This isn’t really a pie. There’s no crust. But I cut it out in the shape of a slice of pie. Therefore, it’s a breakfast pie. Don’t fight me on this one.

Have you guys seen the commercials for Krave cereal? The things I would have done to that cereal when I was younger. Bad, bad things. Chocolate inside the cereal? Stupid. Just stupid. I bet it tastes like heaven. Or eating a chocolate bar for breakfast. Which is my heaven.

I’m obsessed with food trucks right now. I can’t help it. They taste just so damn good. Check out @quieroarepas on Twitter and start following them everywhere they go, if you live in Denver. Seriously, I want to live in an arepa.

Ok, so I need to talk about the sad/happy times that occurred over the weekend. My friend Justin recently decided that San Fransisco was a better place to live than Denver. Understandable. I’ve only wanted to move to California like 67 times. So when he had to leave on Sunday at 9pm to venture off to his new home, we decided throwing him a party starting at noon on Saturday and not ending until 2am Sunday was the best decision. These are the best kinds of parties. Mostly because it included almost everyone from our Lake Powell trip, plus some that missed out. So it was like we were back in Powell again. Or at a frat party during hazing week. Is that a real thing? Whatever. All everyone wanted to do was get Justin drunk as could be. Then do mean things to him. Not actually mean, just kind of mean. Like smash cake in his face. Or pick him up and spin him around like a rag doll in hopes of him puking. Guys are so weird.

He never puked. And he ate the cake off his face.

But the best part of it all was that we ended up at my favorite bar downtown where we took over the dance floor. Seriously took it over. I’m pretty sure people outside of our group got pushed. I watched some girl get taken out at the legs when the guys decided it was smart to tackle each other. Either way, it was awesome. So much jumping. I think I lost a toe nail. Ew. They even played this song which is pretty much my favorite song of the week. So dumb, but so catchy. It sounds like he’s saying condom style. My favorite part is at 1:55. You can skip to that part.

It was honestly a fantastic night. I kissed Justin on the cheek probably 26 times and I’ve probably only hugged him a total of 12 times in my life. I haven’t known Justin for very long, but somehow still love the guy. Justin, I hope San Fransisco is everything you had hoped for and more. And we will all miss the sh*t out of you back here. I plan on visiting you soon, taking over your apartment, and CrossFitting at your new gym. Deal? Deal. And if anything, we can reunite next year in the water of Lake Powell. 85 footer anyone?

Easy Crockpot Breakfast Pie

Ingredients

Scale
  • 8 eggs, whisked
  • 1 sweet potato or yam, shredded
  • 1lb pork breakfast sausage, broken up
  • 1 yellow onion, diced
  • 1 tablespoon garlic powder
  • 2 teaspoons dried basil
  • salt and pepper, to taste
  • any extra veggies you want to put in there: peppers, squash, etc.

Instructions

  1. I greased my crockpot with a bit of coconut oil to make sure none of the egg stuck to it.
  2. Shred your sweet potato. I used the shredding attachment on my food processor to make it super quick, but you could use a grater as well.
  3. Add all ingredients to your crockpot and use a spoon to mix well.
  4. Set it and forget it!! I stole that tagline. I’m gonna get sued. Eeeek.
  5. Place on low for 6-8 hours. I cooked it for more than 7 to make sure the pork sausage was completely cooked through.
  6. Slice it like a pie. Because I said so.

    Ahhh this is exactly what I need to make the night before a cyclocross race. I have to get up stupid early to get to races, and so I never had that great a breakfast. This is the solution! Make it before I go to bed and wake up to deliciousness. Yes. Thank you Juli.

      Bridget – I had almost the exact same idea! I have road races coming up two weekends in a row, and was trying to figure out something that I could fix ahead of time for breakfast and pack to take w/ me to the hotels. I’m sorry, but the rubber yellow substance that they call “eggs” on the free continental breakfast buffet just doesn’t cut it. . . and eating 2 hours prior to “go-time” is tough when your race starts at 7am!

      I agree – this is just about the perfect solution!

    MMMMM!!! I made this last night w/ a few modifications:

    Threw in some Red & Green Peppers from my garden that were nearing the end of their useful life, and used a handful of fresh basil rather then dried (just b/c it’s overrunning my garden at the moment!).

    Also, the Sweet Potato that I used was on the large side, so eyeballing it, I decided to use 10 eggs rather than 8.

    Love my food spicy, so I added a bit of Chipotle Chili Powder as well.

    Finally, I layered Sliced tomatoes on top of it before “setting it and forgetting it” 🙂

    O. M. G. – Seriously – this was to die for good. I ate two big slices of it this morning. . . . way more than a “single serving”. . but it was just so good!

    I topped today’s w/ some Guac. Because really, pretty much anything I eat lately just serves as a portal to get Guacamole into my mouth. . . I’m on a bit of an Avo kick at the moment!

    I’m thinking I may sprinkle tomorrow morning’s serving (or 3) w/ some Hot Sauce. . .Mmmm. . Is it bad that I’m already counting down the minutes to Breakfast tomorrow?

    OH – random happy thought. . . I could eat it for dinner tonight. . . hmmmmm. . .

    POOP! I missed the free download, but you should know two things….
    A) I’m going to feed this pork and plantain beauty to a bunch of drunkard boys at the Gorge this weekend.
    B) I’m planning on wussing out on all things boat/water/alcohol/water sports related based off the valuable lessons you gave us from your lake trip this summer.

    If I hurt myself and can’t get to the gym this week, one of those a-holes is getting their ass handed to them. I’m going to go ahead and rate this even though I haven’t tried because I know it will be awesome.

    I’m not gonna fight you on this Juli, but I want to try this WITH a crust. Ideas? How about packing down almond flour/coconut butter mixture? Or just ground meat? I think the oil/butter will make a crunchy bottom. Yeah?

      My first guess would be maybe one made with flax seed meal, almond flour, or a combination of the two. I’m sure you could find a recipe for a Paleo crust on the Internet

    This is awesome. In regard to some comments/questions above about varying ingredients, here’s what I did and it was so good. I didn’t use sweet potato; I just used veggies had on hand – onion, zucchini, garlic, a bunch of spinach. Also no pork sausage so threw in ground turkey and chopped up bacon. Added fair amount of salt, cider vinegar, and other random herbs n spices to compensate lack of sausage season. Basically, do whatever you want, season it well and you can’t go wrong! Never thought of doing this in the crockpot – thank you!!!

    Yummy! I had to get up really early to start packing all my crap to move and some guys were coming over to help move the big stuff for me (#girlsh*t) so I decided this would be easy to make for them. It was awesome and they loved it. I used chirizo (spell?) mushrooms, and squash also.. Soo yummy!
