month before, we booked a flight, I got a dress altered, and I asked my parents to watch Jackson while we were out of town. Once last weekend began, we took Jackson to my parents the night before our flight and finished packing. Since neither of us really knew what time our flight was, I told the lovely bf to look it up online. And when he did, he was met with the stomach dropping discovery that he booked the flight for the wrong weekend. Yep. When we tried to call in to change our flight, it was a 45 minutes wait. Along with $150 change fee. So we made the wonderful decision to drive the 8 hours to Nebraska. Neither of us were thrilled about that, but we made due. I wasn’t prepared with snacks so we had to eat at some sketch places, which was a bummer. But we made it to Nebraska, guts intact, ready for a drink. A bloody mary was my drug of choice. And it was fabulous.

Anywho, this wedding was gorgeous. It was on a private lake that the bride’s parents have a house on. Talk about cool. The bride was stunning, the groom cried, the whole great shabang. It was great. And I got to see a ton of my now Nebraska friends that I hadn’t seen in months. I love going to weddings. Being in weddings totally sucks, but just going to them, wearing whatever you want, getting to eat cake, and dancing is just the best. I have 4 weddings this summer and I’m absolutely loving not being a part of any of them, just having to find cute dresses for all of them. Dress shopping is the best. I found a dress for the wedding last weekend at a local boutique near me, that I seriously LOVED. Probably favorite dress of all time. I wish you could see the back, it was all lace! But now I need a couple more dresses for the weddings in the future. I headed over to Modcloth and every dress that I found and loved, of course didn’t have my size. How does it always work like that? Blasphemy.

But back to the trip. After spending the weekend with friends, at the lake, and eating delicious frosting, we had to head back Sunday afternoon so we wouldn’t spend our entire Memorial Day on the road. And since I suck as a girlfriend and bought the wrong contact solution and ruined my boyfriend’s contacts, I had to drive the 8 hours back home. I don’t do very well driving that far, half of that time in the dark. I swear your eyes start playing tricks on you when you’re staring at a dark road. And after seeing multiple dead animals on the side of the road (may they rest in peace) I was kind of freaking out that a deer would jump in front of my little civic. And that I would probably die, not him. It didn’t happen thankfully.

So now I’m back, cuddling with Jackson every morning and snacking on deviled eggs. I love summer in Colorado.

Cilantro Chipotle Deviled Eggs

Ingredients

Scale
  • 6 eggs
  • ¼ cup of Sir Kensington’s Chipotle Mayo
  • ⅛ teaspoon garlic powder
  • 1/4 teaspoon salt (depending how salty the mayo is to you)
  • pinch of black pepper
  • handful of cilantro, roughly chopped

Instructions

  1. Bring a large pot of water to boil. Once the water is boiling, place eggs in the water and cook for 15 minutes. Remove from water and place in a bowl of cold water to help cool.
  2. Once eggs have cooled, cut eggs in half. Scoop out the yolks, place the yolks in a bowl and smash with a fork. (you can also puree in a food processor to get an even smoother texture)
  3. Add in mayo and mix well until mixture is smooth. Then add garlic powder, salt and pepper and mix well.
  4. Place the yolk mixture into a small ziploc plastic bag, cut off the end and squeeze mixture into egg white halves. Garnish with chopped cilantro.
  5. Chill before serving.

    AHH the deer comment!! I can totally relate. I’ve pulled over on the side of the highway, had a mini panic attack, and, once I collected myself, proceeded to stop over for the night at the nearest hotel all because I’ve seen too many dead deer (and alive ones) on the road while driving at night. I am NOT okay with it! I just bought a new, bigger vehicle because I was so terrified of dying if I hit a deer or moose in my Matrix.
