Riddle me this, guys. Why do people join Facebook’s when they get married? Like they become one person when they marry. They’re no longer Katherine and Matt, their new profile is MattKatherine. What if I just want to message Katherine and not Matt? Why is this Facebook right refused? Are you one of those people? Come on man!! I’m super excited to get married but I think I’m cool with keeping my Facebook identity to Juli. I want people to still think of me as Juli, not JuliBrian.

That was a bit of a tangent. Back to what we are all thinking about. Holiday weekend!!! July 4th is here and that means time to get a tan and get your grub on. During summer months, I notice a lot of people kind of forget about eating healthy because there are so many sh*tty options around during summer bbq’s. I’m here to tell you to GET IT TOGETHER. You don’t need to be that person! I have about a million recipes for a bbq party in this post, but I’ll share my favorites below!

Chocolate Covered Strawberry Popsicles

Ingredients

Instructions

  1. Place water, maple sugar, lemon juice and lemon zest in a small saucepan over medium heat. Whisk until sugar dissolves and creates a simple syrup. Set aside to cool.
  2. Once cooled, place simple syrup in a blendtec along with half of the strawberries. Blend until completely combine, then add the rest of the strawberries and blend once more until completely smooth.
  3. Pour mixture into popsicle molds* and freeze for at least 3-4 hours, if not longer (I froze mine overnight)
  4. Once popsicles are hard, melt chocolate chips in a double boiler or microwave. Dip the end of each popsicle into melted chocolate and set on a parchment paper lined baking sheet and set back into the freezer for 10 minutes to harden chocolate.
  5. Then eat up!!

Notes

*If you don’t have popsicle molds, add mixture to a dixie cup and place a craft stick in the middle. Boom. Crafty.
