Coconut Juice Fruit Popsicles

I have to tell you something you might have not already known….I.LOVE.CROSSFIT. Like OMG, love it . It’s a bit ridiculous how much I love it. The other day, I was having a slightly down day for no real apparent reason, and I knew all it would take to perk me up was going to the gym. Isn’t that weird? I knew that going to the place that would make me feel completely miserable would be the place to put me in a fantastic mood. My gym is so wonderful.

And one of the main reasons to love CrossFit, which I too often forget about, is how it transfers over to daily life. Laura and I installed our window air conditioning units the other day. Like two awesome, single independent women. And I watched as Laura correctly deadlifted her air conditioning unit off the floor, carried it up the stairs, and placed it in the window herself. In no way could she have done that last year before she started CrossFit. So cool. Being strong is so invigorating.

I’m going to schedule two things soon. A massage, just because my muscle are pretty much rocks…minus the great sculpture. And get a pedicure. The calluses I have on my feet and hands are just ridiculous. And slightly embarrassing. Well, I’m not embarrassed because I don’t give a f*ck, but society frowns against poorly cared-for feet. I run on those feet. I box jump with those feet. I squat on those feet. And they are suppose to LOOK GOOD? Are you high society? I hate you. One thing I will definitely never change are the calluses on my hands. I will not paint my nails and I refuse to shave my calluses on my palms. Period. And if someone that I’m interested doesn’t have even more callused hands than mine, we will never work out. Soft hands on a man creeps me out.

Speaking of callused men, I’ve come to a decision. So I have this crush (yes, he does have callused hands. thank god) that I’ve mentioned a couple times. I like him. He’s kind of the sh*t. And on this blog, I’ve always talked about my love life, or lack thereof, so I don’t want to change that. I must write on even if that means awkward moments between the two of us, especially since he reads my blog at times. But I can’t change who I am, or how overwhelming I am, just because I have a crush on someone. Smart move huh? That’s definitely going to get the guy…by talking about him over the internet. Jesus Juli, get your life together.

Oh btw, if you haven’t tried Amy & Brian’s Coconut Juice yet, you have to. Don’t question me, just do it. No added sugar, just pure coconut water. I add it to my protein drinks, drink it instead of water because water is so last year, and bathe it in. I just lied. Check them out.

Coconut Juice Fruit Popsicles

  • Yield: 12 1x

Ingredients

Scale

Instructions

  1. Place cups on a cookie sheet.
  2. Place pineapple, then blueberries, then strawberries in all the cups, evenly distributed throughout.
  3. Pour Amy & Brian’s Coconut Juice into the cups until the fruit is covered with juice.
  4. Place craft sticks in the middle of each cup.
  5. Put in freezer for a couple hours of until completely frozen.
  6. Use scissors to cut the side of the dixie cup and peel back.
  7. Eat them up!! OMG cute.

  4. Speaking of loving CrossFit. I joined my local about 2 weeks ago and I’m taking my first class today (was on vaca) and I’m super nervous to say the least. I’ve been doing it at my own gym for the last 6 months, but it’s totally different in a actual CF gym. I hope I don’t throw up and oh yeah. it’s like 100 degrees with 100% humidity in Brooklyn today. Not psyched bc I sweat like a bitch…meaning it’s unnatural!!

  5. Calluses are important, dude. I hadn’t done KB snatches in quite a while, then did a breathing ladder* with them last week. I was up to 72 per side, went for chalk, and realized I’d torn off two calluses per hand! These were deadlift calluses; I’m sure if I’d had built up snatch-created calluses, it never would’ve happened. Terrible gross unladylike rough skin is a protective SAFETY FEATURE, sista!

    *Skin-ripping aside, this felt fantastic. Can’t wait to try it again.

  6. OMG – don’t let the pedicure person take your calluses! I get my toes done so they look nice and I can wear sandals without making my husband want to hurl, but I don’t let them scrub off those calluses I worked so hard to build. If you do, you will hate yourself on your next run!

  7. I’m going to get all super supportive girl power bff (even though we’ve never met) on you. Keep those calluses! You worked hard for them! How are you supposed to do all those box jumps and squats and run and all that cross fitty stuff that I don’t even know what you’re talking about when you talk about them when your feet hurt because your calluses are gone? Huh? Answer me that! I’ll tell you what you’ll do. You’ll come on here and have some fabulously yummy looking food preceded by a story about how you should have kept your calluses because you did some sort of something or other and your feet hurt. Don’t do it! And yay for crushes 🙂 P.S. I’m pro the massage for sure. You should totally do that.

  8. Juli–I’m glad I found your blog a few weeks ago! I totally know what you mean about having a crappy day then walking into the box and things are better. It’s amazing how your fellow CrossFitters become your mini family. I’m loving the recipes as I just started paleo, keep it up! When it comes to the crush, you just have to be you and see where it comes….very exciting though!

  11. I’ve been trying your recipes out for the last couple of weeks, and I’ve enjoyed them all. Today, I took these as a snack for my health and fitness group at church. They were a hit! I added kiwi because I had a couple on hand, and I thought they would add color. Mine melted very quickly, and I think they needed a couple more hours to set, but I’m now in love with coconut juice as well! Thanks for the always creative ideas!

  15. I laughed so hard while reading this today. After reading boring insurance sh*t all day, I need a pick me up. I am forever embarrassed by my calluses but as you say, “who cares?” My hand are much more callused than my husbands and I’ll admit, its kinda gross. But when it comes to lifting heavy sh*t, its pretty sexy. Will be trying this recipe soon and grats on the 2 muscle ups linked together. I don’t even have my double unders let alone a muscle up. 🙂
